From Boracay, let's go to the town of Tangalan in Aklan

to harvest the next thing we'll cook, the Ubud of Nipa.

The first thing we'll do is we'll harvest it first.

We'll harvest it first, like this, deep, deep.

And as long as we can get the whole tree of Nipa,

it's called Ubud here.

To harvest the Ubud of Nipa,

you have to dig until you reach the end of the tree.

Then you have to shake it to make the root stretch faster.

To get the Ubud or the edible part of the tree of Nipa,

you have to wash it first,

and then you have to scrape it until the Ubud remains.

There are many different types of palm trees

that can be found in Southeast Asia,

including here, of course, in the Philippines.

There is a type of palm tree that is called Nipa Palm.

Nipa, you know what Nipa is, right?

So this is usually used for roofing houses.

But did you know that the Nipa Palm

has other uses, including food?

I'm here with Ate Sol from the Tangalan Aklan.

What they do with their Nipa Palm is,

you eat the Ubud.

In a hot pan,

first, you put the second scoop of coconut milk.

Then, you mix salt, pepper, onion,

sugar, and the Nipa Palm.

In a bowl,

you mix the coconut milk and rice flour

that will serve as a thickener.

Then, you mix it in the pot

and wait for it to boil until it thickens.
