00:00:00Well, lifestyle and location, two words that sum up what makes a suburb great, especially
00:00:11in a big city.
00:00:12And Sydney's Lowell North Shore is what we're talking about here, I mean Jo, take a look
00:00:16at this view!
00:00:17Honestly, I wish that we could stand here and soak that up all day, but Pete, you and
00:00:21I are going to be getting our steps up as we actually suss out a suburb that's going
00:00:24through some major changes right now.
00:00:26While also hopefully retaining the history and heritage that make it unique.
00:00:30Yeah, we are checking out the past and the future and plenty more coming up on Better
00:00:34Homes and Gardens as well.
00:00:36Tonight, Dr Harry's carving up the skate park with a gnarly dude.
00:00:43So what has four legs and four wheels?
00:00:45Jato, the skating king!
00:00:49When your garden's got more concrete than the Acropolis, it's time to call in the A-Team.
00:00:54It's just going to be like a perfect outdoor entertaining spot.
00:00:57Is that where we've got to start working now?
00:00:59Colin's pillow-y potato dumpling recipe is more than just a puff piece.
00:01:04Today, I'm going to make you a special gnocchi, which is a green gnocchi with burnt butter
00:01:09and lemon.
00:01:10Visit a fairy-tale garden that's brimming with magic.
00:01:14And this is only the beginning.
00:01:17Plus, we all love a good cuppa with dessert.
00:01:20But what if it is dessert?
00:01:22Matcha, white chocolate and macadamia nuts can't get any better than this.
00:01:28Most dogs love to go for a run on grass, but not my next dog.
00:01:44He's looking for concrete.
00:01:47Good morning, good morning.
00:01:56How are you both?
00:01:57Morning, brother.
00:01:58Harry?
00:01:59Good to see you, Greg.
00:02:00Nice to see you, too.
00:02:01How are you?
00:02:02I'm here to have a look at this wonderful dog of yours.
00:02:04Right?
00:02:05Right.
00:02:06He's able to go uphill using his hind feet to push himself.
00:02:23That's a learned skill.
00:02:26It's all him.
00:02:27Yeah, he lifts one leg up to counter the balance, and you'll see him with three paws on the board
00:02:31and one up as he's turning.
00:02:32I mean, he looks like a pro.
00:02:34No, it's all self-taught.
00:02:36He's done it all himself.
00:02:38We don't know why he likes this.
00:02:41We have no idea why he's into skateboards.
00:02:44He let us know the very first time he saw a skateboard that it was something he was interested
00:02:48in.
00:02:49So what happened?
00:02:50What was that occasion?
00:02:51Well, so he was about three months old, and we only sort of just had him about two or
00:02:54three weeks.
00:02:55Yeah.
00:02:56And we went for a walk.
00:02:57A couple of guys came past on skateboards, and he just went crazy.
00:03:01And we were surprised because he was so small, but you could feel the strength in him.
00:03:12We thought he didn't like the noise.
00:03:14That's what our initial reaction was all, where he doesn't like the noise, and he's aggressive.
00:03:19Quite the opposite.
00:03:20He loves the noise, and he's the most unaggressive dog you'll ever come across.
00:03:24Just about every dog in the world wants to go out and chase something.
00:03:25Yeah.
00:03:26Right?
00:03:27And some are very strong on it, and some are very weak on it, and yeah, the odd dog is totally
00:03:31disinterested.
00:03:32But most dogs have this, and that's why they want to chase something that moves.
00:03:37He likes company, doesn't he?
00:03:38He loves it.
00:03:39Yeah.
00:03:40He loves it.
00:03:41Loves kids.
00:03:42Yeah.
00:03:43Yeah.
00:03:44Yeah.
00:03:45And some are very strong on it, and some are very weak on it, and yeah, the odd dog is
00:03:48totally disinterested.
00:03:49But most dogs have this, and that's why they want to chase something that moves.
00:04:02He likes company, doesn't he?
00:04:05He loves it.
00:04:06Yeah.
00:04:07Loves kids.
00:04:08He loves children and women.
00:04:10He actually likes to show off.
00:04:15What does he weigh?
00:04:1630, almost 32 kilos.
00:04:18It's a pretty nuggety sort of dog, isn't it?
00:04:20Yeah, yeah, he's a chunk.
00:04:21And the difference between him and, say, a person on a skateboard is that he's got a
00:04:26much lower center of gravity.
00:04:28He has.
00:04:29Than a person riding it.
00:04:30So he should have a better sense of balance.
00:04:32And four legs.
00:04:33Exactly.
00:04:34So you built in the skateboard, didn't you?
00:04:37Yes.
00:04:38You made it a bit wider?
00:04:39Yeah, well, I made it to his body.
00:04:40Okay.
00:04:41So his shoulder width is the width of the skateboard.
00:04:43Yep.
00:04:44And the length's one third longer than his body length, so he's got a bit of room to
00:04:47maneuver.
00:04:48You're a technical individual, aren't you?
00:04:49Engineer.
00:04:50Well done, mate.
00:04:51Well done.
00:04:52Well done.
00:04:53Oh!
00:04:54Oh!
00:04:55Let's do it.
00:04:56Let's do it.
00:04:57Let's do it.
00:04:58Let's do it.
00:04:59Let's do it.
00:05:00Let's do it.
00:05:01Let's do it.
00:05:02Let's do it.
00:05:03Let's do it.
00:05:04What do people think about him, you know?
00:05:07Does he attract attention when he's not skating, when he's just walking around?
00:05:11But a lot of people stop us and they're just like Bulldogs.
00:05:14People like Bulldogs.
00:05:15What do they ask you about him?
00:05:16Do they ask you how you train him to do all of these things?
00:05:19What do they ask you?
00:05:20Everybody.
00:05:21It's the standard question, how did you get him to do that?
00:05:30Tell me about your social media engagements with him.
00:05:33Probably 16, 20 million views of his videos.
00:05:4220 million?
00:05:43Yeah.
00:05:44I think that's fantastic, you know?
00:05:46And people will talk about Giotto and his skills.
00:05:49And the great thing about it is, mate, that, you know, he taught himself.
00:05:53He's a very inventive dog.
00:05:59A dog like this fills your life a little bit, you know?
00:06:02That would be the understatement of the century.
00:06:06That really would.
00:06:07Because this dog is everything to everybody, you know?
00:06:11He is an amazing dog.
