Ingredients:
-Water ( Pani ) as required -Sirka (Vinegar) 1/2 cup -Namak (Salt) 1 tbs or to taste -Lehsan Adrak paste (Garlic paste) 1 tbs -Chicken 1 & ½ kg -Cooking oil for frying -Dahi (Yogurt) whisked 1 + 1/2 Cup -Lal mirch powder (Red chili powder) 1/2 tbs or to taste -Piili Mirch 1/2 tsp ( Yellow Food Color) -Chaat masala 1 tbsp -Dhania powder (Coriander powder) 1 tbsp -Paprika powder 1 tsp -Zeera powder (Cumin powder) 1/2 tbsp -Kali Mirch 1/2 tsp ( Black pepper powder ) -Haldi powder (Turmeric powder) 1/2 tsp -Garam masala powder 1 tsp -Adrak powder 1 tsp ( Ginger Powder ) -Leshun Powder 1/2 tsp ( Garlic Powder ) -Chicken Fried Masala 1 tbsp ( OPTIONAL) -Zarda ka rang (Yellow Food color) 1/4 tsp -Namak (Salt) 1/2 tbsp or to taste -Chaat Masala 1 tbsp -Green chili sauce 2 tbsP -Mustard paste 2 tbsp -Lemon juice 3 tbsp -Corn flour 1/2 cup -Adrak (Ginger) slices 4-5 -Hari mirch (Green chilies) 5 -6 -Chaat masala as required -Adrak (Ginger) slices 2-3 -Lemon slices 4-5 -Chaat masala as required
Directions: -In a bowl ,add water, vinegar, salt, ginger ,garlic paste & mix well. -Add chicken and mix well, cover & let it rest for 30 minutes then strain & set aside. -In a wok ,heat cooking oil & fry marinated chicken pieces on medium flame until light golden & set aside. -In a bowl, add yogurt add red chili powder, yellow chili powder , black pepper powder , chaat masala, coriander powder, paprika powder ,cumin powder, turmeric powder, garam masala powder, yellow food color, salt, garlic powder , ginger powder , fried chicken masala green chili sauce, mustard paste ,lemon juice , corn flour & whisk well. -In prepared masala, add fried chicken pieces and coat well ,cover & marinate for 1-2 hour. -Take a steamer ,Place butter paper then add marinated chicken pieces ,ginger, green chilies , lemon slices & sprinkle chaat masala. -Add remaining chicken pieces & repeat the same procedure, cover with butter paper and lid & cook on low flame for 15 -20 minutes then turn off the flame -Serve steamed chickens with green chili sauce.
