This jowar pulao recipe is incredibly nutritional since it replaces jowar for the rice and includes a variety of healthy veggies like carrots, cauliflower, beans, and peas. Here is a fantastic way to enjoy the mouthwatering flavour of pulao without worrying about the calories. Rice is replaced with jowar in jowar pulao (sorghum).

250 gms Sorghum (soaked)
2 tbsp Ghee
2 Bay Leaves
2 Black Cardamoms
4-5 Green Cardamoms
2 inch Cinnamon Sticks
4-5 Black Peppercorns
4-5 Cloves
1 Star Anise
1 tbsp Sesame Seeds
8 Almonds (sliced)
1 tbsp Ginger Garlic Paste
1 tbsp Green Chilli Paste
1 Onion (chopped)
¼ cup Green Peas
1 Tomato (chopped)
½ cup Cauliflower (chopped)
1 Carrot(chopped)
Salt (as per taste)
1 tsp Coriander & Cumin Seeds Powder
½ tsp Garam Masala
1 tsp Sugar
Water (as required)
1 tbsp Ghee
Coriander Leaves (chopped)
Juice of ½ Lemon
Water (as required)