00:06:12He's a one in a million dog.
00:06:14He really is.
00:06:19Have you got a mixture of levels and finishes?
00:06:21Well, I've got an easy solution.
00:06:22Just pave over the top.
00:06:24This is the setting of a storybook garden that shines all year round.
00:06:32This segment is brought to you by Shapescaper, the Australian-made modular steel landscaping system.
00:06:46Oh, Charlie, it's a bit nippy this morning.
00:06:48Man up, mate.
00:06:49Come on, you've been, like, snowmanning and skating through Canada.
00:06:52It's not that bad.
00:06:53Mate, that was hard work trying to stay upright.
00:06:55But most importantly, we've got a winter backyard makeover.
00:06:58Absolutely, we do.
00:06:59Now, this one's a little bit old school and a little bit quirky, but we can do quirky, right?
00:07:02Oh, I love quirky.
00:07:08A nice bit of grass here.
00:07:10Bit of buffalo, is it?
00:07:11Yeah.
00:07:13Jackie, Brad, nice to see you guys getting stuck into the work already.
00:07:16Hey, guys.
00:07:17How are we, guys?
00:07:18Hi, good.
00:07:19What is this, like a giant sand pit?
00:07:20Yes.
00:07:21We've got a lot of work ahead of us.
00:07:22Was this little slice of heaven always part of the dream?
00:07:25We kind of overlooked this corner when we were house hunting.
00:07:29And now we've got to the point where we have to figure out what to do with it.
00:07:32And we have no idea.
00:07:34Have you guys got kids?
00:07:35We do.
00:07:36We've got two kids and then another one on the way.
00:07:38Congratulations.
00:07:40Very exciting times.
00:07:41Very busy times.
00:07:42Yes, indeed.
00:07:43Now, I've got to say, I have seen this style of backyard before, having some Italian heritage
00:07:48in me.
00:07:49It is very European.
00:07:50So it's basically, let's concrete the whole block and have a strip of grass.
00:07:53Yeah.
00:07:54So they've done a fantastic job of that.
00:07:55Well, you'd want your greenhouses up here.
00:07:56Yes.
00:07:57You know, your storage for your pots here.
00:07:58That's right.
00:07:59But you get all these trip hazards and it's not exactly the safest for a young family,
00:08:02is it?
00:08:03Yeah, a little bit dangerous.
00:08:04So tell us a bit about the shed.
00:08:06Yeah, so it's an old outdoor laundry, as you can see.
00:08:08It's a little bit tired.
00:08:10We're not too sure if it's asbestos or not, and we're trying to work out whether we keep
00:08:14it or if we get rid of it.
00:08:15Yeah, it definitely would be asbestos, but it's actually in pretty good nick, so I reckon
00:08:19you might be able to get more mileage out of it just yet, but we'd have to get the experts
00:08:24in and see what they say.
00:08:25There's a bit going on.
00:08:26There is.
00:08:27We're going to put our thinking caps on, eh?
00:08:28Leave it with us.
00:08:29That sounds amazing.
00:08:30I think you've got a big job ahead of you.
00:08:32Oh, Charlie, look, it's even got the old brick barbie here.
00:08:39Yeah, it does.
00:08:40Nice.
00:08:41But I tell you what, my brain hurts after all that thinking.
00:08:43Oh, hello.
00:08:44Where did you get yours from?
00:08:45Well, your side of the wardrobe.
00:08:46Where did you get yours from?
00:08:47Your side.
00:08:48Yeah, right.
00:08:49What have we come up with?
00:08:50Okay.
00:08:51So, we've got a good bit of grass here for the kids, and I think we can turn this space
00:08:54into an entertaining area.
00:08:55So, what do you think about building that for us?
00:08:57Yeah, definitely.
00:08:58Yeah, so utilise that area where there's no concrete.
00:09:00We'll add a deck in, but leave a little cut out for a fire pit area.
00:09:03Oh, very nice.
00:09:04Now, because of the kids, I really need to level this out, but I really don't want to
00:09:09take away any of that concrete, because it's just going to cost a fortune, right?
00:09:11So, I think we come up and we level that with paving.
00:09:14Nice.
00:09:15Then, where we've got our lovely shantytown, we can clad there and make that a cooking station.
00:09:18Hide it.
00:09:19I like it.
00:09:20Yeah, and then we can have an area for a table and chairs up there, and enclose it
00:09:23in lots of lovely planting.
00:09:24Oh, I love it.
00:09:25And then, the old laundry, we can turn it into a little bit of a server.
00:09:28Yeah.
00:09:29So, then the whole area just flows.
00:09:30Well, that'd be nice.
00:09:31This is just going to be like a perfect outdoor entertaining spot.
00:09:34Is that why we've got to start working now?
00:09:35I think so.
00:09:36Well, the sleeves are rolled up already, so.
00:09:37Let's do it.
00:09:42Do I add this back onto the shantytown?
00:09:44Yeah, if you could.
00:09:49Now, lucky for us, Brad has cleared out all this soil, which is perfect for a deck, because
00:09:58we need to have clearance of at least 150 underneath our timber.
00:10:02So, now that is done, we're just digging our post holes.
00:10:04We're going down about 600 deep.
00:10:06We'll set them in.
00:10:07We'll be able to put our bearers on our posts and then set our joists to 450 centres.
00:10:12This is pretty easy digging, isn't it, Pete?
00:10:14I'll take this any day.
00:10:19This area up here, the top of the garden, is going to be our main entertaining paved
00:10:30space.
00:10:31And we are going to have a cooking station over there.
00:10:33But because it's so uneven, I want it to be nice and level.
00:10:36For that, I need to bring it up.
00:10:37And when you bring it up, you need to retain the sub base.
00:10:40For that, I'm using some Shapescaper steel edging.
00:10:44Now, I absolutely love this stuff.
00:10:46You normally see me use it in a garden bed where you just put a stake in the ground and
00:10:49you hook it up.
00:10:50But when you've got concrete, you just can't use the stakes.
00:10:52So, I'm just using some angle brackets, which I'll attach to this concrete hob wall to give
00:10:57me a nice secure edge.
00:10:59We're going 150 step up, so it's a nice step up from Adam's deck.
00:11:02But it does come in a huge range of sizes, so it's really versatile and will suit most
00:11:06gardens.
00:11:07With all the holes dug, they're about 600mm deep and now we're ready to put the posts
00:11:34in for that.
