00:00:00Well, lifestyle and location, two words that sum up what makes a suburb great, especially
00:00:11in a big city.
00:00:12And Sydney's Lowell North Shore is what we're talking about here, I mean Jo, take a look
00:00:16at this view!
00:00:17Honestly, I wish that we could stand here and soak that up all day, but Pete, you and
00:00:21I are going to be getting our steps up as we actually suss out a suburb that's going
00:00:24through some major changes right now.
00:00:26While also hopefully retaining the history and heritage that make it unique.
00:00:30Yeah, we are checking out the past and the future and plenty more coming up on Better
00:00:34Homes and Gardens as well.
00:00:36Tonight, Dr Harry's carving up the skate park with a gnarly dude.
00:00:43So what has four legs and four wheels?
00:00:45Jato, the skating king.
00:00:49When your garden's got more concrete than the Acropolis, it's time to call in the A-Team.
00:00:54It's just going to be like a perfect outdoor entertaining spot.
00:00:57Is that where we've got to start working now?
00:00:59Colin's pillowy potato dumpling recipe is more than just a puff piece.
00:01:04Today, I'm going to make you a special gnocchi, which is a green gnocchi with burnt butter
00:01:08and lemon.
00:01:09Visit a fairy-tale garden that's brimming with magic.
00:01:14And this is only the beginning.
00:01:17Plus, we all love a good cuppa with dessert, but what if it is dessert?
00:01:23Matcha, white chocolate and macadamia nuts can't get any better than this.
00:01:28Most dogs love to go for a run on grass, but not my next dog.
00:01:44He's looking for concrete.
00:01:47Good morning, good morning.
00:01:56How are you both?
00:01:57Morning, brother.
00:01:58Harry?
00:01:59Good to see you, Greg.
00:02:00Daddy, nice to see you too.
00:02:01How are you?
00:02:02Well, I'm here to have a look at this wonderful dog of yours.
00:02:04Right?
00:02:05Right.
00:02:06He's able to go uphill using his hind feet to push himself.
00:02:23That's a learned skill.
00:02:25It's all him.
00:02:26He lifts one leg up to counter the balance.
00:02:29You'll see him with three paws on the board and one up as he's turning.
00:02:32I mean, he looks like a pro.
00:02:34No, it's all self-taught.
00:02:36He's done it all himself.
00:02:38We don't know why he likes this.
00:02:40We have no idea why he's into skateboards.
00:02:44He let us know the very first time he saw a skateboard that it was something he was interested in.
00:02:48So what happened?
00:02:49What was that occasion?
00:02:50Well, so he was about three months old and we only sort of just had him about two or three weeks.
00:02:55Yeah.
00:02:56And we went for a walk.
00:02:57A couple of guys came past on skateboards and he just went crazy.
00:03:01My child's never into the famous.
00:03:04They're always complaining.
00:03:06Always complaining.
00:03:09If money is such a problem.
00:03:13Well, they got matches.
00:03:15Think we should rob them.
00:03:18What?
00:03:19Took off after them.
00:03:20Straight at them, you know.
00:03:21And we were surprised because he was so small but you could feel the strength in him.
00:03:25We thought he didn't like the noise.
00:03:27That's what our initial reaction was all.
00:03:29He doesn't like the noise and he's aggressive.
00:03:33Quite the opposite.
00:03:34He loves the noise and he's the most unaggressive dog you'll ever come across.
00:03:37Just about every dog in the world wants to go out and chase something.
00:03:42Yeah.
00:03:43Right?
00:03:44Yep.
00:03:45And some are very strong on it and some are very weak on it.
00:03:47Yeah, the odd dog is totally disinterested.
00:03:49But most dogs have this and that's why they want to chase something that moves.
00:03:53He likes company, doesn't he?
00:04:05He loves it.
00:04:06Yeah.
00:04:07Loves kids.
00:04:08He loves children and women.
00:04:10He actually likes to show off.
00:04:14What does he weigh?
00:04:1630, almost 32 kilos.
00:04:18It's a pretty nuggety sort of doc, isn't it?
00:04:20Yeah, yeah, he's a chunk.
00:04:21And the difference between him and say a person on a skateboard is that he's got a much lower
00:04:26centre of gravity.
00:04:27He has.
00:04:28Than a person riding it.
00:04:29So he should have a better sense of balance.
00:04:32And four legs.
00:04:33Exactly.
00:04:35So you built in the skateboard, didn't you?
00:04:37Yes.
00:04:38You made it a bit wider?
00:04:39Yeah, well I made it to his body.
00:04:40Okay.
00:04:41So his shoulder width is the width of the skateboard.
00:04:43Yep.
00:04:44And the length is one third longer than his body length so he's got a bit of room to manoeuvre.
00:04:47You're a technical individual, aren't you?
00:04:49Engineer.
00:04:51Yeah.
00:04:52Well done, mate.
00:04:53Well done.
00:04:54Oh!
00:04:55Oh!
00:04:56What do people think about him, you know?
00:05:06Does he attract attention when he's not skating, when he's just walking around?
00:05:11But a lot of people stop us and they're just like Bulldogs.
00:05:14People like Bulldogs.
00:05:15What do they ask you about him?
00:05:16Do they ask you how you train him to do all of these things?
00:05:18What do they ask you?
00:05:19Everybody.
00:05:20It's the standard question, how did you get him to do that?
00:05:25Tell me about your social media engagements with him.
00:05:31Probably 16, 20 million views of his videos.
00:05:3220 million?
00:05:33Yeah.
00:05:34Yeah.
00:05:35I think that's fantastic, you know?
00:05:36And people will talk about Giotto and his skills.
00:05:49And the great thing about it is, mate, that, you know, he taught himself.
00:05:53He's a very inventive dog.
00:05:54Giotto!
00:05:55Giotto!
00:05:56Giotto!
00:05:57Giotto!
00:05:58Giotto!
00:05:59Giotto!
00:06:00A dog like this fills your life a little bit, you know?
00:06:02That would be the understatement of the century.
00:06:05That really would.
00:06:07Because this dog is everything to everybody, you know?
00:06:11He is an amazing dog.
00:06:12He's a one in a million dog.
00:06:14He really is.
00:06:19Have you got a mixture of levels and finishes?
00:06:21Well, I've got an easy solution.
00:06:22Just pave over the top.
00:06:24This is the setting of a storybook garden that shines all year round.
00:06:32This segment is brought to you by Shapescaper,
00:06:39the Australian-made modular steel landscaping system.
00:06:45Oh, Charlie, it's a bit nippy this morning.
00:06:48Man up, mate.
00:06:49Come on, you've been, like, snowmanning and skating through Canada.
00:06:51It's not that bad.
00:06:52Mate, that was hard work trying to stay upright.
00:06:54But most importantly, we've got a winter backyard makeover.
00:06:58Absolutely, we do.
00:06:59Now, this one's a little bit old school and a little bit quirky,
00:07:01but we can do quirky, right?
00:07:02Oh, I love quirky.
00:07:08A nice bit of grass here.
00:07:10Bit of buffalo, is it?
00:07:11Yeah.
00:07:13Jackie, Brad.
00:07:14Nice to see you guys getting stuck into the work already.
00:07:16Yeah.
00:07:17How are we, guys?
00:07:18Hi, good.
00:07:19What is this, like a giant sand pit?
00:07:20Yes, we've got a lot of work ahead of us.
00:07:22Was this little slice of heaven always part of the dream?
00:07:24We kind of overlooked this corner when we were house hunting,
00:07:28and now we've got to the point where we have to figure out
00:07:31what to do with it and we have no idea.
00:07:33Have you guys got kids?
00:07:34We do.
00:07:35We've got two kids and then another one on the way.
00:07:37Congratulations.
00:07:39Very exciting times.
00:07:40Very busy times.
00:07:41Yes, indeed.
