Tangy Bagara Baingan is a famous Hyderabadi dish.Goes well with Bagara Rice,Jeera rice,biryani.
Ingredients: Masala Paste Peanut/Groundnut - 1/4 th cup Coconut - 2 tbsp grated Sesame seeds(Til) - 2 tbsp Coriander seeds(Dhaniya) - 2 tbsp Caraway seeds(Shah Jeera) - 1 tbsp Water - 1/3rd cup for grinding
Frying brinjal: Brinjal - 10 Oil - 4 tbsp(You can use the same oil for gravy)
Gravy: Mustard seeds(Rai) - 1 tsp Cumin(Jeera) - 1 tsp Asafoetida(Hing) - 1/4th tsp Fenugreek seeds(Methi daana) - 1/2 tsp Curry leaves - 10 Onion - 1 medium Green chillies - To taste(I used 2) Dry red chillies - To taste(I used 3) Ginger garlic paste - 2 tbsp Masala Paste Red Chillies powder - To taste Turmeric(Haldi) - 1/2 tsp Salt - To taste Warm water - 1 glass.(Adjust the consistency of gravy, add more water if needed) Tamarind pulp(Imli) - 1/4th cup(you can reduce/increase the pulp as per your taste) Jaggery(Gur) - 1 tbsp(You can add more if you want) Coriander leaves - 2 tbsp
