Pyaj Kachori is a kind of Rajasthani Kachori, a fried pastry filled with a spicy onion filling. It is one of the famous spicy snack food from Jodhpur and vicinity. The popularity of this snack dish increased in other parts of North India when Rajasthani restaurants and food outlets opened throughout India.

Ingredients for Stuffing:
(Serves 4)
- 2 tbsp Emami Healthy & Tasty Refined Soyabean Oil
- 1 cup Onion(sliced)
- 2 Potatoes(boiled & peeled)
- 1 Bay Leaf
- 1 tsp Fennel Seeds
- 1 Green Chillies(chopped)
- 1 tsp Nigella Seeds
- 1 tbsp Gram Flour
- 1 tsp Red Chilli Powder
- 1 tsp Garam Masala Powder
- 2 tbsp Coriander Seeds Powder
- Salt

Ingredients for Outer Coating of Kachori:
- 2 cups Refined Flour
- 1/4 cup Ghee(melted
- Salt
- 1/4 tsp Baking Powder
- Water

Ingredients for Frying:
- Emami Healthy & Tasty Refined Soyabean Oil

Method:
- Heat Emami Healthy & Tasty Refined Soyabean Oil in the wok over a high flame
- Add sliced onion to the wok and saute it till the onion turns golden brown
- Add a teaspoon of water to the wok so the onions become soft
- Now add boiled and peeled potatoes to the wok, saute it and add in, bay leaf, fennel seeds, green chillies, nigella seeds, gram flour, red chilli powder, garam masala powder, coriander seed powder, salt
- Mix all of this well and let it cook for around 3-4 minutes over a low to medium flame
- Turn the flame off and allow it to cool down completely
- Now, take refined flour in a large bowl and add in ghee, salt
- Mix it with your hands and give it bread crumb like texture
- Add in baking powder, water and make a dough
- Transfer this dough to a table and knead it for at least for 2-3 minutes
- Put the dough back in the bowl; cover it and let it rest for 10 minutes
- Discard bay leaf from the stuffing
- Cut lemon-sized dough out of the dough we have prepared
- Roll the dough for about 3-4 inches in diameter and place a tbsp of stuffing in the center
- Cover the stuffing with the dough from all the sides
- Pat it again and roll it again into the same size
- Keep it aside, and do the same for the rest of the lemon-sized dough
- In a large pan, moderately heat Emami Healthy & Tasty Soyabean Oil and start adding the kachoris to it]
- Once fried, take kachoris out on a plate over an absorbent kitchen paper