00:07:42Now, I've got to say, I have seen this style of backyard before,
00:07:46having some Italian heritage in me.
00:07:48It is very European, so it's basically,
00:07:50let's concrete the whole block and have a strip of grass.
00:07:52So they've done a fantastic job of that.
00:07:54Well, you'd want your greenhouses up here.
00:07:56Yes.
00:07:57You know, your storage for your pots here.
00:07:58That's right.
00:07:59But you get all these trip hazards and it's not exactly the safest
00:08:01for a young family, is it?
00:08:02Yeah, a little bit dangerous.
00:08:03So tell us a bit about the shed.
00:08:05Yeah, so it's an old outdoor laundry, as you can see.
00:08:08It's a little bit tired.
00:08:10We're not too sure if it's asbestos or not
00:08:12and we're trying to work out whether we keep it
00:08:14or if we get rid of it.
00:08:15Yeah, it definitely would be asbestos,
00:08:17but it's actually in pretty good nick,
00:08:19so I reckon you might be able to get more mileage out of it just yet,
00:08:22but we'd have to get the experts in and see what they say.
00:08:24There's a bit going on.
00:08:25There is.
00:08:26We'll put our thinking caps on, eh?
00:08:27Leave it with us.
00:08:28That sounds amazing.
00:08:29I think you've got a big job ahead of you.
00:08:31Oh, Charlie, look, it's even got the old brick barbie here.
00:08:38Yeah, it does.
00:08:39Nice.
00:08:40But I tell you what, my brain hurts after all that thinking.
00:08:42Oh, hello.
00:08:43Where did you get yours from?
00:08:44Well, your side of the wardrobe.
00:08:45Where did you get yours from?
00:08:46Your side.
00:08:47Yeah, right.
00:08:48What have we come up with?
00:08:49OK, so we've got a good bit of grass here for the kids
00:08:51and I think we can turn this space into an insane area.
00:08:54So what do you think about building that for us?
00:08:57Yeah, definitely, yeah.
00:08:58So utilise that area where there's no concrete.
00:09:00We'll add a deck in.
00:09:01But leave a little cut out for a fire pit area.
00:09:03Oh, very nice.
00:09:04Now, because of the kids, I really need to level this out.
00:09:07But I really don't want to take away any of that concrete,
00:09:09because that's just going to cost a fortune, right?
00:09:11So I think we come up and we level that with paving.
00:09:14Nice.
00:09:15Then where we've got our lovely shantytown,
00:09:16we can clad there and make that a cooking station.
00:09:18Hide it.
00:09:19I like it.
00:09:20And then we can have an area for a table and chairs up there
00:09:22and enclose it in lots of lovely planting.
00:09:24I love it.
00:09:25And then the old laundry, we can turn it into a little bit of a server.
00:09:28Yeah.
00:09:29So then the whole area just flows.
00:09:30Well, that'd be nice.
00:09:31This is going to be like a perfect outdoor entertaining spot.
00:09:33Is that where we've got to start working now?
00:09:35I think so.
00:09:36Well, the sleeves are rolled up already.
00:09:37Let's do it.
00:09:38Do I add this back onto the shantytown?
00:09:44Yeah, if you could.
00:09:54Now, lucky for us, Brad has cleared out all this soil,
00:09:57which is perfect for a deck,
00:09:58because we need to have clearance of at least 150 underneath our timber.
00:10:02So now that is done, we're just digging our post holes.
00:10:04We're going down about 600 deep.
00:10:06We'll set them in.
00:10:07We'll be able to put our bearers on our posts
00:10:09and then set our joist at 450 centres.
00:10:12This is pretty easy digging, isn't it, Pete?
00:10:14I'll take this any day.
00:10:16This area up here, the top of the garden,
00:10:28is going to be our main entertaining paved space.
00:10:30And we are going to have a cooking station over there.
00:10:33But because it's so uneven, I want it to be nice and level.
00:10:35For that, I need to bring it up.
00:10:37And when you bring it up, you need to retain the sub base.
00:10:41For that, I'm using some Shapescaper steel edging.
00:10:44Now, I absolutely love this stuff.
00:10:45You normally see me use it in a garden bed,
00:10:47where you just put a stake in the ground and you hook it up.
00:10:49But when you've got concrete, you just can't use the stakes.
00:10:51So I'm just using some angle brackets,
00:10:53which I'll attach to this concrete hob wall
00:10:56to give me a nice secure edge.
00:10:58We're going 150 step up,
00:11:00so it's a nice step up from Adam's deck.
00:11:02But it does come in a huge range of sizes,
00:11:04so it's really versatile and will suit most gardens.
00:11:15With all the holes dug, they're about 600 mil deep,
00:11:32and now we're ready to put the posts in for that.
00:11:34We're just using some H4 treated pine.
00:11:36You want to make sure the main part
00:11:38is you get some concrete underneath the post,
00:11:40and obviously all the way around it.
00:11:42That way it supports the light.
00:11:44As we wrap around the back of Adam's deck,
00:12:02I'm going to have a planter box.
00:12:04I'm using the same steel but in a higher profile.
00:12:06That means we're going to get more soil in here
00:12:08and better success with our plants.
00:12:10Now, I'm actually using a prefabricated corner,
00:12:13but you can bend it yourself on site if you want.
00:12:15If you don't have a right angle,
00:12:16they can do custom work for you as well.
00:12:27Come on, let me pull you up.
00:12:28Right, right.
00:12:29Look at you, you're utilising these massive muscles of mine.
00:12:32I am.
00:12:33I'm freeing my mind to think about
00:12:35paving whilst you do the hard work.
00:12:37Oh, wow.
00:12:38When did you get so spiritual?
00:12:39Well, when the wheelbarrow turned up.
00:12:41Pretty clever.
00:12:42It's clever, isn't it?
00:12:43This sand is going to cover a multitude of sins, Adam.
00:12:48Well, a cracking start, and stick around
00:12:50because a little later the decking and paving
00:12:52will start bringing the backyard puzzle together.
00:12:57What's important to you
00:12:58when you're looking for your dream suburb?
00:13:00We're getting our steps up on a walking tour to find out.
00:13:05Hot potato, hot potato.
00:13:06This week we are cooking the perfect potato gnocchi.
00:13:10This segment is brought to you by VIEW.
00:13:20See all properties Australia-wide with VIEW.com.au
00:13:25So Pete Crow's Nest is turning out to be quite an enviable place for people to live.
00:13:41You've got the city, a stone's throw away.
00:13:43You've got heaps of dining options.
00:13:45You can still get a home in a green leafy street.
00:13:48But best of all, it actually still has very much a sort of like welcoming community village-y feel.
00:13:53It's got that vibe, doesn't it?
00:13:54Yeah.
00:13:55I think it's going through its own little renaissance,
00:13:57and that's partly due to the introduction of the Metrolink,
00:13:59and look, people are really discovering this part of the North Shore.
00:14:02Well, at that transport hub you're talking about, you've got the Metrolink
00:14:04and the train station down the road.
00:14:06You also have a huge amount of sort of high-density developments
00:14:09that are springing up absolutely everywhere.
00:14:11It's got that vibe of a mini-city, which is like Chatswood next door.
00:14:15Yeah, well, I'll tell you what.
00:14:16I feel like I need to head off and do a bit of real estate research for myself,
00:14:19and I reckon I can guess the direction you want.
00:14:21I'm sure you can.
00:14:35If you love history, walking the back streets of Crow's Nest,
00:14:38you can certainly get your historic fix.
00:14:41Now, the suburb first took shape in 1821,
00:14:44thanks to a land grant to a bloke by the name of Edward Wilsencraft,
00:14:49who built his home and called it Crow's Nest,
00:14:51thanks to its commanding view.
