Lahori Masala Cutlets: CUTLETS Potato boiled and mashed 1 cup Green coriander chopped 1 tbsp Green chilies chopped 1 tbsp Salt as required White pepper 1 tsp Ingredients for BATTER Gram flour 1 cup Coriander crushed 1 tbsp Cumin 1 tbsp Carom seeds 1 tsp Turmeric ½ tsp Salt as required Red chili crushed 1 tbsp All spice powder 1 tsp Egg 1 Water as required Oil as required METHOD Tamam ajza ek mixing bowl men dal ker mix ker len. Phir cutlets ki shape de ker tray men laga len. Ab ek bowl men besan or batter kay tamam ajza dal ker mix ker len. ab ek karahi men oil garam ker len. Ab cutlets ko batter men dip ker kay oil men fry ker len jab golden color ajae to nikal ker garam garam serve Karen.
Chanioti Mutton Kunna: Mutton 500 gm Oil 1 cup Ginger garlic paste 1 tbsp Onion slices ¼ cup Salt as required Red chili powder 1 tbsp Coriander powder 1 tbsp Turmeric powder 1 tsp All spice powder ½ tsp Butter ¼ cup Flour as required Black cumin 1 tbsp METHOD Patilay men mutton, onion, ginger & garlic paste, oil, pani or tamam masalay zeera kay ilawa dal ker mix Karen or dhakna laga ker chor den. 10 minutes bad dhakna hata ker masaly ko butter dal ker khoob bhoon len jab masala bhun jae to pani dal ker phir se dhanka laga ker dum per chor den. Jab gosht gal jae to aata pani men ghoul ker shamil ker den or mazeen 15 minutes tak halki aanch per pakaen. Jab kunna garha ho jae to kala zeera dal ker mix ker len or phir mazeed itna pakaen kay oil alag hojae.
Shaker Qandi Ki Kheer: Sweet potato boiled & mashed 500 gm Milk 1 liter Sugar 1 cup (200gm) Coconut crushed 2 tbsp Green cardamoms 2 -3 Almonds for garnish METHOD Pan men milk, ilaichi or sugar dal ker paka len jab ubal ajae to khopra or shakerqandi dal ker mix ker phir itna pakaen kay cream garhi hojae phir serving bowl men nikal ker badam dal ker thanda ker kay serve Karen.
