In our recent trip to Iloilo, well actually wherever I went, part of my itinerary was to taste local delicacies that I can study,

I can get to know the techniques they use and the flavor profiles.

And one of the dishes that I tasted was the chicken that has quail and mung bean.

I just wanted to recreate that dish that I tasted.

So basically, we have here our chicken.

So we will just cut this into portions.

We have a hot pan here.

Let's just add some oil.

So the browning that's happening is really beautiful.

As you would notice, this technique is often used, especially when there's soup.

Because for me, it gives a depth of flavor to our dish.

And after I get the browning, that's when I'll add our sautés.

So I'll start off with our onions.

And our finely chopped ginger.

This is what's unique about the dish that I tasted, Dennis.

The flavor profile of the lemongrass that it gives to our combinations.

Let's just season this with fish sauce.

And then we can now add our quail.

So after we add our quail, we're just going to cook this for about 10 to 15 more minutes.
