Mouth-watering crispy vadis made with the goodness of nutrient-rich Lal Math/ Amaranth leaves is a temptation difficult even for children to resist. These vadis are later deep in onion-based gravy which makes them delicious.
Ingredients 1 bunch of Red Amaranth Leaves (soaked & chopped) 1 tbsp Ginger Garlic Paste 1 tsp Carom Seeds (crushed) 1 tsp Cumin Seeds 1 tsp Garam Masala ¼ tsp Turmeric Powder 2 Green Chillies (chopped) Salt (as per taste) ¼ cup Gram Flour 1 tsp Oil Water (as required) Oil (for greasing) 1 cup Dry Coconut (grated) 1 cup Peanuts 1 tsp Cumin Seeds Water (as required) 2 tbsp Oil 1 tsp Mustard Seeds 1 tsp Cumin Seeds 3 Green Chillies (slit) 5-6 Garlic Cloves (crushed) 15-20 Curry Leaves 1 tsp Asafoetida 2 Onions Paste Water (as required) 1 tsp Black Pepper Powder Salt (as per taste) Juice of ½ Lemon Coriander Leaves (chopped)