00:14:53Since then, the suburb has grown up
00:14:55with a full cross-range of architectural styles,
00:14:58from Federation, Queen Anne, with the beautiful timber detailing,
00:15:03the fretwork and ironwork.
00:15:05It's a full cross-range of architectural styles.
00:15:08Combine all that with the luxuries and conveniences of a modern city.
00:15:12I don't think that I like her anymore
00:15:16Cause they're all the same
00:15:18All they wanna do is break my heart, my heart
00:15:21I don't think that I like her anymore
00:15:26Wow, Ewan, this is just a wee bit gorgeous.
00:15:30Now, obviously we're at the luxurious end of things that we're talking about.
00:15:34We certainly are.
00:15:35You're getting a larger size, definitely a bigger kitchen.
00:15:38You can see with the bench here.
00:15:40Also, you've got the big balcony.
00:15:41And I think that's probably one of the big selling features of it,
00:15:45is that you've got a lot of space.
00:15:47And this is a different style of product
00:15:49than what we maybe have traditionally seen in Crow's Nest in past years.
00:15:53But that's changed over time
00:15:55as more and more apartments have come along.
00:15:57And as they build newer and newer buildings,
00:16:00you get a much different standard
00:16:02and the standard's always going up.
00:16:04Can you still get in at an affordable price?
00:16:06100%.
00:16:07What's the range of what you can get?
00:16:08Well, I mean, we could sell you a little studio,
00:16:10like a studio apartment in the middle of Crow's Nest itself.
00:16:14So, you know, they're very good value, you know,
00:16:17anywhere around that 600 mark.
00:16:18Then you can have one bedroom, 700.
00:16:21What's the top end price, roughly, that you're talking about, though?
00:16:25Well, I mean, you could spend five million.
00:16:27Are you finding that they're selling the more traditional homes
00:16:30because of the convenience of transport
00:16:32and everything else you're talking about?
00:16:33Yeah, interestingly, I think the transport's made a big difference.
00:16:36Even though we've had something like this station here,
00:16:38obviously, for a long time,
00:16:39but the Crow's Nest Metro's changed the dynamic completely.
00:16:42Crow's Nest into the city, it's like minutes.
00:16:44Yeah.
00:16:45And then what about the future?
00:16:46Where's it going in the direction that it's heading in?
00:16:49To be able to have this scale of redevelopment
00:16:51so close to the CBD, it's...
00:16:54Almost unheard of.
00:16:55Yeah, unheard of.
00:16:56And I think it's almost a once-in-a-lifetime opportunity.
00:16:58Well done, you.
00:16:59You were in the right place at the right time.
00:17:01After 30 years, you know, hope so.
00:17:04I can beat this feeling in my heart
00:17:07Something that I can't describe
00:17:10I know that...
00:17:11So if you've been listening to Ewan
00:17:12and he's piqued your interest,
00:17:14do yourself a favour and download the view.com.au app.
00:17:17I mean, apart from the fact it has so much detail
00:17:19on any suburb that you're looking at,
00:17:21quite comprehensive, in fact.
00:17:23I reckon with real estate,
00:17:24one of the first things that people ask themselves is,
00:17:26how much could I borrow and what will my repayments be?
00:17:29You can just go straight to this little Home Loans tab,
00:17:31and look at that.
00:17:32It says it all.
00:17:33Home Loans Made Simple.
00:17:34It's got a borrowing calculator.
00:17:35You can actually check your borrowing power.
00:17:37You can work out what your repayments will be.
00:17:39There's also these great step-by-step guys.
00:17:41So at no stage throughout the process will you feel overwhelmed.
00:17:44There's just so much information.
00:17:46Mr. Pete?
00:17:56Yeah?
00:17:57But I was talking with Ewan about the future of Crow's Nest.
00:17:59Yeah?
00:18:00Well, talking about the future,
00:18:01these guys should mark.
00:18:02Awesome.
00:18:05Hello, Luke. How are you?
00:18:06Hey, nice to see you guys.
00:18:07Welcome to Elevate, Hume Place in Crow's Nest.
00:18:09This is actually such an awesome set-up.
00:18:11So this is it, hey?
00:18:12You bet.
00:18:13We're standing right here.
00:18:14Right.
00:18:15And this is known as Hume Place.
00:18:17Elevate is the only build-to-sell component of the development.
00:18:21We're very proud.
00:18:22This element is the only project in the state so far
00:18:26to give housing for keen essential workers in perpetuity
00:18:30for the healthcare network locally here in Crow's Nest.
00:18:33Wow, that's great.
00:18:34And then the last element of Hume Place
00:18:36is our build-to-rent components.
00:18:38Fantastic.
00:18:39That's seriously cool.
00:18:40Yeah.
00:18:41Well, I know a lot of people are excited,
00:18:42so let's go have a look.
00:18:43Cool.
00:18:45Here it is.
00:18:48Oh, my goodness.
00:18:50I mean, if you want to immerse yourself in a space,
00:18:52I don't think I've ever actually seen anything on this scale.
00:18:55Well, look, we believe when you buy something off the plan,
00:18:58it needs to be the best experience possible,
00:19:01and this is basically what you're going to get.
00:19:03Now, I've been walking through some of the beautiful,
00:19:05charming heritage streets.
00:19:07How do you balance what you're doing, new development,
00:19:09with the old-world charm?
00:19:11Well, you bet.
00:19:12The reason we love this site so much,
00:19:14it's right in the middle of Crow's Nest Village,
00:19:16and it's that old architecture combining with this new,
00:19:19modern high-rise, and I think we've got the balance right.
00:19:22Our podium is wrapped in old bricks that looks beautiful and timeless,
00:19:27and now people get to live above the Metro,
00:19:29the only site in Sydney, and your minutes just to anywhere.
00:19:32To think that we're getting to build a once-in-a-generation project
00:19:36on top of a billion-dollar piece of infrastructure,
00:19:38it's a dream come true for Third Eye,
00:19:40and I think the residents are going to love it.
00:19:50Well, Pete, as we've touched on,
00:19:51I think the real appeal of Crow's Nest
00:19:53is that mix of the old and the new.
00:19:54I mean, it really does encapsulate
00:19:56what a lot of suburbs are experiencing in the 21st century.
00:19:59Yep, and it's good to see the old being retained, Greasy.
00:20:02What are you talking about me?
00:20:03No, in the form of gorgeous little herity tones
00:20:06got along the suburban streets off the main track.
00:20:09Although, I don't think we have focused
00:20:10on one of the most important things.
00:20:12I bet. The restaurant.
00:20:13You hungry?
00:20:14Always.
00:20:17Coming up, meet the little balls of potato
00:20:19giving pasta a run for its money.
00:20:22I think that is a gnocchi
00:20:24that even a nona would be proud of.
00:20:29Adam and Charlie will do whatever it takes
00:20:31to bring this entertaining space to life,
00:20:33no matter the consequences.
00:20:35I tell you what,
00:20:36this wind is not doing wonders for your hair, is it?
00:20:38I need some manscaping, that's for sure.
00:20:40And their colour may be curious,
00:20:43but these brownies are off the charts great.
00:20:46That whole batter is going to turn bright green.
00:20:51All right, believe it or not, this accent is not Italian.
00:21:01But I can cook gnocchi, and today I'm going to make you a special gnocchi,
00:21:06which is a green gnocchi with burnt butter sauce and baby beets.
00:21:10All right, so basically gnocchi is potatoes, it's flour and it's eggs,
00:21:19and you can flavour it with herbs.
00:21:20You want your potato as dry as possible.
00:21:23So what you're going to do is, you've got your potatoes.
00:21:26I line the bottom of the tray with some rock salt, just some cheap rock salt.
00:21:30I lay the potatoes on the salt, so it's about 10, 11 potatoes,
00:21:35which is 1.2 kilos in the oven for about 40 minutes to an hour,
00:21:39until they're beautiful and soft.