00:11:35We're just using some H4 treated pine.
00:11:37You want to make sure the main part is you get some concrete underneath the post and obviously
00:11:42all the way around it.
00:11:43That way, it supports the lake.
00:11:45So, as we wrap around the back of Adam's deck, I'm going to have a planter box.
00:12:04I'm using the same steel, but in a higher profile.
00:12:07That means we're going to get more soil in here and better success with our plants.
00:12:10Now, I'm actually using a prefabricated corner, but you can bend it yourself on site if you
00:12:15want.
00:12:16If you don't have a right angle, they can do custom work for you as well.
00:12:27Come on, let me pull you up.
00:12:28Alright, alright.
00:12:29Oh, here we go.
00:12:30Look at you, you're utilising these massive muscles of mine, huh?
00:12:32I am.
00:12:33I'm freeing my mind to think about paving whilst you do the hard work.
00:12:37Oh, wow.
00:12:38When did you get so spiritual?
00:12:39Well, when the wheelbarrow turned up.
00:12:42Pretty clever.
00:12:43It's clever, isn't it?
00:12:44This sand is going to cover a multitude of sins, Adam.
00:12:48Well, a cracking start and stick around because a little later, the decking and paving will
00:12:53start bringing the backyard puzzle together.
00:12:55What's important to you when you're looking for your dream suburb?
00:13:00We're getting our steps up on a walking tour to find out.
00:13:05Hot potato, hot potato.
00:13:06This week, we are cooking the perfect potato gnocchi.
00:13:10This segment is brought to you by VIEW.
00:13:20See all properties Australia-wide with VIEW.com.au.
00:13:24So Pete Crow's Nest is turning out to be quite an enviable place for people to live.
00:13:41You've got the city, a stone's throw away.
00:13:43You've got heaps of dining options.
00:13:45You can still get a home and a green leafy street.
00:13:48But best of all, it actually still has very much a sort of like welcoming community villagey feel.
00:13:53It's got that vibe, doesn't it?
00:13:54Yeah.
00:13:55I think that it's going through its own little renaissance.
00:13:57And that's partly due to the introduction of the Metrolink.
00:14:00And look, people are really discovering this part of the North Shore.
00:14:02Well, at that transport hub you're talking about, you've got the Metrolink and the train
00:14:05station down the road.
00:14:06You also have a huge amount of sort of high density developments that are springing up absolutely
00:14:11everywhere.
00:14:12It's got that vibe of a mini city, which is like Chatswood next door.
00:14:15Yeah.
00:14:16Well, I'll tell you what.
00:14:17I feel like I need to head off and do a bit of real estate research for myself.
00:14:19And I reckon I can guess the direction you're in.
00:14:21I'm sure you can.
00:14:22If you love history, walking the back streets of Crow's Nest, you can certainly get your
00:14:40historic fix.
00:14:41Now, the suburb first took shape in 1821, thanks to a land grant to a bloke by the name
00:14:48of Edward Wilsencraft, who built his home and called it Crow's Nest, thanks to its commanding
00:14:53view.
00:14:54The suburb has grown up with a full cross range of architectural styles, from Federation, Queen
00:15:01Anne, with the beautiful timber detailing, the fretwork and iron work.
00:15:06It's a full cross range of architectural styles.
00:15:09Combine all that with the luxuries and conveniences of a modern city.
00:15:13I don't think that I like her anymore, cause they're all the same.
00:15:18All they wanna do is break my heart, my heart.
00:15:23I don't think that I like her anymore, cause they're all the same.
00:15:28Well, Ewan, this is just a wee bit gorgeous.
00:15:31Now, obviously we're at the luxurious end of things that we're talking about.
00:15:34We certainly are.
00:15:35You're getting a larger size, definitely a bigger kitchen.
00:15:39You can see with the bench here.
00:15:40Also, you've got the big balcony.
00:15:42And I think that's probably one of the big selling features of it, is that you've got a lot of space.
00:15:47And this is a different style of product than what we maybe have traditionally seen in Croesus in past years.
00:15:54But that's changed over time, as more and more apartments have come along.
00:15:58And as they build newer and newer buildings, you get a much different standard.
00:16:02And the standard's always going up.
00:16:04Can you still get in at an affordable price?
00:16:06Like, give me the range of what you can get in.
00:16:08Well, I mean, we could sell you a little studio, like a studio apartment in the middle of Crow's Nest itself.
00:16:14So, you know, they're very good value, you know, anywhere around that 600 mark.
00:16:18Then you can have one-bedroom 700.
00:16:21What's the top-end price, roughly, that you're talking about, Beau?
00:16:25Well, I mean, you could spend five million.
00:16:27Are you finding that they're selling the more traditional homes because of the convenience of transport and everything else you're talking about?
00:16:33Yeah, interestingly, I think the transport's made a big difference.
00:16:36Even though we've had something at a station here, obviously, for a long time.
00:16:39But the Crow's Nest Metro's changed the dynamic completely.
00:16:42Crow's Nest into the city, it's like minutes.
00:16:44Yeah.
00:16:45And then what about the future?
00:16:46Where's it going in the direction that it's heading in?
00:16:49To be able to have this scale of redevelopment so close to the CBD, it's...
00:16:54Almost unheard of.
00:16:55Yeah, unheard of.
00:16:56And I think it's almost a once-in-a-lifetime opportunity.
00:16:58Well done, you.
00:16:59You were in the right place at the right time.
00:17:01After 30 years, you know, I've said it.
00:17:03I've said it.
00:17:04I can beat this feeling in my heart, something that I can't describe.
00:17:11So if you've been listening to Ewan and he's piqued your interest, do yourself a favour and download the view.com.au app.
00:17:18I mean, apart from the fact that it has so much detail on any suburb that you're looking at.
00:17:22Quite comprehensive, in fact.
00:17:23I reckon with real estate, one of the first things that people ask themselves is,
00:17:26how much could I borrow and what will my repayments be?
00:17:29You can just go straight to this little Home Loans tab and look at that.
00:17:32It says it all.
00:17:33Home Loans Made Simple.
00:17:34It's got a borrowing calculator.
00:17:36You can actually check your borrowing power.
00:17:38You can work out what your repayments will be.
00:17:40There's also these great step-by-step guys.
00:17:42So at no stage throughout the process will you feel overwhelmed.
00:17:45There's just so much information.
00:17:56Mr. Pete?
