00:08our reporter Georgia Melling decided to try her hand at making some herself.
00:12I'm here today with Lancashire Evening Post to show you how to make the traditional parched peas.
00:17So the main ingredient of this dish is carling peas, but you can also use black eyed peas,
00:21pigeon peas or badger peas.
00:24So the first thing you want to do is weigh out 200 grams of your choice of pea.
00:29Once you've weighed the peas out, you must soak all the peas with some water.
00:34You want to make sure all of the peas are completely covered.
00:37This is so that the peas can completely absorb the water
00:40and start forming that consistency that everyone loves from the parched peas.
00:44Once the peas are completely covered with water, you want to cover it up and leave it overnight.
00:48The peas will now stay here like this overnight.
00:50It is now the next day, the peas have been soaking overnight, so let's have a look how they're doing.

01:19Once you've drained the peas, you want to give them a good rinse under some cold water,

01:28So the next thing you're going to need to do is put all the peas in a saucepan.
01:33You're then going to get some water and completely cover all the peas, just like this.
01:40So then you want to bring it to the boil.
01:43So it's now been left for an hour, and as you can see, the peas have absorbed all the water
01:48and created a bit of a sauce at the bottom.
01:50Now we're going to add some butter and some salt and pepper.
01:57And the final ingredient is lots and lots of vinegar.
02:00So just give it a good coating of vinegar.