00:21:41I like to flavour the flour with the herbs,
00:21:44so you get all that green running through the gnocchi and you get all the flavour.
00:21:47And the best way to do it is to blend it.
00:21:51I got about 110 grams of flour, so that goes into my mixer as messy as I can.
00:21:59Bunch of sage, that goes in.
00:22:05Rosemary, just take it off the stalk.
00:22:11Italian parsley, it's the only Italian bit in the dish.
00:22:16And now, just give it a blend.
00:22:21All right, so have a look at that.
00:22:24Oh, you can smell it.
00:22:30All right, so the potato, soft, salt's done all its job.
00:22:35What we want to do now is, there's no way around this,
00:22:37you've got to do it when it's hot.
00:22:38If the potato gets cold, the starch locks in and you're not going to get a good gnocchi.
00:22:43So you're just going to cut them in half.
00:22:47This also helps dry them out as well.
00:22:49All right, large bowl, potato ricer.
00:23:02If you don't have a potato ricer, you could just mash them up really fine.
00:23:05You're going to scoop out your hot potato into your ricer.
00:23:10Irishman's dream.
00:23:22All right, to the potato.
00:23:23You've got to cheese it up.
00:23:25Parmesan.
00:23:27About 200 grams.
00:23:28All right, we've got our flour we did earlier.
00:23:37All right, there's our flour.
00:23:40So I like to gently fold it through before we put the eggs in,
00:23:44just to incorporate all that flour.
00:23:46Now we're going to add three egg yolks, just to lock it together.
00:23:51This is what binds it.
00:23:55One.
00:24:00Two.
00:24:01And then the tool I use to bring it together.
00:24:09Very kitchen-y.
00:24:11Use a paint scraper.
00:24:13Because it helps get in.
00:24:15You don't really want to work it too much with your hands.
00:24:16You want to work it with the steel.
00:24:19So just chop it in.
00:24:25A little bit of our flour, just on the bench.
00:24:28So it's all by touch.
00:24:30So just take it out.
00:24:31Obviously you don't want it wet and gloopy.
00:24:34And all you want to do is you want to bring it together.
00:24:37You don't, it's not like bread.
00:24:38You don't want to knead it.
00:24:40You just want to bring it together.
00:24:41You don't want to knead all that.
00:24:42You don't want to knead it.
00:24:43You don't want to knead it.
00:24:44You don't want to knead it.
00:24:45OK.
00:24:47I'm going to knead it right now.
00:24:48And I'll hold it together.
00:24:50You just want to knead it together.
00:24:57Alright, just give your gnocchi's a little squeeze, just for presentation.
00:25:01All right, just give your gnocchis a little squeeze, just for presentation, lay them on
00:25:11your tray.
00:25:14All right, now what you do is straight into the boiling water.
00:25:29Now easy way to tell if your gnocchis cooked.
00:25:31What happens is you drop it into the boiling water, it sinks to the bottom.
00:25:35As it cooks and the egg cooks inside, it rises to the top.
00:25:39That's when you know it's ready, scoop it out.
00:25:41There we go.
00:25:43Look at that.
00:25:45A little bit more firm, not too firm.
00:25:51All right, gnocchis, put them in the warm oven, it's turned off.
00:25:58Just leave them in there to warm.
00:26:00Good gnocchi needs a good sauce.
00:26:01A good sauce can be a very simple sauce.
00:26:05So about 250, 300 grams of butter into a warm pan.
00:26:09It's going to separate and it's going to caramelize.
00:26:11We're going to get a nice brown color.
00:26:16Get our sage in.
00:26:17So you're going to get a nice crack smell.
00:26:18You ready?
00:26:19Cook your sage until it's crisp, add your capers and your juice, about 100 grams.
00:26:33A bit of stir.
00:26:35Oh yeah.
00:26:36Yeah.
00:26:37Now I'm going to use the zest for the lemon and the juice.
00:26:43Give that a stir.
00:26:55Beautiful.
00:26:56I'm just going to toss them through the sauce.
00:27:08Right, so you've got your warm gnocchi, you've got your beautiful butter sauce.
00:27:15Pair your gnocchi with a vegetable that's in season, so obviously, raw baby beets.
00:27:28So just cut it nice and fine.
00:27:30Toss that in the bowl.
00:27:33A little bit of our dressing.
00:27:36Stir it.
00:27:37Bit of the green.
00:27:38Look at that.
00:27:41And then, always, always, more cheese.
00:27:50I think that is a gnocchi that even a nonna will be impressed with.
00:28:00Do you remember that great Aussie film classic, Babe?
00:28:22Well, it was set in the green heart of the southern highlands of New South Wales.
00:28:27Right here, in fact, in the rolling hills of Robertson.
00:28:30A rich volcanic soil and an abundance of rain.
00:28:34That has also helped to create some of the finest picture book gardens in the country.
00:28:47The Moorings is a 40 hectare heritage farm.
00:28:51It was established in the 1870s by a naval lieutenant.
00:28:56Now, back then, he bought 100 acres for 100 quid.
00:29:01A great deal.
00:29:02Today, the current owners have restored the original homestead and have extended it.
00:29:08But for me, what is really magical, they've also created a two-hectare ornamental landscape
00:29:14with foliage and year-round interest at its heart.
00:29:27Once you come down the driveway into the turning circle here where the coach and four would have dropped off its passengers to the homestead,
00:29:33it's a very different wintry look with these bare traceria branches going up into a grey sky.
00:29:40They create the skeleton, the bones, the structure of this garden, especially they're visible in winter.
00:29:47But you know, there's a more permanent look in this garden that's here every single day.
00:29:52It's these clipped hedges of azaleas, of camellias.
00:29:56But the flowers are secondary to the forms and the shapes that they come in.
00:30:01And this is only the beginning.
00:30:12The Conifer Garden has to be the signature piece of this property.
00:30:17In fact, it's probably one of the best in the entire district.
00:30:20None of the gossip, nothing can stop us.
00:30:23I want to love you again.
00:30:25Hey, Les.
00:30:26Oh, great.
00:30:27How are you, mate?
00:30:28Yeah, good, thank you.
00:30:29Yourself?
00:30:30Good, good.
00:30:31Excellent.
00:30:32Thank you, pal.
00:30:33Wow.
00:30:34Is this your handiwork?
00:30:35It is, yes.
00:30:36Man, how long have you been doing that for?
00:30:37You're the head gardener, so, okay.
00:30:38Tell me, tell me how long have you been working on this?
00:30:40About ten years.
00:30:41You know, you've got Cyprus here.
00:30:43Yes.
00:30:44In fact, you've got Capressis, Platyclatus, you've got Thuyas.
00:30:47In fact, it's a great collection.
00:30:50The owner, Don, really had a fascination with them.
00:30:53Don Dyer absolutely loves conifers.
00:30:56And so, yeah, he just, whatever he could find, he decided to plant.
00:31:01Well, he's gone right to the top.
00:31:03Look at the cryptomeria up there.
00:31:04Hasn't he?
00:31:05Yep.
00:31:06It's got that winter colour, doesn't it?
00:31:07Absolutely beautiful.
00:31:08Now, Don obviously has, what, has he got a horticultural degree or something?
00:31:12No.
00:31:13Really?
00:31:14He's a nuclear physicist.
00:31:16Oh, really?
00:31:17Wow.
00:31:18Yep.
00:31:19But he really had a passion for plants, obviously.
00:31:21He did.
00:31:31So, Liz, how long does it take you to keep this conif garn looking so neat and tidy?
00:31:35Probably about a day and a half, with the whole, all the fine little bits and pieces
00:31:41and having to get in.
00:31:42How often, though?
00:31:43Probably every three months.
00:31:45Oh.
00:31:46Once it starts to get a little bit of, a little bit of legginess on it.
00:31:49Yeah, a bit of furry.
00:31:50Bit of furry.
