Kosambari, a traditional salad that is healthy and easy to make is a celebrated salad dish in South India often made during the illustrious events of Ram Navmi and Navratri.
Ingredients:
210 gm (1 cup) green gram dal or Bengal gram dal ½ cup grated carrot ½ cup finely chopped cucumber 2 green chilies, chopped 1 tsp lime juice 2 tbsp fresh coriander leaves salt to taste ¼ cup grated coconut For Seasoning: 2 tsp oil ½ tsp mustard seeds 3 to 4 bits of dry red chili
Method:
- Wash and soak the dal in water for about an hour or two. - Drain the water off the dal and put it in a bowl. Add the grated carrot and chopped cucumber. Put in the green chilies, coriander leaves, lime juice and salt. - Mix in the grated coconut. - Season with mustard and green chili.