00:17:57Yeah?
00:17:58But I was talking with Ewan about the future of Crow's Nest.
00:18:00Yeah, well, talking about the future, these guys should mark.
00:18:03Awesome.
00:18:04Hello, Luke.
00:18:05How are you?
00:18:06Hey.
00:18:07Nice to see you guys.
00:18:08Welcome to Elevate, Hume Place in Crow's Nest.
00:18:10This is actually such an awesome set-up.
00:18:12So this is it, hey?
00:18:13You bet.
00:18:14We're standing right here.
00:18:15Right.
00:18:16And this is known as Hume Place.
00:18:17Elevate is the only build-to-sell component of the development.
00:18:21We're very proud.
00:18:22This element is the only project in the state so far to give housing for keen essential
00:18:29workers in perpetuity for the healthcare network locally here in Crow's Nest.
00:18:33Wow, that's great.
00:18:34And then the last element of Hume Place is our build-to-rent components.
00:18:38Fantastic.
00:18:39That's seriously cool.
00:18:40Yeah.
00:18:41Well, I know a lot of people are excited, so let's go have a look.
00:18:43Cool.
00:18:48Here it is.
00:18:49Oh, my goodness.
00:18:50I mean, if you want to immerse yourself in a space, I don't think I've ever actually
00:18:54seen anything on this scale.
00:18:55Well, look, we believe when you buy something off the plan, it needs to be the best experience
00:19:01possible, and this is basically what you're going to get.
00:19:04Now, I've been walking through some of the beautiful, charming heritage streets.
00:19:07How do you balance what you're doing, new development, with the old-world charm?
00:19:11Well, you bet.
00:19:12The reason we love this site so much, it's right in the middle of Crow's Nest Village,
00:19:16and it's that old architecture combining with this new modern high-rise, and I think we've
00:19:22got the balance right.
00:19:23Our podium is wrapped in old bricks that looks beautiful and timeless, and now people get
00:19:28to live above the Metro, the only site in Sydney, and your minutes just to anywhere.
00:19:32To think that we're getting to build a once-in-a-generation project on top of a billion-dollar piece of infrastructure,
00:19:38it's a dream come true for Third Eye, and I think the residents are going to love it.
00:19:50Well, Pete, as we've touched on, I think the real appeal of Crow's Nest is that mix
00:19:53of the old and the new.
00:19:54I mean, it really does encapsulate what a lot of suburbs are experiencing in the 21st century.
00:19:59Yep, and it's good to see the old being retained, Greasy.
00:20:02What are you talking about me?
00:20:03No, in the form of gorgeous little hair at his home, got along the suburban streets off
00:20:08the main track.
00:20:09Although, I don't think we have focused on one of the most important things.
00:20:12I bet, the restaurant.
00:20:13You hungry?
00:20:14Always.
00:20:17Coming up, meet the little balls of potato giving pasta a run for its money.
00:20:23I think that is a gnocchi that even a nona would be proud of.
00:20:29Adam and Charlie will do whatever it takes to bring this entertaining space to life,
00:20:34no matter the consequences.
00:20:36I tell you what, this wind is not doing wonders for your hair, is it?
00:20:38I need some manscaping, that's for sure.
00:20:41And their colour may be curious, but these brownies are off the charts great.
00:20:46That whole batter is going to turn bright green.
00:20:51All right, believe it or not, this accent is not Italian.
00:21:02But I can cook gnocchi, and today I'm going to make you a special gnocchi, which is a green
00:21:07gnocchi with burnt butter sauce and baby beets.
00:21:10All right, so basically gnocchi is potatoes, it's flour and it's eggs, and you can flavour it with herbs.
00:21:20You want your potato as dry as possible.
00:21:23So what you're going to do is, you've got your potatoes.
00:21:26I line the bottom of the tray with some rock salt, just some cheap rock salt.
00:21:31I lay the potatoes on the salt.
00:21:33So it's about 10, 11 potatoes, which is 1.2 kilos in the oven for about 40 minutes to an hour,
00:21:40until they're beautiful and soft.
00:21:41I like to flavour the flour with the herbs, so you get all that green running through the gnocchi
00:21:46and you get all the flavour, and the best way to do it is to blend it.
00:21:51I got about 110 grams of flour, so that goes into my mixer as messy as I can.
00:21:59Bunch of sage, that goes in.
00:22:05Rosemary, just take it off the stalk.
00:22:12Italian parsley, it's the only Italian bit in the dish.
00:22:16And now, just give it a blend.
00:22:22All right, so have a look at that.
00:22:25Oh, you can smell it.
00:22:31All right, so, the potato, soft, salt's done all its job.
00:22:35What we want to do now is, there's no way around this, you've got to do it when it's hot.
00:22:39If the potato gets cold, the starch locks in and you're not going to get a good gnocchi.
00:22:43So you're just going to cut them in half.
00:22:47This also helps dry them out as well.
00:22:59All right, large bowl, potato ricer.
00:23:02If you don't have a potato ricer, you could just mash them up really fine.
00:23:06You're going to scoop out your hot potato into your ricer.
00:23:15Yeah.
00:23:17Irish man's dream.
00:23:22All right, to the potato, you've got to cheese it up.
00:23:25Parmesan, about 200 grams.
00:23:28All right, we've got our flour we did earlier.
00:23:37All right, there's our flour.
00:23:40So I like to gently fold it through before we put the eggs in, just to incorporate all that flour.
00:23:46Now we're going to add three egg yolks, just to lock it together.
00:23:49This is what binds it.
00:23:55One.
00:24:00Two.
00:24:05And then the tool I use to bring it together, very kitchen-y, is a paint scraper.
00:24:11Use a paint scraper.
00:24:14Because it helps get in.
00:24:15You don't really want to work it too much with your hands, you want to work it with the steel.
00:24:19So just chop it in.
00:24:26A little bit of our flour, just on the bench.
00:24:29So it's all by touch.
00:24:31So just take it out.
00:24:32Obviously you don't want it wet and gloopy.
00:24:35And all you want to do, is you want to bring it together.
00:24:38It's not like bread, you don't want to knead it.
00:24:40You just want to bring it together.
00:25:02All right, just give your gnocchi's a little squeeze, just for presentation.
00:25:11Lay them on your tray.
00:25:22All right, now what you do is straight into the boiling water.
00:25:29So easy way to tell if your gnocchi's cooked.
