Usal Pav is served as a breakfast item along with dry potato sabzi in Goa. This is an easy to make healthy recipe where white peas are cooked in onion - coconut gravy and served with pav.
Ingredients:
Masala Paste for Usal: 1 tbsp Oil 1 Onion, chopped 4 tbsp Grated Fresh Coconut 1 tsp Garam Masala Powder Water
For Usal Gravy: 250 gms White Peas, cooked 2-3 tbsp Oil 1 Onion, chopped 1/2 tsp Turmeric Powder Tamarind pulp in size of a lemon 2 tbsp Red Chilli Powder 1 tsp Jaggery Water Salt to taste Coriander Leaves
For Potato Sabzi: 3 tbsp Oil 1/2 tsp Mustard Seeds 1/2 tsp Turmeric powder 3 Green Chillies 250 gms Potatoes, boiled & chopped Salt to taste Coriander Leaves
Method:
Usal: - For the masala paste heat some oil in a pan. - Add grated fresh coconut and chopped onion. Saute everything well till it changes colour. - Transfer this mixture into a grinder. Also add garam masala powder and little water. - Grind everything to a smooth paste. Keep this paste aside till further use. - For the gravy, heat some oil in a pan. - Add chopped onion, turmeric powder and masala paste. Mix well. - Add little water and let everything come to a boil. - Then add pressure cooked white peas, tamarind, red chilli powder, jaggery and salt. Mix well. - Add water and coriander leaves. Let everything cook for 2-3 minutes. - Usal is ready to be served.
Potato Sabzi - In a pan heat some oil. - Add mustard seeds, turmeric powder and green chillies. Give a stir. - Add boiled potatoes. Mix well. - Add salt to taste and mix everything well. Let the sabzi cook for a minute. - Add coriander leaves and serve as a side dish with Usal Pav.
