Ingredients for Undhiyu: 1/2 Cup Oil Brinjal, chopped Raw Banana, chopped Purple Yam, chopped Potato, chopped 1/2 Cup Surti Papadi, chopped 1/2 Cup Val Papadi Seeds 1/2 Cup Tuvar Dane 1 tbsp Ginger Garlic Paste 1 tsp Carom Seeds 1 tsp Garam Masala 1/2 tsp Black Pepper Powder 1 tsp Sugar Salt to taste
To Make Green Masala Paste 2 Cup Grated Coconut 1 tbsp Coriander & Cumin Seeds Powder 2 tbsp Ginger Garlic Paste 1 1/2 Cup Coriander Leaves 1 tsp Carom Seeds 1 tsp Green Chilli Paste
Ingredients for Muthiyas: 1 Cup Flour Mixture 1 tsp Mix Masala 1 tsp Ginger Garlic Paste 1/2 tsp Turmeric Powder 1/2 tsp Carom Seeds Salt to taste Oil
Method:
To Make Muthiyas - In a large bowl add flour, mix masala, ginger garlic paste, carom seeds, turmeric powder & salt. Add little water and make a soft dough. - Make small muthiyas and deep fry them in hot oil.
To Make Undhiyu - In a pan heat some oil. Add carom seeds, green chillies and coriander leaves. - Add ginger garlic paste, turmeric powder and mix well. - Add all the chopped vegetables, tuvar dane, surti papadi & val papdi. Mix well. - Add the masala paste, salt and again mix all the ingredients. - Add some water & cover it with a lid. Let the vegetables cook properly. - Then add garam masala, black pepper powder, muthiya and sugar. Mix everything well. - Cover it with a lid and let everything cook on a low flame for 10 minutes. - Serve the Undhiyu with Puri.