00:25:31What happens is you drop it into the boiling water, it sinks to the bottom.
00:25:35As it cooks and the egg cooks inside, it rises to the top.
00:25:39That's when you know it's ready, scoop it out.
00:25:41There we go.
00:25:44Look at that.
00:25:46A little bit more firm, not too firm.
00:25:55All right.
00:25:56Gnocchi's, put them in the warm oven, it's turned off, just leave them in there to warm.
00:25:59Good gnocchi needs a good sauce.
00:26:02A good sauce can be a very simple sauce.
00:26:05So about 250, 300 grams of butter into a warm pan.
00:26:09It's going to separate and it's going to caramelize.
00:26:11We're going to get a nice brown color.
00:26:16Get our sage in.
00:26:17So you're going to get a nice crack smell.
00:26:19You ready?
00:26:24Cook your sage until it's crisp.
00:26:27Add your capers and your juice.
00:26:29About 100 grams.
00:26:30Give it a stir.
00:26:31Oh yeah.
00:26:32Now I'm going to use the zest for the lemon and the juice.
00:26:33Give that a stir.
00:26:34Beautiful.
00:26:35I'm just going to toss them through the sauce.
00:26:36So that's good.
00:26:37I'm just going to toss them through the sauce.
00:26:38Oh yeah.
00:26:39Now I'm going to use the zest for the lemon and the juice.
00:26:42a little bit of yogurt.
00:26:43A little bit of a stir.
00:26:52Put that a stir.
00:26:57Beautiful.
00:26:58Just going to toss them through the sauce.
00:27:04Right, so you've got your warm gnocchi, you've got your beautiful butter sauce.
00:27:23Pair your gnocchi with a vegetable that's in season, so obviously raw baby beets.
00:27:28So just cut it nice and fine, toss that in the bowl.
00:27:34Little bit of our dressing, stir up.
00:27:40Bit of the green, look at that.
00:27:45And then, always, always more cheese.
00:27:56I think that is a gnocchi that even a nonna will be impressed with.
00:28:04Love is a doing word.
00:28:07Fearless, oh my.
00:28:10Do you remember that great Aussie film classic, Babe?
00:28:22Well, it was set in the green heart of the southern highlands of New South Wales.
00:28:27Right here, in fact, in the rolling hills of Robertson.
00:28:30A rich volcanic soil and an abundance of rain.
00:28:34That has also helped to create some of the finest picture book gardens in the country.
00:28:39The Moorings is a 40 hectare heritage farm.
00:28:52It was established in the 1870s by a naval lieutenant.
00:28:56Now, back then, he bought a hundred acres for a hundred quid.
00:29:02A great deal.
00:29:03Today, the current owners have restored the original homestead and have extended it.
00:29:08But for me, what is really magical, they've also created a two-hectare ornamental landscape,
00:29:15with foliage and year-round interest at its heart.
00:29:18Once you come down the driveway into the turning circle here, where the coach and four would have dropped off its passengers to the homestead,
00:29:35it's a very different wintry look, with these bare traceria branches going up into a grey sky.
00:29:41They create the skeleton, the bones, the structure of this garden, especially they're visible in winter.
00:29:48But, you know, there's a more permanent look in this garden that's here every single day.
00:29:53It's these clipped hedges of azaleas, of camellias.
00:29:57But the flowers are secondary to the forms and the shapes that they come in.
00:30:02And this is only the beginning.
00:30:04The conifer garden has to be the signature piece of this property.
00:30:17In fact, it's probably one of the best in the entire district.
00:30:26Hey, Les.
00:30:27Oh, great.
00:30:28How are you, mate?
00:30:29Yeah, good. Thank you. Yourself?
00:30:30You're good? Good. Excellent. Thank you, pal.
00:30:32Wow. Is this your handiwork?
00:30:34It is, yes.
00:30:35Man, how long have you been doing that for?
00:30:37You're the head gardener, so, okay.
00:30:39Tell me, tell me how long have you been working on this?
00:30:41About ten years.
00:30:42You know, you've got a cypress here.
00:30:44Yes.
00:30:45In fact, you've got copressus, platyclatus, you've got thuyas.
00:30:48In fact, it's a great collection.
00:30:50The owner, Don, really had a fascination with them.
00:30:54Don Dyer absolutely loves conifers.
00:30:56And so, yeah, he just, whatever he could find, he decided to plant.
00:31:01Well, he's gone right to the top.
00:31:03Look at the cryptomeria up there.
00:31:04Hasn't he?
00:31:05Yep.
00:31:06It's got that winter colour, doesn't it?
00:31:08Absolutely beautiful.
00:31:09Now, Don, obviously, has, what, has he got a horticultural degree or something?
00:31:13Uh, no.
00:31:14Really?
00:31:15He's a nuclear physicist.
00:31:17Oh, really?
00:31:18Wow.
00:31:19Yep.
00:31:20He really had a passion for plants, obviously.
00:31:22He did.
00:31:31So, Liz, how long does it take you to keep this conif garn looking so neat and tidy?
00:31:36Probably about a day and a half at, uh, with the whole, all the fine little bits and pieces
00:31:42and having to get in and...
00:31:43How often, though?
00:31:44Uh, probably every three months.
00:31:46Oh, wow.
00:31:47Once it starts to get a little bit of, a little bit of legginess on it.
00:31:49Yeah, a bit of furry.
00:31:50A bit of furry.
00:31:51I just love this golden hanoki cypress.
00:31:55The interesting thing, it's like it's been sprayed with gold paint,
00:31:58because it's all gold on the top, but green underneath.
00:32:00Underneath.
00:32:01Yeah, there, uh, there's always something to look at in the conifer garden.
00:32:04Yeah.
00:32:05All year round.
00:32:06Just gives that little bit extra.
00:32:07It's a real lift, isn't it?
00:32:17It's at the front of the house where the magic really reaches its peak,
00:32:21because you've got this wonderful view and the homestead itself.
00:32:24The tree, the poplar, was most likely planted by the naval lieutenant.
00:32:29It's a really old, old tree, well over a hundred years of age,
00:32:33like these beautiful brush box.
00:32:35This might escalation too.
00:32:42In later years, the garden provided a great opportunity
00:32:45for Don and his wife Barbara to entertain the grandchildren,
00:32:49and they just loved the garden.
00:32:51It's really Don's plant selection that has helped Les
00:32:55create these beautiful clipped hedges and domes and shapes,
00:32:59like this Eliagnus here.
