Lucknowi Dal or Sultani Dal is a nawabi Lentil recipe which is of Mughal origin. The dal is cooked along with rich ingredients which gives it a truly Royal feel.
Lucknowi dal is a special dal recipe from the heartland of ancient Awadh. This special Awadhi recipe has the fragrance of Lucknowi spices. Like everything else in Lucknow, the special Lucknowi dal too has its own characteristic flavor. Although it is a lot like dal tadka, the Lucknowi dal is still a distinct dal recipe that tastes different and is cooked very differently. The main element of difference in this Awadhi recipe Lucknowi Dal is the addition of milk to the dal. The Lucknowi dal is traditionally made with Toor dal so do not try any changes here. It is a dal recipe that can be prepared very quickly so can be made when you are in a hurry.

Ingredients:
For Dal
1/2 cup Split Pigeon Peas (soaked)
1 1/2 cups Water
3 Green Chillies Chopped
1 tsp Salt
Turmeric Powder

For Tadka (tempering)
Ghee
Asafoetida
2 Cinnamon Sticks
Bay Leaf
1 tbsp Cumin Seeds
Dried Red Chillies
1 tbsp Garlic (chopped)

1/2 cup Milk
Garam Masala Powder
Coriander Leaves (chopped)
Fresh Cream

Method: Let's start with adding Split Pigeon Peas (soaked) in the Cooker with Water, Green Chillies Chopped, Salt, Turmeric Powder. Next, mix it together properly, then close the Cooker Lid and cook it for 3 whistles. After 3 whistle Dal is ready to keep it aside and let's make Tadka (tempering) for the dal. Next add Ghee in the Pan, after ghee is getting hot add Asafoetida, Cinnamon Sticks, Bay Leaf, Cumin Seeds, Dried Red Chillies saute for few moments then add Garlic (chopped) now saute again for few minutes. Next, open the Cooker, shake it properly and add the Tadka (tempering), Milk. Now let the Dal cook for 2-3 minutes, then add Milk again. Stir the dal a little then add Garam Masala Powder, Coriander Leaves (chopped) mix it properly. Now turn off the Flame, add Fresh Cream on top of it and your Lucknowi Dal is ready to serve.
