Ingredients:
2 Zucchinis - sliced into flat, long 3" strips
Filling- 1/2 Cup Paneer - mashed well 1/4 Cup Cheese - cubed 1/2 Cup Olives 1/2 Cup Cherry Tomatoes Dash of Tabasco Chilli Sauce Sea-same seeds Red or Green Pesto Black pepper to taste Salt to taste
Method 1: To make the Rolls: - Slice thin strips of Zucchini with a cutter. - The Zucchini strips need to be kept moist. If you cut them in the morning and cook them in the afternoon then , wrap them in a foil or cling film them or in a wet cloth and keep.
For the filling -Take some Paneer - Add salt to the Paneer filling - Add Tabasco Sauce to the Paneer filling - Add some Pepper to the Paneer filling - To this Paneer filling you can also add crushed peanuts or chopped Beans - Now mix the filling well - To make it richer add some grated cheese as well - Now cling film them and keep them in the refrigerator at least for one hour - Then remove the toothpick and cut it in the center. - then secure with a toothpick
- Now take a Zucchini strip. Place a little mixture of the Paneer on it - Then gently roll it tight and cut it. Seal it with a toothpick.
For Garnish - Add a little chilli sauce dot on each - Then sprinkle sea-same seeds on it
Method 2: To make the Rolls: - Take Zucchini strips and kabab sticks. - Take one end of the strip on the kabab stick - Add an Olive to the stick - Thread the Zucchini on the kabab stick again - Add cube cheese to the stick - Thread the Zucchini on the kabab stick again - Add a Cherry Tomato to the stick again - Thread the Zucchini on the kabab stick again
For Garnish - Sprinkle Red or Green Pesto sauce on it
