#BrinjalMangoCurry is yet another yummy and tangy variation made with Brinjal. Brinjal or Aubergine is cooked in various ways and is a very versatile vegetable. It blends well with other veggies and spices giving excellent aroma and savor to the dish. This is a very simple and easy to prepare a dish made with a mix of brinjal and raw mangoes cooked together with spices and finally added with little cashew nut powder which gives a creamy and silky consistency to the curry and richness in taste.
Ingredients:
Mango -1(small)chopped Eggplant 1/2kg Oil – 2 tbsp Mustard Seeds – 1/2 tsp Cumin Seeds - 1/2 tsp Green Chillies - 4-5 Onion – 1 (chopped) Turmeric Powder – 1/4 tsp Red Chilli Powder - 1 tbsp Salt to taste - 1/2 tsp Water - 1/2 cup Coriander powder - 1/2 tsp Garam Masala - Pinch
Method: 1. Take a pan then, add 2 tbsp of oil & turn on the flame. 2. Add the Mustard Seeds, cumin seeds chopped onions, green chilies, and chopped brinjal and salute it 3. Further add the turmeric powder, red chill powder, salt as per your taste, chopped mango then, mix well and add some amount of water. 4. Mix well then close & cook over medium flame. Cook for 3 whistles, till the brinjal, turn soft. 5. Mix well & Check the salt and adjust.
Ready to serve the brinjal and raw mango curry.
