Kofta Karahi: Ingredients: Meatballs 1 packet For making karahi: Garlic paste 2 - 3 tbsp Tomato 4 - 5 Green chilies chopped 5 - 6 Whole green chilies 5 - 6 Crushed red chili 1 tsp Crushed black pepper 1 tsp Crushed aniseed 1 tsp Crushed cumin 1 tsp Fenugreek ½ tsp Butter 2 - 3 tbsp Clarified butter ½ cup Salt to taste Green coriander for garnishing
Method: In a pan add meatballs then fry and set aside .Heat oil in pan and fry it. Then add tomato, chopped green chilies, crushed red chili, crushed black pepper, crushed fennel, crushed cumin and salt to mix and sauté. Then add butter, whole green chilies and fenugreek to mix. Then add meatballs with as required water to simmer. When oil separates dish it out garnish with green coriander and serve.
Bara kabab: Ingredients: Mutton chops 1 kg Flour ½ cup Tenderizer powder (kachri) 1 tbsp Salt 1-1/2 tsp Garlic 2 tbsp Ginger 2 tbsp Oil for frying Green chili slice 4-6 Crushed green coriander 6 tbsp Wheat flour ¼ cup Egg 2 Garam masala powder 1 tbsp Cumin 1 tbsp Coriander 2 tbsp Red chili powder 1 tbsp Turmeric 1 tsp Method: • In a bowl add all ingredients except oil and mix well. • Now add Mutton chops and leave to marinate for 6 hours. • Then heat oil and cook 20 minutes on medium flame and serve .
Bihari Boti Ingredients: Mutton cubes ½ kg Raw Papaya 2 tbsp Yogurt 1 -1/2 cup Screwpine Water 1 tsp Brown onion(fried & grinded)4 tbsp Bihari Masala (prepared) 2 – 3 tbsp Ginger Garlic 1 tbsp Sambal Oleak 2 tbsp Sweet Chili Sauce 2 tbsp Egg (boiled) for serving Method: In a bowl , mix yogurt raw papaya, salt, ginger garlic, brown onion, bihari masala sambal oleak , sauces,mix all well leave to marinate for 4 hours, heat oil add mutton boti fry on both the side till golden add two cup water in this marinate to cover and cook on low flame till done. Lastly add screwpine water and remove serve garnish with boiled eggs.
