00:02:41We have no idea why he's into skateboards.
00:02:44He let us know the very first time he saw a skateboard that it was something he was interested in.
00:02:48So what happened?

00:02:51Well, so he was about three months old and we only sort of just had him about two or three weeks.

00:02:55And we went for a walk.
00:02:57A couple of guys came past on skateboards and he just went crazy.
00:03:00My style to the rich and the famous.
00:03:04They're always complaining.
00:03:07Always complaining.
00:03:09If money is such a problem.

00:03:16Think we should rob them.
00:03:18Well, took off after them.
00:03:20Straight at them, you know.
00:03:21And we were surprised because he was so small but you could feel the strength in him.
00:03:25We thought he didn't like the noise.
00:03:27That's what our initial reaction was all.
00:03:29He doesn't like the noise and he's aggressive.
00:03:31Quite the opposite.
00:03:34He loves the noise and he's the most unaggressive dog you'll ever come across.
00:03:38Just about every dog in the world wants to go out and chase something.

00:03:44And some are very strong on it and some are very weak on it.
00:03:47Yeah, the odd dog is totally disinterested.
00:03:49But most dogs have this and that's why they want to chase something that moves.

00:04:21And the difference between him and, say, a person on a skateboard is that he's got a much lower centre of gravity.

00:08:15Yeah, it definitely would be asbestos, but it's actually in pretty good nick, so I reckon
00:08:19you might be able to get more mileage out of it just yet.

00:09:44Now, lucky for us, Brad has cleared out all this soil, which is perfect for a deck, because
00:09:58we need to have clearance of at least 150 underneath our timber.
00:10:02So, now that it's done, we're just digging our post holes.
00:10:04We're going down about 600 deep.
00:10:06We'll set them in.
00:10:07We'll be able to put our bearers on our posts, and then set our joist at 450 centres.
00:10:11This is pretty easy to dig it, isn't it, Poe?
00:10:14I'll take this in either.
00:10:26This area up here, the top of the garden, is going to be our main entertaining paved space,
00:10:30and we are going to have a cooking station over there.
00:10:33But because it's so uneven, I want it to be nice and level.
00:10:35For that, I need to bring it up, and when you bring it up, you need to retain the sub-base.
00:10:39For that, I'm using some Shapescaper steel edging.
00:10:44Now, I absolutely love this stuff.
00:10:46You normally see me use it in a garden bed, where you just put a stake in the ground, and
00:10:49you hook it up.
00:10:49But when you've got concrete, you just can't use the stakes.
00:10:52So, I'm just using some angle brackets, which I'll attach to this concrete hob wall, to
00:10:56give me a nice, secure edge.
00:10:59We're going 150 step up, so it's a nice step up from Adam's deck.
00:11:02But it does come in a huge range of sizes, so it's really versatile, and will suit most
00:11:06gardens.
00:11:07With all the holes dug, they're about 600mm deep, and now we're ready to put the posts in.
00:11:34For that, we're just using some H4 treated pine.
00:11:37You want to make sure the main part is you get some concrete underneath the post, and
00:11:41obviously all the way around it.
00:11:43That way, it supports the lake.
00:11:44As we wrap around the back of Adam's deck, I'm going to have a planter box.
00:12:04I'm using the same steel, but in a higher profile.
00:12:07That means we're going to get more soil in here, and better success with our plants.
00:12:10Now, I'm actually using a prefabricated corner, but you can bend it yourself on site if you
00:12:15want.
00:12:15If you don't have a right angle, they can do custom work for you as well.

00:13:37So Peak Crows Ness is turning out to be quite an enviable place for people to live.
00:13:41You've got the city, a stone's throw away, you've got heaps of dining options, you can
00:13:45still get a home in a green, leafy street.
00:13:48But best of all, it actually still has very much a sort of like welcoming community, village-y
00:13:53feel.

