Zafrani Biryani Ingredients: Mutton pieces ½ kg Rice 2 ½ cup Salt to taste plum 8-10 yogurt 3 cup black cardamom 2 saffron ½ tsp cinnamon 4 sticks milk ½ cup mace 1 tsp cumin seeds 1-1/3 tsp mint 2 tsp chopped onions ½ cup coriander 2 tsp Garlic paste 2- 2/3 tbsp Bay leaves 2 ginger paste 2 tbsp green cardamoms 10 lemon juice 2tsp Red chili powder 2 tsp cloves 10 Method: Heat oil to fry ginger paste, garlic paste and onion. Then add green & black cardamoms, mace ,cumin, plums,red chilli powder, mutton and salt to fry further for 3 – 5 minutes. soaked rice in water for half an hour. Whip the yogurt and pour it equally in two separate bowls. Mix saffron in milk and cream. Mix coriander and mint in one half of the yogurt. Boil 4 liters water then add bay leaves, green cardamom, 2 cloves, rice and salt. Cook for 10 minutes then strain the rice. Mix rest half of the yogurt in 200 ml water, put in rice and bring a boil to it then let it to be cooked for sufficient time. Take this mutton mixture out in a baking dish, pour half of the saffron and mint mixture on it. Then make a layer of boiled rice and at the end pour the remaining saffron mixture on it. Steam it in oven for 10 – 15 minutes.
Paya Gosht : Ingredients: Mutton trotters 4 Mutton (cubed) ½ kg Salt 1 tsp Red chili powder 1-1/2 tsp Turmeric 1 tsp Oil ½ cup Garlic 1 tbsp Ginger 1 tbsp Cumin powder 2 tbsp Black pepper 1 tbsp Coriander powder 2 tbsp Method: • Heat oil and fry ginger and garlic. • Then add mutton trotters and mutton boti and fry for 5 minutes. • Now mix red chili, turmeric, coriander powder, cumin powder and further fry for 5 minutes. • Add salt & 8 cup water and cook till it gets tender. • Finally add black pepper and serve.
Imli Piyaz Hari Chutney: ingredients: Tamarind pulp 1 cup onion chopped 1 cup green coriander ½ bunch Mint ½ bunch green chilies 2-3 garlic 4-5 Black pepper (crushed) 1 tsp cumin 1 tsp Salt as required Jaggery (grated) 1 tbsp