00:33:01There is a bit of variegation in it, but it's nice and tight and compact.
00:33:04The secret when you're wanting to select these plants
00:33:07is small, twiggy leaves and twiggy growth.
00:33:10Bigger leaves, you've got too many gaps in the dome.
00:33:13And look at this Laura Petalum.
00:33:15Just look across the top there,
00:33:16you can see those pink new growths up against the blue sky.
00:33:19It really is quite stunning.
00:33:21But the scene is set by this beautiful conifer archway.
00:33:25As you go through, don't forget to look up to see the bones,
00:33:29the structure that creates this wonderful archway.
00:33:32The fascinating thing is that every room, including the conservatory,
00:33:52looks out over this spectacular view.
00:33:55Do you know, it doesn't matter what century you're building in,
00:33:59that real estate saying of position, position, position,
00:34:03still holds firm.
00:34:05It's all about this glorious view.
00:34:07And don't worry, there's so much more coming up from the moorings
00:34:10a little bit later in the show.
00:34:12Now that's an eyesore if ever I saw one.
00:34:22You want to see an easy way to cover it up?
00:34:24Some clutty.
00:34:26I promise you, this is not an experiment that went wrong.

00:35:17You let the good down!
00:35:18All right, Charles.
00:35:19Come on, son.
00:35:20Let's try to get some decking and paving down.
00:35:21Drop, drop!
00:35:22No rest for the wicked!
00:35:23Coming!
00:35:24Get out!
00:35:25Get out!
00:35:26Get out!
00:35:27Get out!
00:35:28From a backyard that was a concrete jungle
00:35:30to a beautiful entertainment zone.
00:35:32Well, that's the plan that Charlie and I have anyway.
00:35:34Get out!
00:35:35Get out!
00:35:36Get out!
00:35:37Get out!

00:35:39Get out!
00:35:40Get out!
00:35:41Get out!
00:35:42Get out!
00:35:43Maybe not anyone I have chosen, Mërboo or Më pedal.
00:35:45Now, these are sustainably sourced.
00:35:46They come in beautiful long lengths.
00:35:48They'll span our whole deck and they're 140 wide.
00:35:52So they are gonna tie in with our fence and this whole entertainment area perfectly.
00:35:55it is well worthwhile putting some time and thought into your paving layout because you
00:36:22do need to consider drainage now think of this as a big umbrella that's going to catch water you need
00:36:27to direct that somewhere else you don't want to send it to the neighbors and i want a nice flat
00:36:31line here so when it meets adam's deck it looks like it's well thought out so we're draining upwards
00:36:36this way that also sets my layout for my pavers i'm using 600 by 400 because i want that contemporary
00:36:42look but i'm doing a stack bond back just to accentuate the lines of the decking now this is
00:36:46a color called cypress and i know what you're saying why are you using a light color like cypress when
00:36:51it comes to an entertaining space well these have been pre-sealed so you can spill as much wine on
00:36:55them as you like
00:36:57charlie and the guys have done a fantastic job on this paving it's looking awesome but now it is
00:37:26time to address this eyesore for that we've built a simple frame just using some 90 by 45 treated pine
00:37:33and what we're going to do is slide it into place and use this existing fence on each side to fix it
00:37:39off and then i'm going to get some shiplap cladding out of the cement sheet and we'll clad it it's going
00:37:44it's going to look fantastic
00:37:51before we can move on with the rest of the garden we have to address the asbestos on the shed
00:38:11so we've brought in the professionals to sort that out
00:38:18our backyard is coming together but what about our old laundry shed well the asbestos guys have
00:38:35been and gone and we've got our safety certificate the team is hard at work and they've started with
00:38:41fixing up this framework for our new servery now because so many aussie backyards have old sheds
00:38:47just like this one there's a heap of information we want to share with you about the safe testing and
00:38:52removal of asbestos so keep an eye out for this shed story on next week's show
00:38:57charlie yes my goodness gracious me it's rusty box central around here it's good isn't it so
00:39:07same stuff as we use the edging but it's got that lovely patina to it now takes a couple of days and
00:39:12there get that nice look to it because i was going to say something when i saw you putting in the edge
00:39:16you know my god it's a bit silver but it's not really blending in with the deck no this goes perfectly
00:39:19and these boxes are actually really fantastic you can get them as boxes or in parts different sizes
00:39:24put them together on site or they come like this yeah yeah and they do custom work as well yeah
00:39:29it's fantastic i'll tell you what this wind is not doing wonders for your hair is it i need some
00:39:32manscaping that's for sure do you want a hand put in those here uh yeah i'll just drill this side off
00:39:36and then we'll lift them in all right that's me saying up yeah it was a touch over the top wasn't it
00:39:49lovely nice
00:39:53thank you all right
00:39:57now charlie i do need to ask i mean obviously these pavers are a light color is you know these
00:40:06boxes going to leach all over the beautiful white pavers well these have been sealed four times and
00:40:10like a red wine the stain will come off so i'm not worried about it once the patina is fully matured
00:40:16it won't leach anymore yeah nice all right so we're saying we're safe

00:42:44great night's sleep and explore how the moon affects your sleep patterns discover a range of
00:42:48red and pink blooms that keep the winter blues away plus winter can be tough on your lawns find out
00:42:54the best secrets to making sure your lawn survives and goes from bare to beautiful you'll also find
00:42:59bonus knitting and crochet patterns and a winter puzzle special that is all in the august issue of the
00:43:04better homes and gardens magazine which is out now i think matcha is the new black from mochis to
00:43:18smoothies and lattes and ice cream it is everywhere and if you are a lover of matcha then this is the
00:43:27recipe for you my white chocolate matcha and macadamia brownie so we're gonna start off with
00:43:33melting the white chocolate here i've got 175 grams of white chocolate i'm gonna chop them into smaller
00:43:41bits i'm going to melt the white chocolate on a double boiler all you need is a saucepan and a bowl
00:43:55with water underneath it boiling now to that i'm gonna add 195 grams of unsalted butter
00:44:11this will take no time to melt just keep an eye on that
00:44:17that is done it's nice and smooth i'm going to take it off the saucepan because what i want to do
00:44:31is i want to cool it down before i mix it in with the other ingredients
00:44:36in a separate bowl i'm going to mix 220 grams of white granulated sugar
00:44:48three eggs
00:44:50so it looks like the sugar has melted i'm going to add about one tablespoon of vanilla essence
00:45:10i'm going to add this i'm going to see what the temperature is like with the white chocolate
00:45:20because you don't want to add it while it's still too hot because i don't really want to cook the eggs
00:45:30add this to my egg and sugar mixture