00:31:51I just love this golden hanoki cypress.
00:31:54The interesting thing, it's like it's been sprayed with gold paint.
00:31:57Because it's all gold on the top, but green underneath.
00:32:00Underneath.
00:32:01Yeah, there's always something to look at in the conifer garden all year round.
00:32:04Just gives that little bit extra.
00:32:05It's a real lift, isn't it?
00:32:07It's at the front of the house where the magic really reaches its peak because you've got
00:32:21this wonderful view and the homestead itself.
00:32:23The tree, the poplar, was most likely planted by the naval lieutenant.
00:32:28It's a really old, old tree, well over a hundred years of age, like this beautiful brush box.
00:32:34This my excavation too.
00:32:41In later years, the garden provided a great opportunity for Don and his wife Barbara to entertain the grandchildren.
00:32:48And they just love the garden.
00:32:50It's really Don's plant selection that has helped Les create these beautiful clipped hedges and domes and shapes.
00:32:58Like this Eliagnus here.
00:33:00There is a bit of variegation in it, but it's nice and tight and compact.
00:33:04The secret when you're wanting to select these plants is small, twiggy leaves and twiggy growth.
00:33:09Bigger leaves, you've got too many gaps in the dome.
00:33:12And look at this Laura Petalum.
00:33:14Just look across the top there, you can see those pink new growths up against the blue sky.
00:33:19It really is quite stunning.
00:33:21But the scene is set by this beautiful conifer archway.
00:33:25As you go through, don't forget to look up to see the bones, the structure that creates this wonderful archway.
00:33:44The fascinating thing is that every room, including the conservatory, looks out over this spectacular view.
00:33:55Do you know, it doesn't matter what century you're building in.
00:33:58That real estate saying of position, position, position still holds firm.
00:34:04It's all about this glorious view.
00:34:06And don't worry, there's so much more coming up from the moorings a little bit later in the show.
00:34:11When we needed you most.
00:34:15Now that's an eyesore, if ever I saw one.
00:34:21You want to see an easy way to cover it up?
00:34:23Some clutting.
00:34:25I promise you, this is not an experiment that went wrong.
00:34:29It's my delicious, sticky, chewy matcha brownie.

00:35:15All right, Charles.
00:35:16Come on, son.
00:35:17Swamps get some decking and paving down.
00:35:18Chop, chop.
00:35:19No race for the wicked.
00:35:20Coming.
00:35:21Coming.
00:35:27From a backyard that was a concrete jungle to a beautiful entertainment zone.
00:35:31Well, that's the plan that Charlie and I have anyway.
00:35:38And for our decking boards, we've gone with a nice hardwood.
00:35:40Now, for this one, I have chosen Merbu or Merbau.
00:35:43Now, these are sustainably sourced.
00:35:45They come in beautiful long lengths.
00:35:47They'll span our whole deck and they're 140 wide.
00:35:49So they're going to tie in with our fence and this whole entertainment area perfectly.
00:35:55It is well worthwhile putting some time and thought into your paving layout because you do need to consider drainage.
00:36:14Now, think of this as a big umbrella that's going to catch water.
00:36:15You need to direct that somewhere else.
00:36:16You don't want to send it to the neighbors.
00:36:17And I want a nice flat line here.
00:36:18So when it meets Adam's deck, it looks like it's well thought out.
00:36:19So we're draining upwards this way.
00:36:20That also sets my layout for my pavers.
00:36:21I'm using 600 by 400 because I want that contemporary look.
00:36:23But I'm doing a stack bond back just to accentuate the lines of the decking.
00:36:24Now, this is a color called cypress.
00:36:25And I know what you're saying.
00:36:26Why are you using a light color like cypress when it comes to an entertaining space?
00:36:27Well, these have been pre-cooked.
00:36:28Well, these have been pre-cooked.
00:36:29And I've been using a pre-cooked.
00:36:30And I've been using a pre-cooked image.
00:36:31Now, I've been using a pre-cooked image.
00:36:32Now, think of this as a big umbrella that's going to catch water.
00:36:33You need to direct that somewhere else.
00:36:34You don't want to send it to the neighbors.
00:36:35And I want a nice flat line here so when it meets Adam's deck, it looks like it's well thought out.
00:36:38So we're draining upwards this way.
00:36:39That also sets my layout for my pavers.
00:36:40I'm going to buy 400 because I want that contemporary look.
00:36:42But I'm doing a stack bond back just to accentuate the lines of the decking.
00:36:45Now, this is a color called cypress.
00:36:47And I know what you're saying.
00:36:48Why are you using a light color like cypress when it comes to an entertaining space?
00:36:52Well, these have been pre-sealed.
00:36:53So you can spill as much wine on them as you like.
00:37:10Charlie and the guys have done a fantastic job on this paving.
00:37:23It's looking awesome.
00:37:24But now it is time to address this eyesore.
00:37:27For that, we've built a simple frame just using some 90 by 45 treated pine.
00:37:32And what we're going to do is slide it into place and use this existing fence on each side to fix it off.
00:37:39And then I'm going to get some shiplap cladding out of the cement sheet and we'll clad it.
00:37:43It's going to look fantastic.
00:38:06Before we can move on with the rest of the garden,
00:38:08we have to address the asbestos on the shed.
00:38:10So we've brought in the professionals to sort that out.
00:38:13The backyard is coming together, but what about our old laundry shed?
00:38:32Well, the asbestos guys have been and gone and we've got our safety certificate.
00:38:37The team is hard at work and they've started with fixing up this framework for our new servery.
00:38:43Now, because so many Aussie backyards have old sheds just like this one, there's a heap of information we want to share with you about the safe testing and removal of asbestos.
00:38:53So keep an eye out for this shed story on next week's show.
00:38:57Charlie!
00:38:58Yes!
00:38:59My goodness gracious me, it's Rusty Box Central around here.
00:39:05Yeah, I know.
00:39:06It's good, isn't it?
00:39:07Same stuff as we used for the edging, but it's got that lovely patina to it now.
00:39:10Takes a couple of days and you get that nice look to it.
00:39:13Because I was going to say something, when I saw you putting in the edging, I'm like, oh, it's a bit silver, mate.
00:39:16It's not really blending in with the deck.
00:39:18Yeah, no, this goes perfectly.
00:39:19And these boxes are actually really fantastic.
00:39:20You can get them as boxes or in parts, different sizes, put them together on site or they come like this.
00:39:26Yeah.
00:39:27Yeah, and they do custom work as well.
00:39:28Yeah, it's fantastic.
00:39:29I tell you what, this wind's not doing wonders for your hair, is it?
00:39:31I need some manscaping, that's for sure.
00:39:32Do you want a hand-putting these in?
00:39:34Yeah, I'll just drill this side off and then we'll lift them in.
00:39:36All right.
00:39:37Up!
00:39:38Up!
00:39:39That's me saying up.
00:39:40Yeah, it was a touch over the top, wasn't it?
00:39:41Lovely.
00:39:42Nice.
00:39:43Thank you, that was it.
00:39:58Now, Charlie, I do need to ask, I mean, obviously these pavers are a light colour, is, you know,
00:40:05these boxes are going to leech all over the beautiful white pavers?
00:40:08Well, these have been sealed four times and like a red wine, the stain will come off.
00:40:12So, I'm not worried about it.
00:40:13Once the patina is fully matured, it won't leech anymore.
00:40:16Yeah, nice.
00:40:17All right.
00:40:18So we're saying we're safe.
00:40:19Safe as houses.
00:40:20I think we're pretty safe, yeah.
00:40:21Nice.
00:40:27Here comes the fire pit.
00:40:29Will it fit?
00:40:30Will it fit?
00:40:31Of course it will fit.
00:40:32Will it fit?
00:40:33Yes!
00:40:34Who do you stick?
00:40:36How good's that?
00:40:37It's lovely.
