Schezwan ginger chicken:
Ingredients:
Chicken (cut in slices) 500g
Eggs 2
Corn flour 4tbsp
Ginger chopped 1tbsp
Spring onion 3
Soy sauce 3tbsp
Vinegar 2tbsp
Red chili chopped 1/2tsp
Chicken stock 1/2cup
Sugar 1tsp
Whole red chili 5-6
Chili sauce 2tbsp
Ginger garlic paste 1tsp
Tomato sauce 2tbsp
Flour 4tbsp
Baking powder 1/4tsp
Salt 1tsp
Oil for frying
Green chili (cut in slices) as required
Method:
Firstly add salt, eggs, corn flour, flour and baking powder on the chicken to mix it thoroughly. After 30mins deep fry it in oil. Now in a pan heat oil and fry chopped ginger. Then in it add whole red chili, ginger garlic paste, vinegar, soy sauce, tomato sauce and red chili chopped to roast. Now in it add chicken and sugar to cook till it gets a boil. After that add corn flour to thicken it and now add chicken in it. Lastly add green chili and spring onion to mix and serve it hot.

Ginger Soup with Dumpling:
Ingredients:
Chicken stock 6cups
Chicken mince 200g
Prawns 200g
Spring onions 3
Chopped ginger 1tbsp
Brown sugar 1tbsp
Vinegar 2tbsp
Mushroom 6-8
Corn flour 3tbsp
White pepper 2tsp
Capsicum 1
Egg 1/2
Salt as per taste
Method:
In a chopper add chicken mince, ginger chopped, salt and egg to chop. Then add chopped prawn in the mixture.Now make small balls from the mixture. Then in chicken mince add salt, white pepper, vinegar and ginger chopped to boil. Now add dumplings. When it’s cooked a bit then add 1tbsp of brown sugar, mushrooms and capsicums. Lastly add cornflour to thicken it and spring onion to serve.

Garlic Fried Rice:
Ingredients:
Rice (boiled) 3cups
Oil 4-5tbsp
Garlic chopped 1tbsp
Spring onion 2-3
Mushrooms 10-12
White pepper 1tsp
Chicken powder 1tsp
Soy sauce 2tbsp
Chicken stock 1cup
Salt as per taste
Method;
Heat oil and fry chopped garlic. With it add chicken stock, soy sauce, salt and white pepper to cook till it gets a boil. Then add boiled rice, chicken powder and mushrooms to mix. Lastly mix spring onion and fry for 5mins and serve.
