Kadboli is a traditional Maharashtrian snack recipe made during the festival of Diwali. Our chef Archana brings you this easy savory recipe only on Ruchkar Mejwani.
Ingredients:
250 Gms Rice Grains 100 Gms Jowar 100 Gms Bajara 100 Gms Wheat Grains 1 tbsp Gram Dal 1 tbsp Urad Dal 1 tbsp Moong Dal 1 tbsp Cumin Seeds 1 tbsp Coriander Seeds 1/4th tsp Turmeric Powder 1 tsp Mix Masala 1 Cup Water Salt to taste Oil for frying
Method:
- To make the bhajani flour, heat a pan. Dry roast all the grains starting from rice, jowar, bajara, wheat, gramdal, urad dal, moong dal, cumin seeds and coriander seeds. Keep them aside. - Grind all the ingredients in a mixer. Bhajani flour is ready. - In a round bottom pan, heat some water. Add turmeric powder, salt, mix masala and very little oil. Bring the water to a boil and then switch off the flame. - Add the bhajani flour and mix well. Let the mixture cool down for some time. - Then make a dough of that mixture by adding little water. - Shape the kadboli as shown in the video. - Fry the kadboli in hot oil till it changes colour. - Serve the crispy Kadboli with hot tea.
