Ingredients:
Oil
Ghee
Marinated Prawns ( Turmeric & Salt)
Brinjal
Few Curry Leaves
2-3 Slit Green Chillies
1 Big Onion chopped
1 Tsp Ginger-Garlic Paste
1 Tsp Red Chilly Powder
1 Tsp Coriander Powder
½ Tsp Garam Masala Powder
¼ Tsp Turmeric Powder
2 Cups Hot Water
Salt as per taste
A few Coriander Leaves (chopped)

Method of Preparation:

* Prawns cleaned and deveined
* Marinate the Prawns with little Turmeric & Salt for 15 mins.

1. Heat a pan add oil & then add the marinated prawns.
2. Let the prawns cook for few minutes.
3. Then remove the partially cooked prawns in a bowl and keep aside & also preserve its stock.
4. In the same pan add oil, then add few curry leaves, 2-3 slit green chillies & 1 chopped onion & saute till onion becomes translucent.
5. Then add 1 Tsp Ginger-Garlic Paste & saute till its raw smell disappears.
6. Then add 1 Tsp Red Chilly Powder, 1 Tsp Coriander Powder, ½ Tsp Garam Masala Powder, ¼ Tsp Turmeric Powder & finally add some salt as per taste & saute for few seconds.
7. Then add the brinjal pieces & add 2 cups of Hot Water and mix all gently.
8. Then finally add the partially cooked prawns along with the stock & close the lid & let it cook for few minutes.
9. Drizzle some Ghee on top for taste (OPTIONAL)
10. Finally garnish with coriander leaves and that’s it.

00:00hi friends welcome back to tasty feast magic today we are making a delicious
00:07and flavorful brown brinjal curry also called jinga bangan curry let's get
00:16started first make sure your prawns are clean and divine now marinate them with
00:24a little turmeric and salt and let it rest for about 15 minutes heat some oil in a
00:32pan add the marinated prawns and cook them just for a few minutes
00:46once they are partially cooked remove them into a bowl
01:14don't forget to save the stock
01:27in the same pan add a bit more oil then add some curry leaves 2 to 3 slit green
01:37chilies and 1 chopped onion saute until the onion turns translucent add 1 teaspoon
01:46ginger-garlic paste saute till raw smell disappears now add 1 teaspoon of red
01:54chili powder 1 teaspoon coriander powder 1 teaspoon garam masala powder 1-4 teaspoon turmeric
02:02powder salt to taste mix all well now add your brinjal pieces
02:15then pour in 2 cups of hot water
02:20and stir gently
02:29next add the parsley cooked browns along with the stock cover the pan and let everything cook together for a few minutes until the flavors blend
02:42for extra taste you can drizzle a little ghee on top this is totally optional
