When it comes to food, Lancashire is synonymous with parched peas.
00:04
Never having had the pleasure of trying the classic North West delicacy,
00:08
our reporter Georgia Melling decided to try her hand at making some herself.
00:12
I'm here today with Lancashire Evening Post to show you how to make the traditional parched peas.
00:17
So the main ingredient of this dish is carling peas, but you can also use black eyed peas,
00:21
pigeon peas or badger peas.
00:24
So the first thing you want to do is weigh out 200 grams of your choice of pea.
00:29
Once you've weighed the peas out, you must soak all the peas with some water.
00:34
You want to make sure all of the peas are completely covered.
00:37
This is so that the peas can completely absorb the water
00:40
and start forming that consistency that everyone loves from the parched peas.
00:44
Once the peas are completely covered with water, you want to cover it up and leave it overnight.
00:48
The peas will now stay here like this overnight.
00:50
It is now the next day, the peas have been soaking overnight, so let's have a look how they're doing.
00:55
So we can now have a look and see how they've done overnight.
00:58
As you can see, they're a lot bigger than they were before we initially soaked them yesterday,
01:03
and this is what you're looking for when going into the next step to make your parched peas.
01:08
So the next thing you want to do is you want to grab a colander and the peas that you left overnight
01:14
and just drain them and get rid of all the water.
01:19
Once you've drained the peas, you want to give them a good rinse under some cold water,
01:24
just making sure all the peas have had a good rinse.
01:28
So the next thing you're going to need to do is put all the peas in a saucepan.
01:33
You're then going to get some water and completely cover all the peas, just like this.
01:40
So then you want to bring it to the boil.
01:43
So it's now been left for an hour, and as you can see, the peas have absorbed all the water
01:48
and created a bit of a sauce at the bottom.
01:50
Now we're going to add some butter and some salt and pepper.
01:57
And the final ingredient is lots and lots of vinegar.
02:00
So just give it a good coating of vinegar.
02:03
And then we're going to add a little bit of water.
02:07
And the final ingredient is lots and lots of vinegar.
02:11
So just give it a good coating of vinegar all over.
02:21
There we are.
02:22
So all you need to do now is just give everything a good stir.
02:25
You've got all the ingredients mixed in together.
02:27
Once all the ingredients have been mixed together, it's finally ready to serve.
02:29
And this is the final result, the Lancashire favourite, parched peas made from home.
02:34
So it's now time to taste the peas.
02:36
Let's give them a try.
02:42
They are quite hot because they have just come off the hob.
02:50
Mmm.
02:52
You can get the vinegar through, the salt and pepper.
02:56
They've got a lovely texture to them.
03:00
A solid Lancashire favourite.
03:03
Mmm.
03:07
Thank you for watching this tutorial on how to make the parched peas from home.
03:10
And I really hope you try it yourselves too.
