Pav bhaji is a fast food dish that has gone to gain fame the world over. With humble origins in the by-lanes of Mumbai, this sumptuous dish has become popular enough to be served in five-star hotels and celebrity weddings. Pav bhaji masala as the name suggests is a blend of spices used in the preparation of the bhaji. The taste of bhaji made with this masala has no comparison to the same with store bought one. Ingredients

1 black cardamom
1 bay leaf
4 tbsp coriander seeds
2 tbsp cumin seeds
1 tbsp black pepper corn
¾ tbsp fennel seeds
15 red dry chilies
1 tsp turmeric powder
2 inch cinnamon
6 cloves
1 tbsp dry mango powder

Method

- Heat the pan on a moderate flame.
- Add coriander seeds, black cardamom, cloves, cinnamon sticks, black pepper corns, cumin seeds, bay leaf, fennel seeds.
- Dry roast them till it changes color.
- Allow the spices to cool down completely.
- Grind it into a fine powder also add, turmeric powder, raw mango powder and red chilli powder.
- Pav Bhaji Masala is ready.