00:13:54I think it's going through its own little renaissance, and that's partly due to the
00:13:58introduction of the Metrolink.
00:14:00And look, people are really discovering this part of the North Shore.
00:14:02Well, at that transport hub you're talking about, you've got the Metrolink and the train
00:14:05station down the road, you also have a huge amount of sort of high-density developments
00:14:09that are springing up absolutely everywhere.
00:14:11It's got that vibe of a mini-city, which is like Chatswood next door.
00:14:15Yeah, well, I'll tell you what, I feel like I need to head off and do a bit of real estate
00:14:18research for myself, and I reckon I can guess the direction you're going to be.
00:14:21I'm sure you can.
00:14:34If you love history, walking the back streets of Crow's Nest, you can certainly get your
00:14:40historic fix.
00:14:41Now, the suburb first took shape in 1821, thanks to a land grant to a bloke by the name
00:14:47of Edward Wilsencraft, who built his home and called it Crow's Nest, thanks to its commanding
00:14:53view.
00:14:53Since then, the suburb has grown up with a full cross-range of architectural styles, from
00:14:59Federation, Queen Anne, with the beautiful timber detailing, the fretwork and ironwork.

00:15:08Combine all that with the luxuries and conveniences of a modern city.
00:15:12Wow, Ewan, this is just a wee bit gorgeous.
00:15:30Now, obviously, we're at the luxurious end of things that we're talking about.

00:15:42And I think that's probably one of the big selling features of it, is that you've got

00:15:53But that's changed over time, as more and more apartments have come along.
00:15:58And as they build newer and newer buildings, you get a much different standard.
00:16:02And the standard's always going up.
00:16:04Can you still get in at an affordable price?
00:16:06Like, give me the range of what you can get.
00:16:08Well, I mean, we could sell you a little studio, like a studio apartment in the middle of Crow's
00:16:13Nest itself.
00:16:14So, you know, they're very good value, you know, anywhere around that $600 mark.

00:16:20What's the top-end price, roughly, that you're talking about, Beau?
00:16:25Well, I mean, you could spend $5 million.
00:16:27Are you finding that they're selling the more traditional homes because of the convenience
00:16:32of transport and everything else you're talking about?
00:16:33Yeah, interestingly, I think the transport's made a big difference, even though we've had
00:16:37St. Leonard's station here, obviously, for a long time.
00:16:39But the Crow's Nest Metro's changed the dynamic completely.
00:16:42Crow's Nest into the city, it's like minutes.

00:16:45And then what about the future?

00:19:03Now, I've been walking through some of the beautiful, charming heritage streets.
00:19:07How do you balance what you're doing, new development, with the old world charm?
00:19:11Well, you bet. The reason we love this site so much, it's right in the middle of Crows Nests
00:19:15Village, and it's that old architecture combining with this new, modern high-rise, and I think
00:19:21we've got the balance right. Our podium is wrapped in old bricks that looks beautiful
00:19:26and timeless, and now people get to live above the metro, the only site in Sydney, and you're
00:19:31minutes just to anywhere.
00:19:32To think that we're getting to build a once-in-a-generation project on top of a billion-dollar
00:19:37piece of infrastructure, it's a dream come true.
00:19:40Four Third Eye, and I think the residents are going to love it.
00:19:50Well, Pete, as we've touched on, I think the real appeal of Crows Nest is that mix
00:19:54of the old and the new. I mean, it really does encapsulate what a lot of suburbs are
00:19:57experiencing in the 21st century.

00:20:09Although, I don't think we have focused on one of the most important things.

