00:00:00Well, lifestyle and location, two words that sum up what makes a suburb great, especially
00:00:11in a big city.
00:00:12And Sydney's Lowell North Shore is what we're talking about here.
00:00:15I mean, Jo, take a look at this view.
00:00:17Honestly, I wish that we could stand here and soak that up all day, but Pete, you and
00:00:21I are going to be getting our steps up as we actually suss out a suburb that's going
00:00:24through some major changes right now.
00:00:26While also hopefully retaining the history and heritage that make it unique.
00:00:30Yeah, we are checking out the past and the future and plenty more coming up on Better
00:00:34Homes and Gardens as well.
00:00:37Tonight, Dr. Harry's carving up the skate park with a gnarly dude.
00:00:43So what has four legs and four wheels?
00:00:45Jato, the skating king.
00:00:49When your garden's got more concrete than the Acropolis, it's time to call in the A-team.
00:00:55It's just going to be like a perfect outdoor entertaining spot.
00:00:57Is that where we've got to start working now?
00:00:59Colin's pillowy potato dumpling recipe is more than just a puff piece.
00:01:04Today, I'm going to make you a special gnocchi, which is a green gnocchi with burnt butter
00:01:08and lemon.
00:01:10Visit a fairy tale garden that's brimming with magic.
00:01:13And this is only the beginning.
00:01:17Plus, we all love a good cuppa with dessert.
00:01:19But what if it is dessert?
00:01:23Matcha, white chocolate and macadamia nuts can't get any better than this.
00:01:38Most dogs love to go for a run on grass.
00:01:42But not my next dog.
00:01:43He's looking for concrete.
00:01:55Good morning, good morning.
00:01:56How are you both?
00:01:57Morning, brother.
00:01:58Good to see you, Greg.
00:01:59Very nice to see you, too.
00:02:01How are you?
00:02:01I'm here to have a look at this wonderful dog of yours.
00:02:04Right?
00:02:04Right.
00:02:05There's so many things this dog can do.
00:02:06He's able to go uphill using his hind feet to push himself.
00:02:24That's a learned skill.
00:02:26It's all him.
00:02:27He lifts one leg up to counter the balance.
00:02:29You'll see him with three paws on the board and one up as he's turning.
00:02:32He looks like a pro.
00:02:35It's all self-taught.
00:02:36He's done it all himself.
00:02:38We don't know why he likes this.
00:02:41We have no idea why he's into skateboards.
00:02:44He let us know the very first time he saw a skateboard that it was something he was interested in.
00:02:48So what happened?
00:02:49What was that occasion?
00:02:51Well, so he was about three months old.
00:02:52We only sort of just had him about two or three weeks.
00:02:55Yeah.
00:02:55And we went for a walk.
00:02:57A couple of guys came past on skateboards and he just went crazy.
00:03:00My style's over into the famous.
00:03:04They're always complaining.
00:03:07Always complaining.
00:03:09If money is such a problem.
00:03:13Well, they got matches.
00:03:16Think we should rob them.
00:03:18Well, took off after them.
00:03:20Straight at them, you know.
00:03:21And we were surprised because he was so small.
00:03:23But you could feel the strength in him.
00:03:25We thought he didn't like the noise.
00:03:27That's what our initial reaction was all.
00:03:29He doesn't like the noise and he's aggressive.
00:03:31Quite the opposite.
00:03:34He loves the noise and he's the most unaggressive dog you'll ever come across.
00:03:38Just about every dog in the world wants to go out and chase something.
00:03:43Yeah.
00:03:43Right?
00:03:43Yep.
00:03:44And some are very strong on it and some are very weak on it.
00:03:47Yeah, the odd dog is totally disinterested.
00:03:49But most dogs have this.
00:03:51And that's why they want to chase something that moves.
00:03:53He likes company, doesn't he?
00:04:05He loves it.
00:04:06Yeah.
00:04:06Loves kids.
00:04:07He's almost a pro in it.
00:04:08He loves children and women.
00:04:10He's a...
00:04:10He actually likes to show off.
00:04:14What does he weigh?