00:40:38All right, couple of screws.
00:40:39The way we go.
00:40:40It works.
00:40:41Everybody got burnt out, not me.
00:40:44I'm gonna love me the right way.
00:40:47Learn how to set my own pace.
00:40:50Only one burning in my ways.
00:40:53Feeling blessed like every day.
00:40:56I'm the real deal coming on the phone page.
00:40:59Oh, the final piece of the puzzle, Charlie.
00:41:00That looks very, very nice.
00:41:14Eh?
00:41:15It's all coming together, isn't it?
00:41:16Yeah, it is.
00:41:17Hey, when is that centre?
00:41:18It's pretty close.
00:41:19Very good.
00:41:20Do you know what this garden needs?
00:41:21What does it need?
00:41:22It needs some much needed planting, I think.
00:41:23It definitely does.
00:41:24And that's coming up as well as me doing the final touches on the shed.
00:41:25Yeah, and we're gonna find out exactly what Jackie and Brad think of this amazing garden.
00:41:29Yeah, I'm excited.
00:41:30Do you want me to put that in the centre?
00:41:31Yeah, thanks, mate.
00:41:34Thanks.
00:41:35So, Logie's voting is open now.
00:41:36Nim Granger, I believe you are in the running for one of these.

00:41:42To be honest, you still get dibs because you potentially on the night could win one of

00:41:44But of course, none of it will happen unless you vote for us now.
00:41:46Yes.
00:41:47Go to T-Rod.
00:41:49Brad.
00:41:50Think of this amazing garden.
00:41:51I'm excited.
00:41:52Do you want me to put that in the centre?
00:41:53Yeah, thanks mate.
00:41:55Thanks.
00:41:56So, Logie's voting is open now.
00:41:57Nim Granger, I believe you are in the running for one of these.
00:41:59Yes.
00:42:00Well, I believe you and your Better Homes and Gardens team are in the running for one of these.
00:42:03To be honest, you still get dibs because you potentially on the night could win one of
00:42:06these.
00:42:07I am one of these.
00:42:08But of course, none of it will happen unless you vote for us now.
00:42:10Yes.
00:42:11Go to tvweeklogies.com.au.
00:42:13Is that right?
00:42:14Yeah.
00:42:15Lynne for the win.
00:42:16Yeah.
00:42:17Oh, thank you.

00:43:09So much better.
00:43:12I think matcha is the new black.
00:43:15From mochis to smoothies and lattes and ice cream, it is everywhere.
00:43:22And if you are a lover of matcha, then this is the recipe for you.
00:43:27My white chocolate matcha and macadamia brownie.
00:43:31So we are going to start off with melting the white chocolate.
00:43:34Here I have got 175 grams of white chocolate.
00:43:39I am going to chop them into smaller bits.
00:43:42I am going to melt the white chocolate on a double boiler.
00:43:51All you need is a saucepan and a bowl with water underneath it boiling.
00:43:57Now to that I am going to add 195 grams of unsalted butter.
00:44:11This will take no time to melt.
00:44:14Just keep an eye on that.
00:44:24That is done.
00:44:25It is nice and smooth.
00:44:27I am going to take it off the saucepan because what I want to do is I want to cool it down
00:44:32before I mix it in with the other ingredients.
00:44:36In a separate bowl, I am going to mix 220 grams of white granulated sugar.
00:44:48Three eggs.
00:45:03So it looks like the sugar has melted.
00:45:06I am going to add about one tablespoon of vanilla essence.
00:45:14I am going to see what the temperature is like with the white chocolate.
00:45:19Because you don't want to add it while it is still too hot.
00:45:24Because I don't really want to cook the eggs.
00:45:26Add this to my egg and sugar mixture.
00:45:38Next, the dry ingredients.
00:45:41Sifting 145 grams of all-purpose flour.
00:45:45I have got two tablespoons of ceremonial grade matcha.
00:45:53I suggest to get the ceremonial grade matcha for this recipe.
00:45:58Sift that in with the flour.
00:46:03Got sea salt here.
00:46:07Got one teaspoon.
00:46:11If it is a coarse sea salt, try and break the little granules a little bit before you put it in.
00:46:18Give it a quick stir.
00:46:28And now I am going to add it to the wet ingredients.
00:46:32Add a couple of tablespoons at a time.
00:46:35And just fold it through.
00:46:37It's a white chocolate brownie.
00:46:51So I've got more white chocolate.
00:46:53Here I've got 150 grams of white chalk chips.
00:46:58You can add as little or as much as you want.
00:47:02But try to stay away from too much because you don't want it to be too sweet either.
00:47:07So just slowly fold that in.
00:47:10And then I've got the macadamia nuts.
00:47:16I'm going to give it a quick rough chop of the macadamia nuts.
00:47:34I've lined 20 by 20 centimeter pan with some baking paper.
00:47:41It is going to taste delicious.
00:47:48Into the oven at 160 degrees.
00:47:53For about 25 minutes.
00:48:04This looks just about done.
00:48:10And you can still see a little bit of the batter on it.
00:48:15And that's perfect.
00:48:20Two hours to cool down before we serve it.
00:48:23It's going to be easy now to just lift that up.
00:48:39And take all of that out.
00:48:44And for the topping, you can leave it as it is.
00:48:47It doesn't make a difference.
00:48:48But if you want to make it look a little bit prettier, just a slight dust of matcha powder.
00:49:09I'm going to take the biggest one here.
00:49:12Out of this slice.
00:49:25Perfection.
00:49:27The white chocolate.
00:49:29The gooey green matcha brownie.
00:49:33And the beautiful macadamia nuts.
00:49:44Speechless.
00:49:52Well, things might be getting a bit chilly and slowing down in the garden.
00:49:55But you're just a few clicks away from turning up the heat.
00:49:58Because we'd like you to vote for a Logie for better homes and gardens in the lifestyle program category.
00:50:04Now, look, you know, we really enjoy giving you gold medal performances every week.
00:50:10And showing you spectacular, beautiful and inspirational gardens from anywhere.
00:50:15Now, we'd like you to share the love back just a little by voting for us.
00:50:19A Logie for better homes and gardens in the lifestyle category.
00:50:23Go to it, and thanks.
00:50:27Coming up, there's so much to see here.
00:50:30Graham doesn't know where to look first.
00:50:32The fascinating thing about this garden, the more you explore, the more you discover.
00:50:37And Adam and Charlie set the stage for this garden's debut.
00:50:42I have to say, we've done a pretty good job on this one, haven't we?
00:50:44I tell you what, I'm feeling pretty comfortable here, mate.
00:50:45It's good, it's good, it's good.
00:50:46Well, the transformation of our concrete jungle is coming along very nicely.
00:50:57Yes, and how good does this deck look?
00:50:59Looks fantastic, almost as good as my paving and planters.
00:51:01But now it is time to get some plants into the round, so let's start with these hedges.
00:51:04They're beautiful.
00:51:05They're huge, mate.
00:51:06The trees I'm using for my hedge are called Iliocarpus reticulatus, otherwise known as the blueberry ash.
00:51:23Now, this is a native that I absolutely love.
00:51:25It gets covered in sort of a nodding flower, which has a fringe on the end, which turns into a blueberry,
00:51:30which is a perfect food for native birds.
00:51:32Now, this does turn into a tree, but it is quite columnar, which means it grows upright, and you can prune it.
00:51:38What I'm imagining here is, well, I'm going to grow it upright against this fence because it looks fantastic.
00:51:46But as it gets bigger, keep it quite narrow and pruned.
00:51:49You can remove the lower branches, which will give you more space below.
00:51:52to introduce some more planting.
00:52:02Look at you, placing plants.
00:52:04I've got no idea what I'm doing, Charles.
00:52:06That's all right.
00:52:07Just make it up.
00:52:08Maybe do I.
