Golgappa is a very common sour n spicy street snack. It consists of a round hollow fried crispy puri, filled with Special Tamarind Sauce & few Vegetables. This recipe includes three steps. 1. Preparation of golgapa dough 2. Vegetables for golgappa filling 3. Preparing Special Tamarind cold sauce.
Ingredients: For GolGapa Dough: - Semolina 2 cups - Plain flour 3 tbsp - Salt 1/2 Tsp - Lukewarm water 1 cup 250 ml For GolGapa Filling Ingredients: - Boiled potatoes 2 - Green chili 1 - Fresh mint leaves 1/2 cup - Tomato 1 - Chat Masala 1 tsp Special Tamarind Sauce(Khati chutney): - Tamarind pulp 1 cup - Fresh coriander leaves 1/2 cup - Fresh mint leaves 1/cup - Green chilies 2 - Salt 1 tbsp - Crushed red chill 1 tbsp - Cumin seeds 1 tbsp - Lemon 1 - Water 1 glass
Recipe:- For GolGapa Dough: - Knead Semolina, plain flour, salt in lukewarm water till firm dough is formed, set aside covered with transparent foil & let it rest for 10 mins. For GolGapa Filling: - Mix potatoes, tomatoes, coriander leaves, chili & chaat masala in another bowl. For Tamarind Sauce(Khati chutney): - Put tamarind pulp, coriander leaves, mint leaves 1/cup, green chilies, salt, red chill, cumin seeds, lemon with 1 glass of water in a grinder and mix. Your Chutney is ready. For Golgapa: - Roll the Dough of Gol gappa and cut circles with any spherical utensil. - Fry these Puri circle dough in a wok (Remember: Oil should be hot), Pour oil over puri with a spoon to make it puff like a ball. - Take Puri out of oil and place on absorbent paper to dry extra oil. - To serve, fill Gol gappas with vegetable mixture & chutney.
