Learn how to make at home with our Chef Ruchi Bharani
Ingredients:
250 gms Dhokla Flour
2 cups Diluted Buttermilk
1 tsp Fenugreek Seeds
Salt (as per taste)
1 tsp Ginger & Chilli Paste
few drops of Lemon Juice
1 tsp Eno Fruit Salt
Oil (for greasing)
Black Pepper (crushed)
Ghee
3 tbsp Curd
2 tbsp Gram Flour
2 pinches Turmeric Powder
¼ tsp Red Chili Powder
2 cups Water
1 tbsp Oil
1 tbsp Mustard Seeds
2 Green Chilies (chopped)
8-10 Curry Leaves
¼ tsp Asafoetida
1 Onion (chopped)
1 tbsp Garlic (chopped)
Salt (as per taste)
Coriander Leaves (chopped)
Green Chilies (slit)
2 tbsp Oil

Dhoklas, Kadhi Chutney, Fried Mirchi is a popular street food in Gujarat.

And today, I'm going to show you this combination with my favourite White Dhoklas.

So let's see the recipe.

Let's start with making the batter for the Dhokla.

So I have 250 gms of Dhokla flour over here.

And in the pot, I have 2 cups of diluted Buttermilk.

Take about 1 cup of Sagar, 1 cup of Water and churn it together.

And now, I'm going to slightly warm this Buttermilk.

This Dhokla flour is easily available in the market.

And now let's add in a tsp of Fenugreek Seeds.

Don't boil the Buttermilk, just slightly warm it.

Let's turn off the flame.

Slowly, slowly, add in the Buttermilk.

Give it a stir.

Make sure there are no lumps.

This is the perfect Dhokla batter consistency.

If you feel that you need some more liquid,

make sure you add in a little bit of warm water.

Let this batter ferment for 8 hours.

After fermenting the batter, this is how it looks.

The Methi Danas have also nicely soaked in.

And now let's add in Salt, a tsp of Ginger and Chilli Paste.

A few drops of Lemon Juice.

Give this a good mix.

And once the water is nicely boiling in the steamer,

add in a tsp of Eno and give it a good mix.

The water is boiling as well.

I have a 9 inches Thali over here that I've greased with Oil.

Into this, let's pour in half the quantity of the batter.

Garnish with coarsely ground Pepper or Red Chilli Powder.

And steam this on high flame for 20 minutes.

20 minutes are up, let's turn off the flame.

Make sure that you do not open the lid before 20 minutes.

Let's check on this.

The Dhokla is ready, let's get this out.

Spread a little bit of Ghee or Oil on top.

And let this rest for about 5 minutes before we cut them into pieces.

Let's make the Kadhi Chutney now.

For that I have around 3 tbsp of Curd here.

Into this, I'm going to add in 2 tbsp of Gram Flour.

2 pinches of Turmeric Powder.

1/4 tsp Red Chilli Powder.

And slowly, let's add in 2 cups of Water.

Whisk all these ingredients properly.

And we have a pouring consistency mixture ready.

Time to make the Tadka.

Heat a tbsp of Oil.

Add in a tbsp of Mustard Seeds.

2 Green Chillies roughly chopped.

Few Curry Leaves.

1/4 tsp of Asafoetida.

1 Onion finely chopped.

This is optional, if you want to add it, you can.

A tbsp of Garlic, finely chopped.

Again optional.

Cook this till the Onions turn soft.

Let's add in this Gram Flour mixture.

Give this a good mix and let this simmer for at least a good 7-8 minutes.

Make sure you boil this Kadhi Chutney properly.

This is the perfect consistency for this Kadhi.

And now into this, I'm going to add in some Salt.

And some Coriander Leaves.

Give this a good mix.

And turn off the flame.

Let's make the third element for this recipe, which are the Fried Chillies.

So I have some less spicy Green Chillies here.

And make a slit in the centre.

Don't cut it into half.

And those who cannot even eat this much spice,

you can even deseed the Chilli.

So in this way, make sure you make a slit in all the Chillies.

You can either deep fry these Chillies or you can shallow fry them.

I'm going to use the second option.

So for that, I'm going to heat up 2 tbsp of Oil in a pan.

Once the Oil is hot, add in the Chillies and let them cook.

The Chillies are cooked, let's sprinkle some Chaat Masala.

To season them.

And turn off the flame.

Let's cut the pieces.

Let's place a few Chillies.

The Kadhi Chutney can be enjoyed even with Fafras and the Yellow Khaman Dhokla.