00:45:33next the dry ingredients sifting 145 grams of all-purpose flour
00:45:50i've got two tablespoons of ceremonial grade matcha i suggest to get the ceremonial grade matcha for this
00:45:58recipe
00:46:02sip that in with the flour
00:46:06got sea salt here
00:46:09got one teaspoon if it's a coarse sea salt try and break the little granules a little bit before you put it in
00:46:23give it a quick stir
00:46:28and now i'm going to add it to the wet ingredients
00:46:33add a couple of tablespoons at a time and just fold it through
00:46:49it's a white chocolate brownie so i've got more white chocolate here i've got 150 grams of
00:46:57white chalk chips you can add as little or as much as you want but try to stay away from too much
00:47:06because it you don't want it to be too sweet either so just slowly fold that in
00:47:13and then i've got the macadamia nuts i'm going to give it a quick rough chop of the macadamia nuts
00:47:27i've lined 20 by 20 centimeter pan with some baking paper it is going to taste delicious
00:47:45into the oven at 160 degrees for about 25 minutes
00:47:55this looks just about done
00:48:06and you can still see a little bit of the batter on it and that's perfect
00:48:17it's going to be easy now to just lift that up
00:48:36and take all of that out and for the topping you can leave it as it is doesn't make a difference but
00:48:49if you want to make it look a little bit prettier just a slight dust of matcha powder
00:49:06i'm going to take the biggest one here out of this slice
00:49:22the white chocolate the gooey green matcha brownie
00:49:29and the beautiful macadamia nuts
00:49:35speechless
00:49:52well things might be getting a bit chilly and slowing down in the garden but you're just a few clicks
00:49:57away from turning up the heat because we'd like you to vote for a logie for better homes and gardens

00:50:21homes and gardens in the lifestyle category go to it and thanks
00:50:25coming up there's so much to see here graham doesn't know where to look first the fascinating
00:50:33thing about this garden the more you explore the more you discover
00:50:38and adam and charlie set the stage for this garden's debut
00:50:42i have to say we've done a pretty good job on this one i'm feeling pretty comfortable here it's good
00:50:46it's good it's good well the transformation of our concrete jungle is coming along very nicely yes
00:50:59and how good does this deck look looks fantastic almost as good as my paving and planters but now
00:51:03it is time to get some plants into the round so let's start with these hedges they're beautiful they're
00:51:06huge mate
00:51:19the trees i'm using for my hedge are called iliocarpus reticulatus otherwise known as the
00:51:23blueberry ash now this is a native that i absolutely love it gets covered in sort of a nodding flower
00:51:28which has a fringe on the end which turns into a blueberry which is a perfect food for native birds
00:51:33now this does turn into a tree but it is quite columnar which means it grows upright and you can
00:51:38prune it what i'm imagining here is well i'm gonna grow it upright against this fence because it looks
00:51:46fantastic but as it gets bigger keep it quite narrow and pruned you can remove the lower branches which
00:51:52will give you more space below to introduce some more planting
00:52:03look at you placing plants i've got no idea what i'm doing charles that's all right just make it up
00:52:08maybe i made a career out of it because we're planting this garden up in the middle of winter
00:52:17i'm using a lot of textural plants just to add some interest now we've got some really broad leaves
00:52:21like the ligularia some flying clipped leaves like this with stringer but i'm also using some strappy
00:52:27leaves we've got fine strappy leaves in the common rush the juncus we've got slightly thicker in the
00:52:32lyriope and then sword shape in this sansevieria moonlight it's going to give us a really nice planting
00:52:37scheme which looks good all year round
00:52:51and how much better is our shed looking with the new cladding that's freshly painted it really just
00:53:09lifts this whole area make sure you tune in next week to see how we brought it back to life now we're
00:53:15going to be putting this on the wall here it's going to be storage for the wood for our fire pit
00:53:19but it is pretty heavy and you know who's got the biggest muscles of them all it's only one person
00:53:24charlie oh mate yeah we were going to use your muscles mate but um too much power it is a bit
00:53:30dangerous yeah so pete and i will lift and you can fix okay yes there it is
00:53:44there you go all right beautiful mate lovely man hey that wasn't hard was it perfect little wood stack
00:53:50nice bit of garden art at the same time it is absolutely gorgeous yeah i love it ah worked well
00:53:55all right keep planting all right you're gonna put your little bee wings on and sit in there as well
00:54:00everything in slow motion oh what's going on here charles well i know how you've got yourself a logi
00:54:17and all adam oh yeah i just thought i'd create you a nice little green room up here oh yes that's what
00:54:23i'm talking about a nice hedge i love it and actually these plants look very familiar mate oh yeah
00:54:30amaze me yeah well i reckon i've seen him in nonno's backyard i used to go there and pick
00:54:35the olives off and uh have a bit of a am i correct you're correct now this is a variety called bambolina
00:54:41it's a dwarf variety and it's a really dense variety so it's perfect for hedging you can see all this
00:54:45foliage down here so you're just gonna have a whole wall where i can just pick olives from everywhere
00:54:49uh you grow this one for the foliage not for the fruit yes you're a little bit crazy aren't you
00:54:55yes no but it all makes sense i love it charlie they do look beautiful that's going to blend in
00:54:59with this area because we do have a pizza oven going in very nice but you just got to remember
00:55:03to bring your own olives and marinate them first yeah
00:55:15look like you're having fun what's pizza oven in italian oh mate i don't know but i'll tell you
00:55:26what i'll rule one of these yes if you want to eat one of the best pizzas you've ever had yeah get me
00:55:30to make it for me to make it for you okay just a heads up nice this is a serious setup here charles
00:55:45nice
00:55:58look at that i have to say we've done a pretty good job on this one i'll tell you what i'm feeling

00:56:08hey how are we guys hi good thank you hey guys good thanks oh we're just enjoying the area yeah
00:56:14yes goodness what a transformation
00:56:24this looks absolutely amazing i'll definitely forget how how it looked before it looks
00:56:30just so different a little bit different isn't it really different and you've got the fire pit there
00:56:34too which looks great absolutely surrounded by gravel so it's nice and safe for the deck adds a
00:56:38little bit of a feature to the deck as well that's right and that deck gives you a nice level platform
00:56:43where you can obviously set up these lounges so you can kick back and relax and create some fun family
00:56:47talk yeah and roast marshmallows with the kids they will love it yeah but come and have a look at your
