Celebrate Eid with this rich, aromatic White Mutton Pulao – a royal dish full of subtle flavors, tender meat, and perfectly cooked basmati rice. Unlike traditional biryani, this pulao is made without turmeric or red chili powder, giving it a beautiful white appearance and a delicately spiced flavor.
Ingredients:
-Mutton – 800 grams -Yogurt – 1/2 Cup ( Dahi ) -Ginger Garlic Paste – 1 Tbsp ( Adrak , Leshun paste) -Black Pepper Powder – 1/2 Tbsp ( Kali Mirch ) -Coriander Seeds Powder – 1 Tbsp ( Dahian Powder ) -Fennel Seeds Powder – 1/2 Tbsp ( Saunf) -Salt – 1/2 Tbsp ( Namak ) -Garam Masala Powder – 1 Tbsp -Cinnamon Stick –2 Inches ( Darchini ) -Mace – 2 Piece ( Javitari ) -Star Anise – 2 ( Badiyan Ka phool ) -Black Cardamom – 4 ( Bari Elaichi ) -Cloves – 8 ( Laung ) -Green Cardamom 4 ( Hari Elaichi ) -Cumin Seeds 1 tsp -Water –4 Cup ( Pani ) -Cooking Oil –1/2 Cup -Onion Sliced 1 + 1/2 cup (Pyaz ) -Ginger Garlic Paste – 1 Tbsp ( Adrak , Leshun ) -Green Chilies 1/2 cup or as per taste ( Hari Mirch ) -Yogurt 1/4 cup ( Dahi ) -Fennel Seeds Powder – 1/2 Tbsp -Cumin Powder 1/2 tbsp ( Zeera ) -Salt 1 tbsp ( Namka ) Or as per taste -Sliced Tomatoes – 3 Medium Sized ( Tamatar ) -Green + red Chilies – 2 -4 -Coriander Leaves ( Hara dhania ) -Chopped Mint Leaves ( Podian ) -Grated Nutmeg – 1/4Tsp ( Jaifal ) -Water – 5 Cups ( pani ) -Soaked Rice – 3 Cups -Fried Onion -Chopped Coriander and Mint Leaves -Chopped Coriander Leaves
Direction For Cooking :
-Take two bowl and add equally whole spices in bowls and set aside . -Take another bowl add mutton add salt , coriander powder , fennel powder , garam masala , black pepper powder , ginger , garlic paste ,yogurt mix it well and marinate for 1 hour . -Soak the rice for 30 mins. -Take a pressure cooker add marinated mutton add water and cook for 15 -20 mins until mutton is cooked 90 % Done. -Take a wok add cooking oil sliced onion and remaining whole spices and cook until translucent then add ginger , garlic paste , green chilies and cook for 2- 3 mins . -Add cooked mutton and cook until oil separates then add yogurt , fennel powder , cumin powder , salt , sliced tomatoes and fresh coriander, cook for 3 -5 mins more. -Take a nutmeg grate it and cook for 2 mins. -Add water mix well and let it boil . -Add soaked rice and green , red chilis mix well, cook on medium flame until water almost dry then add fresh coriander , mint leaves , fried onion cover and cook for 10 -15 mins on low flame. -Flip the rice to remove the steam. -Serve with raita and salad .
