Ingredients: 50 gms sugar 3 - 4 tbsp water 125 gms grated green apples 50 gms finely chopped cashew nuts 1/2 tsp ginger juice 1/8 cup butter 1 tbsp castor sugar 1/4 cup plain flour 1/2 tbsp rice flour Mint leaves
Method: - Melt the sugar in a pan after adding little water to it - Add apple to it and let it cook till all the liquid dries up and the apples are nicely coated with the sugar syrup - Pour in the chopped cashew, ginger juice and cook it till its dry - Take it off the flame and let it cool - Mix butter, sugar and beat it to make it light and fluffy mixture - Add plain flour, rice flour to it and mix it and make a good dough out of it - Roll the dough into a not too thick not too thin crust and cut out heart shaped portions from it - Place them in a baking tray, prick them a bit - Put the baking tray in oven and bake it at 120 c for 10 - 15 mins approx - Take a baked cookie and put the apple topping on it - Garnish it with a mint leaf and serve it