00:20:17Coming up, meet the little balls of potato giving pasta a run for its money.
00:20:22I think that is a gnocchi that even a nona will be proud of.
00:20:28Adam and Charlie will do whatever it takes to bring this entertaining space to life, no
00:20:34matter the consequences.
00:20:36I'll tell you what, this wind is not doing wonders for your hair, is it?
00:20:38I need some manscaping, that's for sure.
00:20:40And their colour may be curious, but these brownies are off the charts great.
00:20:46That whole batter is going to turn bright green.
00:20:57All right, believe it or not, this accent is not Italian.
00:21:02But I can cook gnocchi, and today I'm going to make you a special gnocchi, which is a green
00:21:07gnocchi with burnt butter sauce and baby beets.
00:21:10All right, so basically, gnocchi is potatoes, it's flour, and it's eggs, and you can flavour
00:21:20it with herbs.
00:21:21You want your potato as dry as possible.
00:21:24So what you're going to do is, you've got your potatoes, I line the bottom of the tray
00:21:28with some rock salt, just some cheap rock salt, and lay the potatoes on the salt.
00:21:33So it's about 10, 11 potatoes, which is 1.2 kilos in the oven for about 40 minutes to
00:21:39an hour, until they're beautiful and soft.
00:21:41I like to flavour the flour with the herbs, so you get all that green running through the
00:21:46gnocchi and you get all the flavour.
00:21:47And the best way to do it is to blend it.
00:21:51I got about 110 grams of flour, so that goes into my mixer, as messy as I can.
00:21:57A bunch of sage, that goes in, rosemary, just take it off the stalk.
00:22:12Italian parsley, it's the only Italian bit in the dish.
00:22:17And now, just give it a blend.
00:22:22All right, so have a look at that.
00:22:25Oh, you can smell it.
00:22:31All right, so, the potato, soft, salt's done all its job.
00:22:35What we want to do now is, there's no way around this, you've got to do it when it's hot.
00:22:39If the potato gets cold, the starch locks in, and you're not going to get a good gnocchi.
00:22:43So you're just going to cut them in half.
00:22:47This also helps dry them out as well.
00:22:52All right, large bowl, potato ricer.
00:23:02If you don't have a potato ricer, you could just mash them up really fine.
00:23:06You're going to scoop out your hot potato into your ricer.
00:23:15Look at that.
00:23:17Irishman's dream.
00:23:22All right, to the potato, you've got to cheese it up.
00:23:25Parmesan, about 200 grams.
00:23:31All right, we've got our flour we did earlier.
00:23:37All right, there's our flour.
00:23:40So I like to gently fold it through before we put the eggs in, just to incorporate all that flour.
00:23:46Now we're going to add three egg yolks, just to lock it together.
00:23:51This is what binds it.
00:23:55One.
00:24:00Two.
00:24:01And then the tool I use to bring it together, very kitchen-y, is a pounce grout bar.
00:24:13Because it helps get in.
00:24:15You don't really want to work it too much with your hands, you want to work it with the steel.
00:24:19So just chop it in.
00:24:20A little bit of our flour, just on the bench.
00:24:29So it's all by touch, so just take it out.
00:24:32Obviously you don't want it wet and gloopy.
00:24:35And all you want to do, is you want to bring it together.
00:24:38It's not like bread, you don't want to knead it.
00:24:40You just want to bring it together.
00:24:41All right, just give your gnocchis a little squeeze, just for presentation.
00:25:10Lay them on your tray.
00:25:22All right, now what you do is straight into the boiling water.
00:25:29So, easy way to tell if your gnocchi's cooked.
00:25:31What happens is, you drop it into the boiling water, it sinks to the bottom.
00:25:35As it cooks and the egg cooks inside, it rises to the top.
00:25:38That's when you know it's ready, scoop it out.
00:25:41There we go.
00:25:44Look at that.
00:25:46A little bit more firm, not too firm.
00:25:48All right, gnocchis, put them in the warm oven, it's turned off, just leave them in there to warm.
00:26:00Good gnocchi needs a good sauce.

00:26:24Cook your sage until it's crisp.
00:26:27Add your capers and your juice.
00:26:29About 100 grams.

00:27:12A pair of your gnocchi with a vegetable that's in season, so obviously, we're all baby beets.
00:27:28So just cut it nice and fine.

