00:00I feel like I'm lost for words. It's so beautiful.
00:06Alley, alley!
00:11Oh, here we go.
00:13This is the Great Outdoors!
00:23They call it the greatest snow on Earth.
00:30I feel anything but comfortable.
00:36This is America's biggest winter playground.
00:40If you've got the right stuff for carving up the white stuff,
00:43it's pure, powdery heaven.
00:46Whoa!
00:47Between you and me...
00:48How come I'm going sideways?
00:50I've never skied before.
00:51Something that really gets your ego
00:53when you see little ones that are barely higher than your knee
00:56flying down the slopes.
00:58And I feel like I was born this morning.
01:02Whoa, whoa, whoa.
01:08Park City.
01:09A storybook town
01:11straddled by the ski fields of Park City Mountain and Deer Valley.
01:15Now, this is much more my jam.
01:19I don't want to boast, but I'm feeling pretty confident.
01:22Just grab an inner tube and glide.
01:25Like a famous ice queen once said, let it go!
01:29Snow tubing is for all ages, and you can do it day and night.
01:34Wrong way! Wrong way!
01:35Whoo!
01:38One down.
01:4048 to go.
01:42More speed on that downhill run?
01:45You got it.
01:46Park City hosted the 2002 Winter Olympics
01:50and will again in 2034.
01:53But you can sign up anytime for a thrill that's gold.
01:57Feel the rhythm.
01:58Feel the rhyme.
01:59These Aussie kids ready for a bobsled time.
02:03Now, I've seen cool runnings and that didn't end so well.
02:07So, I'm going to be fine.
02:08You promise me?
02:09Yes, no.
02:10You will be just fine.
02:12We've had everyone from 13 years old up to 85 years old do bobsled.
02:19Sliding down the original track in 2002.
02:22Upwards of, you know, 4 to 5 Gs.
02:24Going upwards of 75 miles per hour.
02:35That was one of the most unbelievable things I've ever done in my life.
02:39It's going to take me a while to come down from that.
02:41That was unbelievable.
02:45Before Olympic gold, Park City Mountain was mined for silver.
02:49History you feel with every step through the old town.
02:54Home to the world's only ski in saloon high-west distillery.
03:00Slice through snow, straight to home-cooked comfort.
03:04And award-winning whisky.
03:05Oh, it just slips down, doesn't it?
03:09At No Name Saloon, a cave of Americana.
03:14They take their liquor a little differently.
03:17Well, welcome to the time-honoured tradition of the Park City shot ski.
03:21This is mandatory for anybody that comes to our mountain ski town.
03:25So there's a few key rules that I'd like to go over before we embark together.
03:30Okay.
03:31This is a team effort, okay?
03:32We're all in this together.
03:34Solidarity means success.
03:36So we are going to count down.
03:38Three, two, one.
03:39Three, two, one.
03:41Woo!
03:43Woo!
03:45This has been, I've been initiated and I'm a part-time.
03:47You're official!
03:49Almost as intoxicating...
03:51Wow!
03:53..the gondola ride to Jordanel Lookout.
03:56Oh!
03:58..and the world-class ski runs of Deer Valley.
04:01Stay a while in this snowy Eden at Stein Eriksen Lodge.
04:06You know what it feels like in here?
04:09A warm, comforting and a very exclusive hug.
04:13With a view.
04:15Chill out beside a blazing hearth.
04:19Or go a whole other way.
04:21Look at these.
04:23They remind me of those souvenir snow globes.
04:25You know, the ones that you shake and inside it snows?
04:27Alpen globes are the coolest way to lunch at the lodge.
04:32And Jonathan is a chef who knows the way to a woman's heart.
04:37Yeah, you can't go wrong with our Stein's Burger.
04:39It's kind of tradition to come here and get a burger and ski all day.
04:43How many of these have you sold this season, do you think?
04:46This season, I'd probably say five grand.
04:50I did hear a whisper that you've got a bit of a nickname around here
04:53called Chef McDreamy.
04:54Oh, no.
04:56I'll take that response as a yes.
04:58Well.
05:00Yeah, I get that one a lot.
05:03Of course he does.
05:05Bad or hot chef.
05:07Is this the most enchanting thing to do in Park City?
05:11Put that on ice for a sec.
05:13One sleigh, two steeds, thousands of fluttering snowflakes.
05:19It's so ethereal, it's like I'm on a movie set.
05:24Is it real?
05:25It's up and battered.
05:26It sounds so much better.