00:52:09I've made a career out of it.
00:52:14Because we're planting this garden up in the middle of winter, I'm using a lot of textural plants just to add some interest.
00:52:19Now, we've got some really broad leaves like the Ligularia, some flying clipped leaves like this Wastringia, but I'm also using some strappy leaves.
00:52:26We've got fine strappy leaves in the common rush, the Juncus.
00:52:29We've got slightly thicker in the Lyriope and then sword shape in this Sansevieria Moonlight.
00:52:34It's going to give us a really nice planting scheme, which looks good all year round.
00:52:38And how much better is our shed looking with the new cladding?
00:52:40It's freshly painted.
00:52:41It really just lifts this whole thing.
00:52:42And how much better is our shed looking with the new cladding?
00:52:55It's freshly painted.
00:52:56It really just lifts this whole area.
00:52:57Make sure you tune in next week to see how we brought it back to life.
00:53:02Now, we're going to be putting this on the wall here.
00:53:04It's going to be storage for the wood for our fire pit, but it is pretty heavy and you know who's got the biggest muscles of them all.
00:53:10It's only one person. Charlie! Oh, mate!
00:53:11Yes it is.
00:53:12We were going to use your muscles, mate, but...
00:53:13Too much power.
00:53:14It is a bit dangerous, yeah?
00:53:15So Pete and I will lift and you can fix it.
00:53:16Okay.
00:53:35Yes. There it is!
00:53:36Yes, there it is.
00:53:44There you go.
00:53:44All right.
00:53:46Beautiful, mate.
00:53:46Lovely, man.
00:53:47Hey?
00:53:48That wasn't hard, was it?
00:53:49Perfect little wood stack, nice bit of garden art at the same time.
00:53:52It is absolutely gorgeous.
00:53:54Yeah, I love it.
00:53:55Ah, worked well.
00:53:55All right, keep planting.
00:53:56All right, you're going to put your little bee wings on and sit in there as well?
00:53:58Ha, ha, ha, ha.
00:54:06Oh, what's going on here, Charles?
00:54:15Well, I know how you've got yourself a Logie and all, Adam.
00:54:18Oi!
00:54:19I just thought I'd create you a nice little green room up here.
00:54:21Ah, ha, ha, yes, that's what I'm talking about.
00:54:24A nice hedge.
00:54:25I love it.
00:54:25And actually, these plants look very familiar, mate.
00:54:29Oh, yeah?
00:54:30Huh?
00:54:30Amaze me.
00:54:31Yeah, well, I reckon I've seen them in Nonna and Nonna's backyard.
00:54:34I used to go there and pick the olives off.
00:54:36Then I have a bit of a...
00:54:37Am I correct?
00:54:38You're correct.
00:54:39Now, this is a variety called Bambolina.
00:54:41It's a dwarf variety and it's a really dense variety, so it's perfect for hedging.
00:54:44You can see all this foliage down here.
00:54:46So you're just going to have a whole wall where I can just pick olives from everywhere?
00:54:49Ah, you grow this one for the foliage, not for the fruit.
00:54:52Ito pazzo!
00:54:53Yes.
00:54:53You're a little bit crazy, aren't you?
00:54:55Yes.
00:54:55No, but it all makes sense.
00:54:56I love it, Charlie.
00:54:57They do look beautiful.
00:54:58That's going to blend in with this area because we do have a pizza oven going in.
00:55:02Mm, very nice.
00:55:02But you've just got to remember to bring your own olives.
00:55:04And marinate them first.
00:55:05Yeah.
00:55:06Looks like you're having fun.
00:55:22What's pizza oven in Italian?
00:55:24Oh, mate, I don't know, but I'll tell you what, I rule one of these.
00:55:27If you want to eat one of the best pizzas you've ever had, get me to make it for you.
00:55:31Okay.
00:55:31Yeah, just a heads up.
00:55:32Nice.
00:55:43This is a serious set-up here, Charles.
00:55:45It is.
00:55:46Nice.
00:55:58Look at that.
00:56:00I have to say, we've done a pretty good job on this one, haven't we?
00:56:02I'll tell you what, I'm feeling pretty comfortable here, mate.
00:56:03Yeah, it's good, it's good, it's good.
00:56:05This is relaxing.
00:56:06Who's that?
00:56:07Oh, Brad, Jackie.
00:56:08Hey.
00:56:09How are we, guys?
00:56:10Hi, good, thank you.
00:56:11Hey, guys, good, thanks.
00:56:12Oh, we were just enjoying the area.
00:56:14Yeah?
00:56:14Yes.
00:56:14Oh, my goodness.
00:56:16What a transformation.
00:56:24This looks absolutely amazing.
00:56:26I'll definitely forget how it looked before.
00:56:29It looks just so different.
00:56:31A little bit different, isn't it?
00:56:32Really different.
00:56:33And you've got the fire pit there, too, which looks great.
00:56:35Absolutely.
00:56:36Surrounded by gravel, so it's nice and safe for the deck.
00:56:38Adds a little bit of a feature to the deck as well.
00:56:40That's right, and that deck gives you a nice level platform
00:56:42where you can obviously set up these lounges
00:56:44so you can kick back and relax and create some fun family talk.
00:56:47Yeah, and roast marshmallows with the kids.
00:56:49They will love it.
00:56:51Yeah, but come and have a look at your new dining area.
00:56:55So up here, we've played with the levels
00:56:57using all the concrete that was here to create our base,
00:57:00and we've got a lovely paved area
00:57:01with a pretty big dining table, I have to say.
00:57:04Well, it's amazing, yes.
00:57:05It'll fill all of us here.
00:57:06Yeah, and you've got the barbecue
00:57:07and even a pizza oven as well.
00:57:09Oh, the kids will be excited for the pizza oven.
00:57:11That's awesome.
00:57:12I've never seen the pizza.
00:57:12That's brilliant.
00:57:13Have a seat.
00:57:13Try your new table and chairs.
00:57:14Okay.
00:57:15This is where you have your fiestas,
00:57:17your little Mediterranean hangout.
00:57:19Oh, it's amazing, yes.
00:57:20I'm loving the colours as well.
00:57:22We've got the, like, a sage green.
00:57:24But do you remember your old shed?
00:57:26Yes.
00:57:27All right, someone have a look at this.
00:57:30Oh, my goodness.
00:57:31Wow.
00:57:31Such a big difference.
00:57:32It looks so different.
00:57:33I barely recognise it.
00:57:35But do you know what makes your shed look so good?
00:57:36What's that?
00:57:37All these plants, of course.
00:57:39Of course.
00:57:40Brilliant.
00:57:40Of course, Charlie.
00:57:41The plants are amazing.
00:57:42Yeah, it's all lovely, low-maintenance textured stuff,
00:57:44so it's going to look good all year round for you guys.
00:57:46Yeah, I'm really liking the colours as well.
00:57:48But come and have a look at the shed.
00:57:49Come on.
00:57:49Now, remember, it was covered in asbestos,
00:57:53so we were correct in thinking that it was.
00:57:55We've had it safely removed,
00:57:56and now we've got this beautiful new cladding on,
00:57:58and how fresh does it just make this whole area?
00:58:00Yeah, brilliant.
00:58:01The outdoor bar area looks brilliant.
00:58:03Jackie, you can go in and have a look.
00:58:04Yeah, I'd love to.
00:58:05We've got the new surfery window.
00:58:07You've got a new bench top that spans all the way
00:58:09with a great-sized sink as well.
00:58:10What do we think, Jackie?
00:58:11It's amazing.
00:58:12I love it.
00:58:13There's a sink in here.
00:58:14There's even a bar fridge, Brad.
00:58:15Can we see what the kids think?
00:58:17Yes.
00:58:17How you doing?
00:58:18What do you think?
00:58:20It looks really different, doesn't it?
00:58:22What do you reckon?