00:27:38Stir it.
00:27:40Bit of the green.
00:27:41Look at that.
00:27:42And then, always, always, more cheese.
00:27:55I think that is a gnocchi that even a nonna will be impressed with.
00:28:00Do you remember that great Aussie film classic, babe?
00:28:22Well, it was set in the green heart of the southern highlands of New South Wales, right here, in fact, in the rolling hills of Robertson, a rich volcanic soil and an abundance of rain.
00:28:37That has also helped to create some of the finest picture book gardens in the country.
00:28:42The Moorings is a 40 hectare heritage farm.
00:28:55It was established in the 1870s by a naval lieutenant.
00:29:00Now, back then, he bought 100 acres for 100 quid.
00:29:05A great deal.
00:29:06Today, the current owners have restored the original homestead, but for me, what is really magical, they've also created a two-hectare ornamental landscape with foliage and year-round interest at its heart.
00:29:21Once you come down the driveway into the turning circle here, where the coach and four would have dropped off its passengers to the homestead, it's a very different wintry look with these bare tracerier branches going up into a grey sky.
00:29:44They create the skeleton, the bones, the structure of this garden, especially they're visible in winter, but, you know, there's a more permanent look in this garden that's here every single day.
00:29:56It's these clipped hedges of azaleas, of camellias, but the flowers are secondary to the forms and the shapes that they come in, and this is only the beginning.
00:30:14The conifer garden has to be the signature piece of this property.
00:30:20In fact, it's probably one of the best in the entire district.

00:30:57Don Dyer absolutely loves conifers, and so, yeah, he just, whatever he could find, he decided to plant.

00:31:07Look at the cryptomeria up there.

00:31:09It's got that winter colour, doesn't it?
00:31:11Absolutely beautiful.
00:31:12Now, Don, obviously, he goes, what, has he got a horticultural degree or something?

00:31:18He's a nuclear physicist.

00:31:22But he really had a passion for plants, obviously.

00:31:25So, Liz, how long does it take you to keep this conif gun looking so neat and tidy?
00:31:39Probably about a day and a half, with the whole, all the fine little bits and pieces and having to get in.
00:31:46How often, though?
00:31:47Uh, probably every three months.
00:31:49Oh.
00:31:50Once it starts to get a little bit of, a little bit of legginess on it.
00:31:53Yeah, a bit of furry.
00:31:53A bit of furry.
00:31:54I just love this golden hanoki cypress.
00:31:58The interesting thing, it's like it's been sprayed with gold paint, because it's all gold on the top, but green underneath.
00:32:03Underneath.
00:32:04Yeah, there's always something to look at in the conifer garden all year round.
00:32:08Just gives that little bit extra.
00:32:10It's a real lift, isn't it?
00:32:19It's at the front of the house where the magic really reaches its peak, because you've got this wonderful view and the homestead itself.
00:32:27The tree, the poplar, was most likely planted by the naval lieutenant.
00:32:31It's a really old, old tree, well over a hundred years of age, like these beautiful brush box.
00:32:38This my exclamation to rule.
00:32:45In later years, the garden provided a great opportunity for Don and his wife Barbara to entertain the grandchildren, and they just loved the garden.
00:32:53It's really Don's plant selection that has helped Les create these beautiful clipped hedges and domes and shapes, like this Eliagnus here.
00:33:04There is a bit of variegation in it, but it's nice and tight and compact.
00:33:07The secret when you're wanting to select these plants is small, twiggy leaves and twiggy growth.
00:33:13Bigger leaves, you've got too many gaps in the dome.
00:33:15And look at this laurel petalum.
00:33:18Just look across the top there, you can see those pink new growths up against a blue sky.
00:33:22It really is quite stunning.
00:33:24But the scene is set by this beautiful conifer archway.
00:33:29As you go through, don't forget to look up to see the bones, the structure that creates this wonderful archway.
00:33:36The fascinating thing is that every room, including the conservatory, looks out over this spectacular view.
00:33:59Do you know, it doesn't matter what century you're building in, that real estate saying of position, position, position, still holds firm.
00:34:08It's all about this glorious view.