05:27It's up and battered.
05:29Jake is at the reins of this snowed-in sleigh ride.
05:33This is the way that they traveled in the 1800s, 1700s.
05:39It's very reminiscent.
05:40I have some pioneer ancestry, you know, crossing the plains to come settle the West.
05:45And, you know, it fills me with a little sense of pride that I get to come and do this
05:49and then sharing that heritage with my ancestors, for sure.
05:52Oh, Jake, what a backyard you live in.
05:56Pretty special place, the mountains.
05:59Isn't it just spectacular?
06:01It is straight out of a fairy town.
06:06That's it.
06:07Nice.
06:08Okay.
06:09A natural.
06:10A natural.
06:11Well, you know, it's all in the wrist, as they say.
06:22It could easily be a crowd in here, just feeding off all of that.
06:28That's pretty shallow, too, isn't it?
06:31It's not as shallow as you think.
06:32Okay.
06:34Jeez, I've already failed.
06:39We've got this magnificent stream, which is actually the start of the Dewant River,
06:45which flows all the way down to Haver.
06:47Renowned as a world-class fishery.
06:50Tasmania's iconic River Derwent begins its journey from the equally iconic Lake Sinclair,
06:57Australia's deepest freshwater lake.
07:04The aim is place a fly upriver, and it will come towards us.
07:08Drift down.
07:09Yep.
07:10Have you seen the fly?
07:11Seen it, yep.
07:12Right.
07:13That's rule number one.
07:14Rule number two is to do it again.
07:17And let me guess.
07:19Rule number three, four, five.
07:20Repeat.
07:21Yeah.
07:22Lift up off the water, cast behind.
07:24That's it.
07:25Let it go.
07:27Strike, strike.
07:28Yep.
07:29So you've got to lift.
07:30Bad luck.
07:31That might have been a fish.
07:32I was slow on the reaction, wasn't I?
07:35This is my day job.
07:36Trying to catch that elusive brown trout.
07:38You're currently in my office, standing in the river like this.
07:41You've got these sounds around you.
07:44Generally, where trout are found, your phone doesn't work.
07:49It's magical.
07:51Tasmania's central highlands may be magical.
07:54I don't know what hand I in, to be honest.
07:56You can tell, can ya?
07:57But unfortunately, no amount of wishful thinking is gonna land me a fish.
08:03Thanks, Jason.
08:05Supernaturally stunning Lake Sinclair is at the southern end of Cradle Mountain, Lake
08:10Sinclair National Park, surrounded by world-renowned alpine walks, ranging from steep, challenging
08:17multi-day treks to more level terrain.
08:21This has to be the grandest and longest entry to any hotel I have ever stayed in.
08:28A boutique hotel in the middle of a glacial lake?
08:31Pure Tassie.
08:34Connected only by a 250-metre-long concrete flume, this ex-hydro station boasts nine very stylish rooms.
08:42Feels like it's sleeping on water.
08:48Let's call it the deluxe edition of the classic waterbed.
08:54But if you don't find the sound of water lapping beside your bedroom window soothing,
08:59there are land-based options.
09:01This one, a little further of a walk.
09:07And this is why.
09:09Tucked away beside the lake, a very private two-storey cabin surrounded by ancient myrtle forest.
09:16This is what a sophisticated, secluded wilderness retreat looks like, folks.
09:22I'd call this understated indulgence, which also applies to the food.
09:27The produce is 100% Tasmanian and it has to pass the pub test of being local.
09:33For our chefs, it's more about what not to put on.
09:35They've got so much to choose from.
09:37The communal dining area serves breakfast and dinner daily.
09:42That's for lunch.
09:44Our larder offering, again, 100% Tasmanian produce.
09:47Have it in your room, have it by the fire, put it in the picnic and off you go.
09:51It's the sort of place where you can do as little or as much as you want to do.
09:57It's no secret I'm a do-as-much-as-you-want kind of guy.
10:01And e-bikes are free, so you'd be mad not to.
10:04Oh, here we go.
10:06Look at those colours.
10:07Of course, your itinerary doesn't have to be set in stone.
10:13I can't believe the level of detail in this artwork, even to the point where you can see the veins in this man's hand, even that chain.
10:20But it can be etched in wood.
10:24Wall in the wilderness is just up the road from Pump House Point, an incredible hand-sculpted history of the Tasmanian highlands.
10:33It's 100 metres in total.
10:35It consists of 101 panels covering a range of different stories.