00:58:23We've got a thumbs up?
00:58:24Yeah.
00:58:25Double thumbs up.
00:58:26Double thumbs up.
00:58:27Got to be a winner, yeah?
00:58:28I think our work here is done.
00:58:30Enjoy, guys.
00:58:34Look at this.
00:58:35You've got a whole big table to sit on.
00:58:37How cool is that, huh?
00:58:38Have you got a damp, shady spot in your garden?
00:58:48Why not invite the ferns in?
00:58:51Custom-made curtains can be really expensive,
00:58:54but this is a brilliant way to get the same look
00:58:56using ready-made curtains.

00:59:31So much better.
00:59:37In the colder months of the year,
00:59:46there are some landscapes that really stand out
00:59:49and create a beautiful serenity.
00:59:52Here at the Moorings Garden
00:59:54in the southern Highlands of New South Wales
00:59:56is one such garden.
00:59:58It is just so beautiful at this time of the year.
01:00:01The weeping willow reflected in the pond
01:00:04and, of course, the silver birch.
01:00:06Even the trunks covered with a little bit of lichen.
01:00:09The Japanese maples, bear and stark.
01:00:13And then, of course,
01:00:14with seasons sort of rotating, getting mixed up,
01:00:18we're so lucky to see these beautiful red-hot pokers.
01:00:21The Nifophia.
01:00:22This variety is tall and elegant
01:00:24with its great spires,
01:00:26these flames of orange and red.
01:00:28It's a real standout here looking across the landscape
01:00:31and the pond looks even more mysterious.
01:00:46The brilliance of the owner
01:00:48to create these intimate enclosed spaces,
01:00:51garden rooms, if you like,
01:00:53we've seen so much of.
01:00:55But here he's thrown the garden design book out
01:00:59and created something completely different.
01:01:01This is the sculpture garden.
01:01:11But he's allowed the trees to tell their story,
01:01:14whether it's conical, weeping, vase-shaped,
01:01:17whatever the trees are, they're looking natural.
01:01:19But instead of enclosing, he's pulled the curtains back.
01:01:23You know, maybe Japanese borrowed landscape style
01:01:26and what a landscape it is.
01:01:28This is the Yarua brush,
01:01:30the last remnant cool climate rainforest in the area.
01:01:33Highly protected.
01:01:35And what a vista.
01:01:37Anywhere the wind blows,
01:01:38it doesn't really matter
01:01:40The fascinating thing about this garden,
01:01:48the more you explore,
01:01:49the more you discover.
01:01:50And this area here could be no more of a contrast
01:01:53than the one that we've just been in.
01:01:55Here, it reminds me
01:02:03that so many people ask me,
01:02:05oh, what happens when I grow these beautiful trees
01:02:07and it creates a totally different environment?
01:02:10Shade, moist soil,
01:02:12and all your roses and azaleas
01:02:14and things tend to disappear.
01:02:15Well, why not go for Australian?
01:02:17Beautiful ferns.
01:02:19We've got a fantastic collection of ferns
01:02:21that grow in these sorts of locations.
01:02:23The tree ferns,
01:02:25these beautiful bird's nest ferns.
01:02:26I just love them.
01:02:27They're so dramatic and sculptural,
01:02:30architectural in the garden.
01:02:31Rasp fern.
01:02:32Talk about architecture as a ground cover.
01:02:34And then, of course,
01:02:35yep, good old bracken fern.
01:02:37We're always poisoning it to get rid of it.
01:02:39No, let it go wild.
01:02:40And here you've got a beautiful scene,
01:02:43an evergreen every day of the year,
01:02:46looking beautiful.
01:02:53You know, it never ceased to amaze me
01:03:00how these grand, extensive gardens in the country
01:03:03are filled with great ideas that we can borrow.
01:03:07Maybe it's a case of just setting up a theme
01:03:09or possibly selecting some plants
01:03:11that will really, you can clip and train
01:03:14or looking at some of the conifers
01:03:16that were always good and still are
01:03:18and lots of permanent annual colour in our gardens.
01:03:22And we have the owners to thank
01:03:24for creating something so special
01:03:26and sharing it with us.
01:03:27But, you know, that's what gardeners do.
01:03:29The problem with curtains like this
01:03:38is that when you use them for privacy during the day,
01:03:40you're also blocking out all of that natural sunlight.
01:03:44But I have a great trick for your curtains
01:03:46that's not only practical, it also looks amazing.
01:03:59I'm using a double rod
01:04:07and that will allow me to put
01:04:08a block out blind closest to the window
01:04:10and then a lovely soft sheer on the inside.
01:04:14And I've also put in this timber helmet
01:04:17from the ceiling
01:04:18and that's going to give it
01:04:18a much more elevated high-end look
01:04:20because it will hide all of that hardware.
01:04:23We said we'd do this life together
01:04:25You told me nothing's gonna change
01:04:29Well, funny change is hard to measure
01:04:33Custom-made curtains can be really expensive
01:04:37but this is a brilliant way
01:04:39to get the same look using ready-made curtains.
01:04:42Traditionally, with a double rod,
01:04:44the curtains would be hung in the opposite way
01:04:46so the sheer would be closest to the window.
01:04:48But this way is much more contemporary
01:04:50and makes a whole lot more sense to me
01:04:52because having the block out closest to the light source
01:04:55means that you're blocking out more light
01:04:57and then this lovely soft layer
01:04:59on the inside of the room
01:05:00adds another detail to the design.
01:05:05Now that we've added in some more texture
01:05:07and detail to this bedroom,
01:05:08you can see how these gorgeous soft curtains
01:05:11really elevate the space.
01:05:14One of the key features of hanging your curtains like this
01:05:17is that you can control the level of privacy
01:05:20and also the amount of light coming into the room.
01:05:23And another trick is to hang your curtains
01:05:25wall-to-wall and from the ceiling.
01:05:28That way you get that really luxurious look.
01:05:31The pelmet helps with that as well.
01:05:33I think you'll agree
01:05:34for off-the-shelf curtains,
01:05:35these ones look pretty high-end.
01:05:37So you've heard Pete and I talk about
01:05:56all the various dining options in Crow's Nest,
01:05:58so we thought we'd better try it out for ourselves.
01:06:00One with a lot.
01:06:00Oh my gosh, that's not what I was expecting,
01:06:03but I am excited.
01:06:04Unlike Pete, one thing I've learnt
01:06:07in all my years in television
01:06:08is it's best not to stuff your face
01:06:09before you say goodbye.
01:06:11We'll see you next week
01:06:12with more Better Homes and Gardens.
01:06:13Oh yeah, have a bite.
01:06:15Come on.
01:06:16All right.
01:06:17Have your own honey smakes.
01:06:21Next time,
01:06:23we're heading to the coolest Melbourne suburb
01:06:25you've probably never heard of.
01:06:27We've got Collingwood that way,
01:06:29Fitzroy over there,
01:06:30and Carlton right next door.
01:06:31Yeah, Clifton Hill,
01:06:32it's surrounded by Melbourne icons.
01:06:34You're going to love it.
01:06:35I can hear you screaming through your TV.
01:06:38Adam, what about the chance
01:06:39that there's asbestos in that claddy?
01:06:41It's a word that can send chills up your spine,
01:06:44but if you're careful,
01:06:45there's nothing to be afraid of.
01:06:49We've got one of Ireland's corniest ever exports.
01:06:52What I grew up on,
01:06:53the humble combi.
01:06:56Plus,
01:06:57if fast fashion is beginning to feel a bit unseemly,
01:07:00we'll meet the woman
01:07:01and bringing your clothes back to life.
01:07:04And Dr Harry's meeting
01:07:05a couple of South American cuties.
01:07:07I'm at a place where you can love a llama
01:07:09or you can adore an alpaca.
01:07:12That's next time
01:07:13on Better Homes and Gardens.