00:35:30From a backyard that was a concrete jungle to a beautiful entertainment zone.
00:35:35Well, that's the plan that Charlie and I have anyway.
00:35:37And for our decking boards, we've gone with a nice hardwood.
00:35:44Now, for this one, I have chosen Mirboo or Mirbao.
00:35:47Now, these are sustainably sourced.
00:35:49They come in beautiful long lengths.
00:35:51They'll span our whole deck and they're 140 wide.
00:35:54So they're going to tie in with our fence and this whole entertainment area perfectly.
00:35:57It is well worthwhile putting some time and thought into your paving layout because you
00:36:25do need to consider drainage.
00:36:27Now, think of this as a big umbrella that's going to catch water.
00:36:30You need to direct that somewhere else.
00:36:32You don't want to send it to the neighbours.
00:36:34And I want a nice flat line here so when it meets Adam's deck, it looks like it's well
00:36:38thought out.
00:36:38So we're draining upwards this way.
00:36:41That also sets my layout for my pavers.
00:36:43I'm using 600 by 400 because I want that contemporary look.
00:36:45But I'm doing a stack bond back just to accentuate the lines of the decking.
00:36:49Now, this is a colour called cypress.
00:36:51And I know what you're saying, why are you using a light colour like cypress when it comes
00:36:54to an entertaining space?
00:36:56Well, these have been pre-sealed so you can spill as much wine on them as you like.
00:36:59It's just like paradise, standing in the light, breathing in the time.

00:37:23Charlie and the guys have done a fantastic job on this paving.
00:37:27It's looking awesome, but now it is time to address this eyesore.
00:37:32For that, we've built a simple frame just using some 90 by 45 treated pine.
00:37:36And what we're going to do is slide it into place and use this existing fence on each side
00:37:41to fix it off.
00:37:42And then I'm going to get some shiplap cladding out of the cement sheet and we'll clad it.
00:37:47It's going to look fantastic.
00:37:48Before we can move on with the rest of the garden, we have to address the asbestos on the shed.
00:38:14So we've brought in the professionals to sort that out.
00:38:17Our backyard is coming together, but what about our old laundry shed?
00:38:37Well, the asbestos guys have been and gone and we've got our safety certificate.
00:38:41The team is hard at work and they've started with fixing up this framework for our new servery.
00:38:47Now, because so many Aussie backyards have old sheds just like this one,
00:38:51there's a heap of information we want to share with you about the safe testing and removal of asbestos.

00:43:19From mochis to smoothies and lattes and ice cream, it is everywhere.
00:43:26And if you are a lover of matcha, then this is the recipe for you.
00:43:31My white chocolate matcha and macadamia brownie.
00:43:35So we're going to start off with melting the white chocolate.
00:43:38Here I've got 175 grams of white chocolate.
00:43:42I'm going to chop them into smaller bits.
00:43:50I'm going to melt the white chocolate on a double boiler.
00:43:54All you need is a saucepan and a bowl with water underneath it boiling.
00:44:03Now to that, I'm going to add 195 grams of unsalted butter.
00:44:08This will take no time to melt.
00:44:18Just keep an eye on that.
00:44:27That is done.
00:44:29It's nice and smooth.
00:44:30I'm going to take it off the saucepan because what I want to do is I want to cool it down
00:44:36before I mix it in with the other ingredients.
00:44:41In a separate bowl, I'm going to mix 220 grams of white granulated sugar.
00:44:51Three eggs.
00:44:53So it looks like the sugar has melted.
00:45:10I'm going to add about one tablespoon of vanilla essence.
00:45:14I'm going to see what the temperature is like with the white chocolate because you don't
00:45:24want to add it while it's still too hot because I don't really want to cook the eggs.
00:45:33Add this to my egg and sugar mixture.
00:45:37Next, the dry ingredients.
00:45:45Sifting 145 grams of all-purpose flour.
00:45:53I've got two tablespoons of ceremonial grade matcha.
00:45:58I suggest to get the ceremonial grade matcha for this recipe.
00:46:02Sift that in with the flour.
00:46:09I've got sea salt here.
00:46:13I've got one teaspoon.
00:46:16If it's a coarse sea salt, try and break the little granules a little bit before you put
00:46:21it in.
00:46:26Give it a quick stir.
00:46:32And now, I'm going to add it to the wet ingredients.
00:46:36Add a couple of tablespoons at a time and just fold it through.
00:46:52It's a white chocolate brownie.
00:46:55So, I've got more white chocolate.
00:46:57Here, I've got 150 grams of white chalk chips.
00:47:02You can add as little or as much as you want.
00:47:06But try to stay away from too much because you don't want it to be too sweet either.
00:47:12So, just slowly fold that in.
00:47:14And then, I've got the macadamia nuts.
00:47:21I'm going to give it a quick rough chop of the macadamia nuts.
00:47:26I've lined 20 by 20 centimetre pan with some baking paper.
00:47:45It is going to taste delicious.
00:47:51Into the oven at 160 degrees.
00:47:54For about 25 minutes.
00:48:07This looks just about done.
00:48:14And you can still see a little bit of the batter on it.
00:48:19And that's perfect.
00:48:20Two hours to cool down before we serve it.
00:48:35It's going to be easy now to just lift that up.
00:48:39And take all of that out.
00:48:48And for the topping, you can leave it as it is.
00:48:51It doesn't make a difference.
00:48:52But if you want to make it look a little bit prettier, just a slight dust of matcha powder.
00:49:00I'm going to take the biggest one here.