10:39One man's tribute to Australia's pioneering past, carved into Tasmanian timber.
10:46Mostly human pine.
10:48Mostly human pine. Is that an easy wood to carve?
10:50It is a soft wood, but that doesn't actually mean it's an easy wood to carve.
10:54It's a stable timber, so it won't crack and it won't move and resistant to rot.
10:59And it's also native.
11:01Endemic to Tassie.
11:03I really want to open that door.
11:09I could do this all day.
11:26So...
11:29So beautiful.
11:34Definitely makes you feel very small.
11:36Nice walk.
11:38It's a unique place.
11:40For one thing, it's the largest sand island in the world.
11:43It's the only sand island in the world to have rainforest growing on it.
11:48Driving on the 75 mile beach takes people's breath away.
11:53You've got lazy rivers you can float down.
11:57Massive, vast sand dunes you can explore.
12:00It's got everything.
12:01And a lot of the unique features come from the fact that it is so old.
12:04It takes a long time for this to form.
12:07Good things take time, I guess.
12:10Gari in Queensland.
12:13Millions of years in the making.
12:15The name literally translates to paradise.
12:19I love this forest.
12:20This is one of my favourite places on the island.
12:22People like Pete take you to the best spots.
12:25From the forest to the beautiful beaches.
12:27And embedded in the sand on 75 mile beach is the rusty remains of SS Mahino, shipwrecked here almost 100 years ago.
12:37I mean, if I was going to get stranded, this wouldn't be the worst spot.
12:41How good.
12:44We're at Eli Creek.
12:50I could do this all day.
12:52But my personal favourite.
12:56Whoa.
12:58Oh my gosh.
12:59Is Lake Mackenzie.
13:00It's so blue.
13:02A perched dune lake, which means...
13:05The only way it gets water is through rainfall.
13:07The only way it loses it is through evaporation.
13:09They're quite a unique type of lake.
13:12And to give you an idea, there are about 100 lakes on the island.
13:16But this is certainly the jewel.
13:18This is the special one.
13:19My kaleidoscope love.
13:22Kaleidoscope love.
13:24Gari, you are full of surprises.
13:30Gari is a quick detour off Queensland's Pacific Coastway.
13:34The ultimate coastal drive that takes you from rainforest, to reef, to this.
13:41We're heading into the coloured sands now, Rainbow Beach.
13:44Depending on which book you read, there's between 6 and 72 different colours of sand.
13:51And I think the guy who got 72 got a little bit carried away.
13:54I reckon he bought a Dulux colour chart and went off-white, off-white, dark white, champagne, beige.
14:00And this dunal system here runs all the way back down towards Noose.
14:04It's so special because it's the oldest intact dunal system left on the planet.
14:09It goes back over 800,000 years, unchanged, untouched.
14:13The dunes tower, 80 metres over this stretch of Rainbow Beach.
14:18Suitably named the Coloured Sands, you can walk or drive this stunning stretch of coastline.
14:24I really enjoy bringing people here.
14:27And this particular area is one of the most beautiful on the beach at the moment.
14:30Oh my gosh, I love the pink.
14:32This is glorious, isn't it?
14:34Glorious indeed, Craig.
14:40Matches my outfit.
14:41But for a view with a bit more blue, steer south to Double Island Point Headland, where the lighthouse has been guiding sailors since 1884.
14:54And I think this is one of my favourite views yet.
14:56And back on the Pacific Coast Way, I'm guided by my primal drive to eat.
15:02Yum.
15:06Being seaside calls for a surf club lunch, obviously.
15:09Refuelling is top priority today because tomorrow's adventure is going to be epic.
15:23And Queensland's weather gods are smiling this morning as we head a little further south to Double Island Point.
15:27I feel like I'm lost for words. It's so beautiful out here.
15:28It really is breathtaking.
15:30What I love most about Double Island Point is just the serene beauty.
15:33Just being away from the hustle and bustle of town and enjoying nature in its finest.
15:37Yeah.
15:38Best enjoyed on an epic ocean adventures kayak.
15:40Yeah, turtle, turtle, turtle, turtle, turtle.
15:43Yeah.
15:59Yeah, turtle, turtle, turtle.
16:01Cool dinner turtle.
16:03Yeah, does it work?
16:04Yeah.
16:05Turtle?
16:07Over here.
16:08Hello?
16:09Oh, he hit!
16:10Oh my gosh, it worked!
16:12Oh my god, he hit!
16:14Oh my god!