00:04:1630, almost 32 kilos.
00:04:18It's a pretty nuggety sort of doc, isn't it?
00:04:20Yeah, yeah, he's a chunk.
00:04:21And the difference between him and, say, a person on a skateboard is that he's got a
00:04:26much lower centre of gravity...
00:04:27He has.
00:04:28...than a person riding it.
00:04:29So he should have a better sense of balance.
00:04:32And four legs.
00:04:33Exactly.
00:04:35So you built in the skateboard, didn't you?
00:04:37Yes.
00:04:37You made it a bit wider?
00:04:39Yeah, well, I made it to his body.
00:04:40Okay.
00:04:41So his shoulder width is the width of the skateboard.
00:04:43Yep.
00:04:44And the length's one third longer than his body length, so he's got a bit of room to manoeuvre.
00:04:47You're a technical individual, aren't you?
00:04:49Engineer.
00:04:51Yeah, well done, mate.
00:04:52Well done.
00:04:53Oh!
00:04:53Oh!
00:04:53Oh!
00:05:00Let's do it!
00:05:02Let's do it!
00:05:04What do people think about him, you know?
00:05:06Does he attract attention when he's not skating, when he's just walking around?
00:05:11But a lot of people stop us and they're just like bulldogs.
00:05:14People like bulldogs.
00:05:15What do they ask you about him?
00:05:16Do they ask you how you train him to do all of these things?
00:05:18What do they ask you?
00:05:19Everybody.
00:05:21It's the standard question, how did you get him to do that?
00:05:29Tell me about your social media engagements with him.
00:05:32Probably 16, 20 million views of his videos.
00:05:4220 million?
00:05:43Yeah.
00:05:44I think that's fantastic, you know?
00:05:46And people will talk about Giotto and his skills.
00:05:49And the great thing about it is, mate, that, you know, he taught himself.
00:05:53He's a very inventive dog.
00:05:54A dog like this fills your life a little bit, you know?
00:06:02That would be the understatement of the century.
00:06:06That really would.
00:06:07Because this dog is everything to everybody.
00:06:10You know, he is an amazing dog.
00:06:12He's a one in a million dog.
00:06:14He really is.
00:06:14Have you got a mixture of levels and finishes?
00:06:21Well, I've got an easy solution.
00:06:22Just pave over the top.
00:06:24This is the setting of a storybook garden that shines all year round.
00:06:29This segment is brought to you by Shapescaper, the Australian-made modular steel landscaping
00:06:43system.
00:06:45Oh, Charlie, it's a bit nippy this morning.
00:06:48Man up, mate.
00:06:49Come on, you've been like snowmanning and skating through Canada.
00:06:52It's not that bad.
00:06:53Mate, that was hard work trying to stay upright.
00:06:55But most importantly, we've got a winter backyard makeover.
00:06:58Absolutely, we do.
00:06:59Now, this one's a little bit old school and a little bit quirky, but we can do quirky,
00:07:02right?
00:07:02Oh, I love quirky.
00:07:08Nice bit of grass here.
00:07:10Bit of buffalo, is it?
00:07:11Yeah.
00:07:13Jackie, Brad, nice to see you guys getting stuck into the work already.
00:07:17How are we, guys?
00:07:18What is this?
00:07:18Like a giant sand pit?
00:07:20Yes, we've got a lot of work ahead of us.
00:07:22Was this little slice of heaven always part of the dream?
00:07:25We kind of overlooked this corner when we were house hunting.
00:07:28And now we've got to the point where we have to figure out what to do with it, and we have
00:07:33no idea.
00:07:34Have you guys got kids?
00:07:35We do.
00:07:35We've got two kids and then another one on the way.
00:07:37Congratulations.
00:07:39Very exciting times.
00:07:40Very busy times.
00:07:42Yes, indeed.
00:07:42Now, I've got to say, I have seen this style of backyard before, having some Italian heritage
00:07:48in me.
00:07:48It is very European.
00:07:49So it's basically, let's concrete the whole block and have a strip of grass.
00:07:53So they've done a fantastic job of that.
00:07:54Well, you'd want your greenhouses up here.