00:50:54Well, the transformation of our concrete jungle is coming along very nicely.

00:51:03It looks fantastic, almost as good as my paving and planters.
00:51:06But now it is time to get some plants into the round, so let's start with these hedges.
00:51:09They're beautiful.
00:51:10They're huge, mate.
00:51:22The trees I'm using for my hedge are called Iliocarpus reticulatus, otherwise known as the blueberry ash.
00:51:27Now, this is a native that I absolutely love.
00:51:29It gets covered in sort of a nodding flower, which has a fringe on the end, which turns into a blueberry, which is a perfect food for native birds.
00:51:36Now, this does turn into a tree, but it is quite columnar, which means it grows upright, and you can prune it.
00:51:42What I'm imagining here is, well, I'm going to grow it upright against this fence because it looks fantastic, but as it gets bigger, keep it quite narrow and pruned.
00:51:53You can remove the lower branches, which will give you more space below to introduce some more planting.
00:51:58Look at you, placing plants.
00:52:09I've got no idea what I'm doing, Charles.
00:52:10That's all right.
00:52:11Just make it up.
00:52:11Maybe do I.
00:52:12I've made a career out of it.
00:52:13Because we're planting this garden up in the middle of winter, I'm using a lot of textural plants just to add some interest.
00:52:23Now, we've got some really broad leaves like the Ligularia, some flying clipped leaves like this Wastringia, but I'm also using some strappy leaves.
00:52:30We've got fine strappy leaves in the Common Rush, the Juncus.
00:52:34We've got slightly thicker in the Lyriope, and then Sword Shape in this Sansevieria Moonlight.
00:52:39It's going to give us a really nice planting scheme, which looks good all year round.
00:52:42And how much better is our shed looking with the new cladding?
00:53:11It's freshly painted.
00:53:12It really just lifts this whole area.