16:15Oh my god!
16:17Oh my god!
16:19Oh!
16:20Oh!
16:28Woo!
16:29Oh, and Alan thought it was me!
16:32Hey?
16:33Hey!
16:34Hello!
16:37Thank you!
16:38That's it!
16:39That's it!
16:40That's it!
16:41That's it!
16:47During the winter time, the jeton is turned on at 10 o'clock.
16:51It's really spectacular.
16:53It feels like this is Geneva's equivalent of the keys to the city.
16:57Yes, it is.
16:58Three, two, one!
17:02Here it goes!
17:05Wow!
17:07The height of the jeton is 140 metres.
17:11One of the most famous things in Switzerland.
17:14Ah!
17:15That is impressive!
17:17Yes, it's beautiful, isn't it?
17:19A giant waterspout in the middle of Switzerland's largest lake, listed among the great fountains
17:26of the world.
17:27For many, their first glimpse of Geneva.
17:31You must be able to see that Geneva over!
17:34But here's the surprising thing.
17:36The best vantage point isn't from this splash zone.
17:39It's from here, in France.
17:44Specifically, from Mont Salève, a mountain in the French Pre-Alps known as the Balcony of
17:51Geneva.
17:53Have a look at this view.
17:54The French Alps, over the other side are the Swiss Alps, and there, the Italian Alps.
18:01Sharing magical mountains and cuisine, this is the ultimate symbiotic relationship, European
18:08style.
18:09And in a continent renowned for its food, Geneva takes the unofficial title of gourmet capital
18:15of Switzerland.
18:16Dotted with Michelin star restaurants, even Europe's first Ottolenghi.
18:20Bold, delicious flavours that pack a punch.
18:23Much like their wines.
18:25Cheers.
18:30Santé.
18:33We don't get very much Swiss wine in Australia.
18:36No, most of the production is drink in Switzerland.
18:39Less than 30% exploitation.
18:41It's so good you're not giving it to the rest of the world.
18:43Yes, yes, yes.
18:45So, when in Geneva, sample some delicious Swiss drops for yourself, whether on the country's
18:51longest vineyard walk, or in a wine cave.
18:56Oh, it's almost making me want a fondue.
19:01Allez, allez!
19:03And of course, where there's wine, there's cheese.
19:07They say stir, so the last bite is just as good as the first.
19:14Have a look at that.
19:15Could there be a better setting?
19:17Lake Geneva, fondue on a tuk-tuk.
19:24C'est bon, c'est magnifique.
19:27Yep, tucker on a tuk-tuk.
19:30This gives cheese wheels a whole new meaning.
19:33And like most things here, I like it.
19:36I think sometimes they break them up into smaller pieces.
19:38A lot.
19:40And guides like Carlos only help elevate any Genevan experience.
19:45A lot of people like Geneva because Geneva, it's an international city.
19:52No.
19:54No.
19:56Rire de rien.
19:57No.
19:59Je ne regrette rien.
20:01No.
20:02We are in the French-speaking part of Switzerland.
20:06Edith Pierre feels like the right choice.
20:09No, je ne regrette tout le monde.
20:17Geneva may be the French-speaking city of Switzerland,
20:21Bonjour, merci.
20:23but they're the world's city of time.
20:29We've always worked with this.
20:31I thought you'd never ask.
20:33All right, what's next?
20:37You're going to put the movement on the case.
20:40Yes.
20:43It's a piece of mechanic made by hand.
20:46All the brands come from here.
20:48I feel naked if I don't have a watch in my hand.
20:52I haven't actually needed the monocle yet.
20:55I like it as a fashion item.
20:58Initium is one of the few places
21:00where you can create your own watch from go to woe.
21:03Voila.
21:04Voila.
21:04Team.
21:05And we're at home the same day.
21:09Wow.
21:10Have a look at that.
21:11That is beautiful.
21:12It's beautiful.
21:13And you know what that is?
21:15It's time to go.
21:15Okay.
21:17Sorry.
21:18I love this watch.
21:20Me too.
21:20Something special to take home from Switzerland.
21:22From the finest quality watchmaking materials
21:25to edible options.
21:27Quite unexpected, just like Geneva.
21:30So many options of places to eat, drink and ways to discover the city.
21:37Stay at Hotel Bristol.
21:39Their spa, the creme de la creme.
21:43And to top that, sun shining, zero degrees Celsius.
21:47There's only one thing left to do.
21:48Let's immerse ourselves in Lake Geneva.