00:07:56Yes.
00:07:56You know, your storage for your pots here.
00:07:58That's right.
00:07:58But you get all these trip hazards, and it's not exactly the safest for a young family,
00:08:02is it?
00:08:02Yeah, a little bit dangerous.
00:08:04So tell us a bit about the shed.
00:08:05Yeah, so it's an old outdoor laundry, as you can see.
00:08:08It's a little bit tired.
00:08:10We're not too sure if it's asbestos or not, and we're trying to work out whether we keep
00:08:14it or if we get rid of it.
00:08:15Yeah, it definitely would be asbestos, but it's actually in pretty good nick, so I reckon
00:08:19you might be able to get more mileage out of it just yet, but we'd have to get the
00:08:23experts in and see what they say.
00:08:25There's a bit going on.
00:08:26There is.
00:08:26We'll put our thinking caps on, eh?
00:08:27Leave it with us.
00:08:28That sounds amazing.
00:08:29I think you've got a big job ahead of you.
00:08:31Oh, Charlie, look, it's even got the old brick barbie here.
00:08:39Yeah, it does.
00:08:39Nice.
00:08:40But I tell you what, my brain hurts after all that thinking.
00:08:42Oh, hello.
00:08:44Where'd you get yours from?
00:08:45Well, your side of the wardrobe.
00:08:46Where'd you get yours from?
00:08:47Your side.
00:08:47Yeah, right.
00:08:48What have we come up with?
00:08:49Okay, so we've got a good bit of grass here for the kids, and I think we can turn this
00:08:53space into an entertaining area.
00:08:55So what do you think about building that for us?
00:08:57Yeah, definitely.
00:08:58Yeah, so utilise that area where there's no concrete.
00:09:00So we'll add a deck in, but leave a little cutout for a fire pit area.
00:09:03Oh, very nice.
00:09:04Now, because of the kids, I really need to level this out, but I really don't want to
00:09:08take away any of that concrete, because it's just going to cost a fortune, right?
00:09:11So I think we come up, and we level that with paving.
00:09:14Nice.
00:09:14Then where we've got our lovely shantytown, we can clad there and make that a cooking station.
00:09:18Hide it.
00:09:19Yeah, and then we can have an area for a table and chairs up there, and enclose it in lots
00:09:23of lovely planting.
00:09:24I love it.
00:09:24And then the old laundry, we can turn it into a little bit of a server.
00:09:28Yeah.
00:09:29So then the whole area just flows.
00:09:30Well, that'd be nice.
00:09:31This is going to be like a perfect outdoor entertaining spot.
00:09:34Is that where we've got to start working now?
00:09:35I think so.
00:09:36Well, the sleeves are rolled up already, so.
00:09:37Let's do it.
00:09:38Do I add this back onto the shantytown?
00:09:44Yeah, if you could.
00:09:44Now, lucky for us, Brad has cleared out all this soil, which is perfect for a deck, because
00:09:58we need to have clearance of at least 150 underneath our timber.
00:10:02So now that is done, we're just digging our post holes.
00:10:04We're going down about 600 deep.
00:10:06We'll set them in.
00:10:07We'll be able to put our bearers on our posts, and then set our joist at 450 centres.
00:10:11This is pretty easy to dig it, isn't it, Poe?
00:10:14I'll take this in either.
00:10:15This area up here, the top of the garden, is going to be our main entertaining paved
00:10:30space, and we are going to have a cooking station over there.
00:10:33But because it's so uneven, I want it to be nice and level.
00:10:35For that, I need to bring it up, and when you bring it up, you need to retain the sub-base.
00:10:39For that, I'm using some Shapescaper steel edging.
00:10:44Now, I absolutely love this stuff.
00:10:46You normally see me use it in a garden bed where you just put a stake in the ground, and
00:10:49you hook it up.
00:10:49But when you've got concrete, you just can't use the stakes.
00:10:52So I'm just using some angle brackets, which I'll attach to this concrete hob wall to give
00:10:57me a nice secure edge.