00:59:39In the colder months of the year,
00:59:50there are some landscapes that really stand out
00:59:53and create a beautiful serenity.
00:59:55Here at the Moorings Garden,
00:59:57in the Southern Highlands of New South Wales,
01:00:00is one such garden.
01:00:01It is just so beautiful at this time of the year.
01:00:05The weeping willow reflected in the pond,
01:00:07and of course, the silver birch.
01:00:09Even the trunks covered with a little bit of lichen.
01:00:12The Japanese maples, bear and stark.
01:00:16And then, of course, with seasons sort of rotating,
01:00:19getting mixed up,
01:00:21we're so lucky to see these beautiful red-hot pokers.
01:00:25The Nifophia, this variety is tall and elegant,
01:00:28with its great spires, these flames of orange and red.
01:00:32It's a real standout here, looking across the landscape.
01:00:35And the pond looks even more mysterious.
01:00:38The brilliance of the owner
01:00:52to create these intimate enclosed spaces,
01:00:55garden rooms, if you like,
01:00:56we've seen so much of.
01:00:59But here, he's thrown the garden design book out
01:01:02and created something completely different.
01:01:04This is the sculpture garden.
01:01:06But he's allowed the trees to tell their story.
01:01:17Whether it's conical, weeping, vase-shaped,
01:01:20whatever the trees are, they're looking natural.
01:01:23But instead of enclosing, he's pulled the curtains back.
01:01:27You know, maybe Japanese-borrowed landscape style,
01:01:30and what a landscape it is.
01:01:31This is the Yarrawa brush,
01:01:33the last remnant cool-climate rainforest in the area.
01:01:37Highly protected.
01:01:38And what a vista.
01:01:40Anywhere the wind blows,
01:01:42it doesn't really matter
01:01:44cos it all just ends the same.
01:01:49The fascinating thing about this garden,
01:01:51the more you explore, the more you discover.
01:01:53And this area here could be no more of a contrast
01:01:56than the one that we've just been in.
01:01:58Here, it reminds me that so many people ask me,
01:02:08oh, what happens when I grow these beautiful trees?
01:02:11And it creates a totally different environment.
01:02:13Shade, moist soil, and all your roses and azaleas
01:02:17and things tend to disappear.
01:02:19Well, why not go for Australian?
01:02:21Beautiful ferns.
01:02:22We've got a fantastic collection of ferns
01:02:24that grow in these sorts of locations.
01:02:27The tree ferns, these beautiful bird's nest ferns.
01:02:30I just love them.
01:02:31They're so dramatic and sculptural,
01:02:33architectural in a garden.
01:02:35Rasp fern.
01:02:35Talk about architecture as a ground cover.
01:02:38And then, of course, yep, good old bracken fern.
01:02:40We're always poisoning it to get rid of it.
01:02:42No, let it go wild.
01:02:44And here you've got a beautiful scene,
01:02:46an evergreen every day of the year looking beautiful.
01:02:50You know, it never ceases to amaze me
01:03:03how these grand, extensive gardens in the country
01:03:06are filled with great ideas that we can borrow.
01:03:10Maybe it's a case of just setting up a theme
01:03:12or possibly selecting some plants
01:03:15that will really, you can clip and train,
01:03:17or looking at some of the conifers
01:03:20that were always good and still are
01:03:22and lots of permanent annual colour in our gardens.
01:03:26And we have the owners to thank
01:03:27for creating something so special and sharing it with us.
01:03:31But, you know, that's what the gardeners do.
01:03:40The problem with curtains like this
01:03:42is that when you use them for privacy during the day,
01:03:44you're also blocking out all of that natural sunlight.
01:03:47But I have a great trick for your curtains
01:03:49that's not only practical, it also looks amazing.
01:03:52I'm using a double rod
01:04:10and that will allow me to put a block out blind
01:04:13closest to the window
01:04:14and then a lovely soft sheer on the inside.
01:04:17And I've also put in this timber helmet from the ceiling
01:04:21and that's going to give it
01:04:22a much more elevated high-end look
01:04:24because it will hide all of that hardware.
01:04:38Custom-made curtains can be really expensive,
01:04:40but this is a brilliant way
01:04:42to get the same look using ready-made curtains.
01:04:45Traditionally, with a double rod,
01:04:47the curtains would be hung in the opposite way,
01:04:49so the sheer would be closest to the window.
01:04:51But this way is much more contemporary
01:04:53and makes a whole lot more sense to me
01:04:55because having the block out closest to the light source
01:04:58means that you're blocking out more light
01:05:00and then this lovely soft layer
01:05:02on the inside of the room
01:05:03adds another detail to the design.
01:05:08Now that we've added in some more texture
01:05:10and detail to this bedroom,
01:05:11you can see how these gorgeous soft curtains
01:05:14really elevate the space.
01:05:18One of the key features of hanging your curtains like this
01:05:21is that you can control the level of privacy
01:05:23and also the amount of light coming into the room.
01:05:27And another trick is to hang your curtains wall-to-wall
01:05:30and from the ceiling.
01:05:32That way you get that really luxurious look.
01:05:34The pelmet helps with that as well.
01:05:36And I think you'll agree,
01:05:37for off-the-shelf curtains,
01:05:39these ones look pretty high-end.
01:05:40So you've heard Pete and I talk about
01:05:59all the various dining options in Crow's Nest,
01:06:01so we thought we'd better try it out for ourselves.
01:06:03One with a lot.
01:06:04Oh, my gosh, that's not what I was expecting,
01:06:06but I am excited.
