00:00From Boracay, let's go to the town of Tangalan in Aklan

00:05to harvest the next thing we'll cook, the Ubud of Nipa.

00:10The first thing we'll do is we'll harvest it first.

00:14We'll harvest it first, like this, deep, deep.

00:18And as long as we can get the whole tree of Nipa,

00:23so we can get the whole thing,

00:26it's called Ubud here.

00:31To harvest the Ubud of Nipa,

00:33you have to dig until you reach the end of the tree.

00:38Then you have to shake it to make the root stretch faster.

00:42To get the Ubud or the edible part of the tree of Nipa,

00:46you have to wash it first,

00:48and then you have to scrape it until the Ubud remains.

01:01the vegetables we'll get from the ground,

01:03what will they taste like?

01:06There are many different types of palm trees

01:08that can be found in Southeast Asia,

01:10including here, of course, in the Philippines.

01:12There is a type of palm tree that is called Nipa Palm.

01:16Nipa, you know what Nipa is, right?

01:19Nipahat.

01:20So this is usually used for roofing houses.

01:24But did you know that the Nipa Palm

01:27has other uses, including food?

01:31I'm here with Ate Sol from the Tangalan Aklan.

01:36What they do with their Nipa Palm is,

01:41you eat the Ubud.

01:49In a hot pan,

01:50first, you put the second scoop of coconut milk.

01:53Then, you mix salt, pepper, onion,

01:56sugar, and the Nipa Palm.

02:01In a bowl,

02:02you mix the coconut milk and rice flour

02:05that will serve as a thickener.

02:07Then, you mix it in the pot

02:09and wait for it to boil until it thickens.

02:12Later.

02:16Here's our Nipa Palm.

02:19Ubud is also delicious.

02:27Mmm.

02:28It's delicious.

02:29There's still a bit of bitterness.

02:31The Ubud itself,

02:33but the sauce is delicious.

02:35It's like Ginataang Langka,

02:37but it has a bit of sweetness.

02:40So you don't know if it's a dish or a dessert.

02:44The sauce is flavorful.

02:46It's made from coconut milk.

02:47Then, it has a bit of sweetness.

02:49Then, when you eat the Ubud itself,

02:53there's a bit of bitterness.
