Cochinita significa cerdito, por lo que la verdadera cochinita pibil consiste en asar un cochinillo entero. Alternativamente, el hombro de cerdo (lomo asado) o el lomo de cerdo se usa en muchas recetas. El alto contenido de ácido de la marinada y el tiempo de cocción lento ablanda la carne, lo que permite que se usen trozos de carne resistentes. Las recetas yucatecas siempre emplean el jugo de Sevilla o las naranjas amargas para marinar. En áreas donde las naranjas amargas no son comunes, el jugo de naranjas dulces combinado con limones, limas o vinagre se emplea para aproximar el efecto de la naranja amarga en la carne. Otro ingrediente importante en todas las recetas de pibil es el achiote (annatto), que le da al plato su color característico y agrega sabor. Por lo general, se come con guarniciones como: tortillas de maíz amarillo, cebolla roja en escabeche, frijoles negros refritos y chiles habaneros. Tradicionalmente, la cochinita pibil se entierra en un pozo con un fuego en el fondo para asarla y llegar a sus punto tradicional.
