00:00Ever just sit around and think, I could really go for a snack right about now?
00:06Enter my homemade snack bars.
00:09Toasted coconut, hemp seeds, dried cranberries, cinnamon, almond, or cashew butter.
00:14These are sweet, they're fibrous, they're a little bit healthy, and they're also delicious.
00:19Let's make them!
00:21First, you want to line a baking sheet with parchment paper and spread out 1 1⁄2 cups of shredded unsweetened coconut evenly on your baking sheet and put it in the oven at 325.
00:34We're going to cook this for about 5 to 10 minutes until it is toasted. You'll want to keep an eye on it.
00:40As you can see, our shredded coconut is now nicely toasted.
00:45So I've got my mixing bowl here, and all I'm going to do is add all of my ingredients in here.
00:50Starting with our toasted coconut, I'm going to pick up the parchment paper carefully and just slide it in our mixing bowl.
01:04There we go.
01:06Followed by 1 cup of hemp seeds.
01:11Then 1 teaspoon of cinnamon.
01:14I'll mix those dry ingredients pretty well.
01:19Then we're going to add in a cup of either almond butter or cashew butter.
01:24I've got almond butter here this time.
01:38Is that a good mix?
01:40And we're also going to add in 1 1⁄3 cup of maple syrup or honey.
01:49And I've got maple syrup here.
02:00And again, mix that through.
02:02And then my favorite part is a little bit of sweetness.
02:08You can add 1 1⁄4 of a cup of dried fruit or maybe even some dark chocolate.
02:18And I have decided to go with 1 1⁄4 of a cup of dried cranberries that I had here.
02:27And mix it all in.
02:29Alright, you know it means business when I've rolled my sleeves up and put my hair back.
02:32So because this mixture is kind of dry and sticky, best thing you can do now is just use your hands, clean hands, and mix it all together.
02:44And put it in a lined square pan.
02:47Um, and push the mixture into the pan.
02:53So I'm going to take, literally just take this.
03:02And mash it all in.
03:04Alright, we have pressed our mixture into this lined square pan.
03:13And now it's just going to go into the fridge overnight.
03:17And we'll check on these guys tomorrow.
03:20Okay, it's the next day.
03:22I just took these bad boys out of the fridge.
03:25They look great.
03:26It's all set.
03:27And now you can cut it into about 16 bars.
03:31I do four across one way and four across another way.
03:37And now you've got a healthy but sweet and also fibrous little snack.