00:10:58We're going 150 step up, so it's a nice step up from Adam's deck, but it does come in a
00:11:03huge range of sizes, so it's really versatile, and will suit most gardens.
00:11:09With all the holes dug, they're about 600 mil deep, and now we're ready to put the posts
00:11:34in for that.
00:11:34We're just using some H4 treated pine.
00:11:37You want to make sure the main part is you get some concrete underneath the post, and
00:11:41obviously all the way around it.
00:11:43That way, it supports the light.
00:11:44As we wrap around the back of Adam's deck, I'm going to have a planter box.
00:12:04I'm using the same steel, but in a higher profile.
00:12:07That means we're going to get more soil in here and better success with our plants.
00:12:10Now, I'm actually using a prefabricated corner, but you can bend it yourself on site if you
00:12:15want.
00:12:15If you don't have a right angle, they can do custom work for you as well.
00:12:18Come on, let me pull you up.
00:12:28All right, all right.
00:12:29Oh, there we go.
00:12:29Look at you, you're utilising these massive muscles of mine, huh?
00:12:32I am.
00:12:33I'm freeing my mind to think about paving whilst you do the hard work.
00:12:37Oh, wow.
00:12:38When did you get so spiritual?
00:12:39Well, when the wheelbarrow turned up.
00:12:42Pretty clever.
00:12:42Clever, isn't it?
00:12:43This sand is going to cover a multitude of sins, Adam.
00:12:48Well, a cracking start and stick around because a little later, the decking and paving will
00:12:52start bringing the backyard puzzle together.
00:12:57What's important to you when you're looking for your dream suburb?
00:13:00We're getting our steps up on a walking tour to find out.
00:13:05Hot potato, hot potato.
00:13:06This week, we are cooking the perfect potato gnocchi.
00:13:13This segment is brought to you by VIEW.
00:13:20See all properties Australia-wide with VIEW.com.au.
00:13:37So Peak Process is turning out to be quite an enviable place for people to live.
00:13:41You've got the city, a stone's throw away, you've got heaps of dining options, you can
00:13:45still get a home in a green, leafy street.
00:13:48But best of all, it actually still has very much a sort of like welcoming community, village-y
00:13:53feel.
00:13:53It's got that vibe, doesn't it?
00:13:54I think it's going through its own little renaissance, and that's partly due to the
00:13:58introduction of the Metrolink.
00:14:00And look, people are really discovering this part of the North Shore.
00:14:02Well, at that transport hub you're talking about, you've got the Metrolink and the train
00:14:05station down the road, you also have a huge amount of sort of high-density developments
00:14:09that are springing up absolutely everywhere.
00:14:11It's got that vibe of a mini-city, which is like Chatswood next door.
00:14:15Yeah, well, I'll tell you what, I feel like I need to head off and do a bit of real estate
00:14:18research for myself, and I reckon I can guess the direction you're all in.
00:14:21I'm sure you can.
00:14:35If you love history, walking the back streets of Crow's Nest, you can certainly get your
00:14:40historic fix.
00:14:41Now, the suburb first took shape in 1821, thanks to a land grant to a bloke by the name
00:14:47of Edward Wilsencraft, who built his home and called it Crow's Nest, thanks to its commanding
00:14:53view.
00:14:53Since then, the suburb has grown up with a full cross-range of architectural styles, from
00:14:59Federation, Queen Anne, with the beautiful timber detailing, the fretwork and ironwork.
00:15:05It's a full cross-range of architectural styles.
00:15:08Combine all that with the luxuries and conveniences of a modern city.
00:15:12Wow, Ewan, this is just a wee bit gorgeous.
00:15:30Now, obviously, we're at the luxurious end of things that we're talking about.
00:15:34We certainly are.
00:15:35You're getting a larger size, definitely a bigger kitchen.
00:15:39You can see with the bench here.
00:15:40And also, you've got the big balcony.
00:15:42And I think that's probably one of the big selling features of it, is that you've got
00:15:46a lot of space.
00:15:47And this is a different style of product than what we maybe have traditionally seen in
00:15:51Crow's Nest in past years.
00:15:53But that's changed over time, as more and more apartments have come along.
