Ingredients:
For Muthiya
2-3 tbsp Gram flour
1-2 tbsp Fenugreek leaves
1/2 tbsp Asafoetida
1/2 tbsp Garam Masala powder
1/2 tbsp Turmeric powder
1/2 tbsp Red Chilli powder
Salt to taste
1 tbsp Coriander powder
1/2 tbsp Sugar
1/2 tbsp Green garlic paste
1 tbsp Ginger & Green Chilli paste
3-4 tbsp Oil
Water

For Green Masala:
1 Coconut, grated
1 cup Coriander leaves, chopped
1/2 tbsp Asafoetida
1/2 tbsp Garam Masala powder
1/2 tbsp Red Chilli powder
1/2 tbsp Turmeric powder
1 tbsp Ginger & Green Chilli paste
1 tbsp Coriander & Cumin powder
1/2 tbsp Sugar
Salt to taste
2 tbsp Green garlic, finely chopped
1/2 tbsp Fenugreek leaves
Brinjal
Baby potatoes

For Undhiya
3-4 tbsp Oil
1/2 tbsp Mustard & Cumin seeds
1/2 tbsp Asafoetida
1/2 tbsp Garam Masala powder
1/2 tbsp Turmeric powder
1/2 tbsp Red Chilli powder
1 tbsp Coriander powder
1 tbsp Green Garlic paste
1/2 cup Surti Papdi
1 cup Green Flat Beans
1 cup Lilva+Green peas+green pigeon peas
Salt
1/2 tbsp Sugar
Purple Yam, chopped
1/2 cup Water
Banana

Method of preparation:
For Muthiya
In a bowl, add gram flour, fenugreek leaves, asafoetida, garam masala, turmeric powder, red chilli powder, salt, coriander powder, sugar, green garlic paste, ginger & green chilli paste, oil and mix them well.
Add water and start making the muthiya's.
Add oil, sothat it helps to bind.
Start shaping the muthiya's and fry them until golden brown.
Take them out on a plate, once they are done.

For Green Masala:
In a bowl, add coconut, coriander leaves, asafoetida, garam masala, red chilli powder, turmeric powder, ginger & green chilli paste, sugar, salt, fenugreek leaves and mix well.
Keep aside a small portion of the masala.
Chop off the top of a brinjal, cut it from center and fill the stuffing inside it.
Repeat the same process with the baby potatoes.

For Undhiya
Heat a vessel, add oil, asafoetida, garam masala, turmeric powder, red chilli powder, coriander powder, green garlic paste, papdi, green flat beans, Lilva,Green peas,green pigeon peas, salt, sugar, stuffed brinjal ad potatoes.
Add purple yam and the masala tht we had kept aside earlier.
Add water and cook for 2-3 whistles.
Once it's done, open the lid and add banana's, muthiya's and mix well.
Serve it in a bowl and garnish it with coconut.
Our Undhiyu is ready.
