Tired of making the same old south Indian dosa? Here is a Maharashtra style of making dosa that is rich in nutrients and tastes awesome. Chef Annuradha Toshniwal makes simple and easy to make quick homemade ragi dosa.
Ingredients: Chutney: 1/2 cup fresh coconut 1 tbsp roasted gram 2-3 green chillies Ginger ( chopped )
Tempering: 1 tbsp oil salt 1/2 tsp mustard seeds 5-6 curry leaves 2 red chillies
Dosa: 1/4 cup urad dal ( soaked ) 1/2 cup ragi flour 2-3 green chillies 1 chopped onions 4-5 curry leaves ( chopped )
Method: - Grind fresh coconut, roasted gram, green chillies, ginger, water in a grinder to make a smooth paste - Heat some oil in a pan and add salt to the paste - Add mustard seeds, curry leaves, red chillies to the hot oil and add it to the coconut paste, mix well everything - Grind the soaked white lentils to make a smooth paste. - Add ragi flour, water to the paste and whisk it well. - Add salt, green chillies, chopped onions, chopped curry leaves and mix everything well - Cool the tava by sprinkling water and wiping it off with a wet cloth cloth - Take a portion of the batter and gently spread it circular motions. - Sprinkle some drops of oil around the dosa and let it cook - Once the outer rim changes color, flip the dosa and cook it. - Serve hot the dosa with the chutney!