00:56:51new dining area so up here we've played with the levels using all the concrete that was here
00:56:59to create our base and we've got a lovely paved area with a pretty big dining table i have to say
00:57:04what it's amazing yes it'll fill all of us here yeah and you've got the barbecue and even a pizza
00:57:09oven as well oh the kids will be excited for the pizza oven that's awesome that's brilliant have a
00:57:13seat try your new table and chairs okay this is where you have your fiestas your little mediterranean
00:57:18hangout oh it's amazing yes i'm loving the colors as well we've got the like a sage green but do you

00:57:32difference it looks so different i barely recognize it but you know what makes your shed look so good
00:57:36what's that all these plants of course oh of course really charlie the plants are amazing yeah it's all
00:57:42lovely low maintenance textured stuff so it's going to look good all year round for you guys yeah i'm
00:57:46really liking the colors as well but come and have a look at the shed go on now remember it was covered
00:57:52in asbestos so we were correct in thinking that it was we've had it safely removed and now we've got
00:57:57this beautiful new cladding on and how fresh does it just make this whole area yeah brilliant the
00:58:01other bar area looks brilliant jackie you can go and have a look i'd love to a new servery window

00:59:45in the colder months of the year there are some landscapes that really stand out and and create a
00:59:51beautiful serenity here at the moorings garden in the southern highlands of new south wales is one
00:59:57such garden it is just so beautiful at this time of the year the weeping willow reflected in the pond
01:00:04and of course the silver birch even the trunks covered with a little bit of lichen the japanese maples
01:00:11bear and stark and then of course with seasons sort of rotating getting mixed up
01:00:18we're so lucky to see these beautiful red hot pokers the knife over here this variety is tall and elegant
01:00:25with these great spires these flames of orange and red it's a real stand out here looking across the
01:00:31landscape and the pond looks even more mysterious
01:00:47the brilliance of the owner to create these intimate enclosed spaces garden rooms if you like
01:00:53we've seen so much of but here he's thrown the garden design book out and created something
01:01:00completely different this is the sculpture garden
01:01:11but he's allowed the trees to tell their story whether it's conical weeping vase shape whatever
01:01:17the trees are they're looking natural but instead of enclosing he's pulled the curtains back
01:01:23you know maybe japanese borrowed landscape style and what a landscape it is this is the yarua brush
01:01:30the last remnant cool climate rainforest in the area highly protected and what a vista
01:01:46the fascinating thing about this garden the more you explore the more you discover
01:01:50and this area here could be no more of a contrast than the one that we've just been in
01:02:01here it reminds me that so many people ask me oh what happens when i grow these beautiful trees
01:02:07and it creates a totally different environment shade moist soil and all your roses and azaleas and
01:02:14things tend to disappear well why not go for australian beautiful ferns we've got a fantastic collection
01:02:20of ferns that grow in these sorts of locations the tree ferns these beautiful bird's nest ferns i just
01:02:27love this so dramatic and sculptural architectural in the garden rasp fern talk about architecture as
01:02:33a ground cover and then of course yep good old bracken fern we're always poisoning it to get rid
01:02:38of it no let it go wild and here you've got a a beautiful scene an evergreen every day of the year
01:02:46looking beautiful
01:02:58you know it never seems to amaze me how these grand extensive gardens in the country
01:03:03are filled with great ideas that we can borrow maybe it's a case of just setting up a theme
01:03:09or possibly selecting some plants that will really you can clip and train or looking at some of the
01:03:16conifers that were always good and still are and lots of permanent annual color in our gardens and we
01:03:23have the owners to thank for creating something so special and sharing with us but you know that's what
01:03:28the gardeners too the problem with curtains like this is that when you use them for privacy during
01:03:40the day you're also blocking out all of that natural sunlight but i have a great trick for your
01:03:45curtains that's not only practical it also looks amazing
01:04:06i'm using a double rod and that will allow me to put a block out blind closest to the window
01:04:11and then a lovely soft sheer on the inside and i've also put in this timber helmet from the ceiling
01:04:18and that's going to give it a much more elevated high-end look because it will hide all of that
01:04:22hardware
01:04:35custom-made curtains can be really expensive but this is a brilliant way to get the same look using
01:04:41ready-made curtains traditionally with a double rod the curtains would be hung in the opposite way so
01:04:46the she would be closest to the window but this way is much more contemporary and makes a whole lot
01:04:51more sense to me because having the block out closest to the light source means that you're blocking out
01:04:56more light and then this lovely soft layer on the inside of the room adds another detail to the design
01:05:05now that we've added in some more texture and detail to this bedroom you can see how these
01:05:09gorgeous soft curtains really elevate the space
01:05:15one of the key features of hanging your curtains like this is that you can control the level of
01:05:19privacy and also the amount of light coming into the room and another trick is to hang your curtains
01:05:26wall to wall and from the ceiling that way you get that really luxurious look the pelmet helps with
01:05:32that as well i think you'll agree for off-the-shelf curtains these ones look pretty high-end
01:05:39so you've heard pete and i talk about all the various dining options in crow's nest so we thought
01:05:58you better try it out for ourselves one with a lot oh my gosh that's not what i was expecting but i am
01:06:03excited i like pete one thing i've learned in all my years in television is it's best not to stuff
01:06:09your face before you say goodbye see you next week with more better homes and gardens come on
01:06:15next time we're heading to the coolest melbourne suburb you've probably never heard of we've got
01:06:28collingwood that way fitzroy over there and carbon right next door yeah clifton hill it's surrounded
01:06:33by melbourne icons you're gonna love it i can hear you screaming through your tv adam what about the
01:06:39chances there's asbestos in that claddy it's a word that consent chills up your spine but if you're
01:06:44careful there's nothing to be afraid of we've got one of ireland's corniest ever exports what i grew
01:06:53up on the humble corn beef plus if fast fashion is beginning to feel a bit unseemly we'll meet the
01:07:01woman bringing your clothes back to life and dr harry's meeting a couple of south american cuties i'm at a
01:07:08place where you can love a llama or you can adore an alpaca that's next time on better homes and gardens