00:15:58And as they build newer and newer buildings, you get a much different standard.
00:16:02And the standard's always going up.
00:16:04Can you still get in at an affordable price?
00:16:06Like, give me the range of what you can get in.
00:16:08Well, I mean, we could sell you a little studio, like a studio apartment in the middle of Crow's
00:16:13Nest itself.
00:16:14So, you know, they're very good value, you know, anywhere around that $600 mark.
00:16:18Then you can have one bedroom, $700.
00:16:20What's the top-end price, roughly, that you're talking about, Beau?
00:16:25Well, I mean, you could spend $5 million.
00:16:27Are you finding that they're selling the more traditional homes because of the convenience
00:16:32of transport and everything else you're talking about?
00:16:33Yeah, interestingly, I think the transport's made a big difference, even though we've had
00:16:37St. Leonard's station here, obviously, for a long time.
00:16:39But the Crow's Nest Metro's changed the dynamic completely.
00:16:42Crow's Nest into the city, it's like minutes.
00:16:44Yeah.
00:16:45And then what about the future?
00:16:46Where's it going and the direction that it's heading in?
00:16:49To be able to have this scale of redevelopment so close to the CBD, it's...
00:16:54Almost unheard of.
00:16:55Yeah, unheard of.
00:16:55And I think it's almost a once-in-a-lifetime opportunity.
00:16:59Well done, you.
00:16:59You're in the right place at the right time.
00:17:02After 30 years, you know, I've said it.
00:17:03So if you've been listening to Ewan and he's piqued your interest, do yourself a favour
00:17:15and download the view.com.au app.
00:17:18I mean, apart from the fact it has so much detail on any suburb that you're looking at,
00:17:21quite comprehensive, in fact, I reckon with real estate, one of the first things that
00:17:25people ask themselves is, how much could I borrow and what will my repayments be?
00:17:28You can just go straight to this little Home Loans tab and look at that.
00:17:32It says it all.
00:17:33Home Loans Made Simple.
00:17:34It's got a borrowing calculator.
00:17:36You can actually check your borrowing power.
00:17:38You can work out what your repayments will be.
00:17:40There's also these great step-by-step guys.
00:17:42So at no stage throughout the process will you feel overwhelmed.
00:17:45There's just so much information.
00:17:56Mr. Pete.
00:17:56Yeah?
00:17:57But I was talking with Ewan about the future of Crowsnest.
00:18:00Yeah?
00:18:00Well, talking about the future, these guys should mark.
00:18:03Awesome.
00:18:05Hello, Luke.
00:18:06How are you?
00:18:06Nice to see you guys.
00:18:07Welcome to Elevate, Hume Place in Crowsnest.
00:18:10This is actually such an awesome set-up.
00:18:11So this is it, hey?
00:18:13You bet.
00:18:13We're standing right here.
00:18:15Right.
00:18:15And this is known as Hume Place.
00:18:17Elevate is the only build-to-sell component of the development.
00:18:21We're very proud.
00:18:22This element is the only project in the state so far to give housing for keen essential workers
00:18:29in perpetuity for the healthcare network locally here in Crowsnest.
00:18:33Wow, that's great.
00:18:34And then the last element of Hume Place is our build-to-rent components.
00:18:38That's fantastic.
00:18:39That's seriously cool.
00:18:40Yeah.
00:18:40Well, I know a lot of people are excited, so let's go have a look.
00:18:42Cool.
00:18:43Here it is.
00:18:49Oh, my goodness.
00:18:50I mean, if you want to immerse yourself in a space, I don't think I've ever actually seen
00:18:54anything on this scale.
00:18:55Well, look, we believe when you buy something off the plan, it needs to be the best experience
00:19:00possible, and this is basically what you're going to get.
00:19:03Now, I've been walking through some of the beautiful, charming heritage streets.
00:19:07How do you balance what you're doing, new development, with the old world charm?
00:19:11Well, you bet.
00:19:12The reason we love this site so much, it's right in the middle of Crowsnest Village, and
00:19:16it's that old architecture combining with this new, modern high-rise, and I think we've
00:19:22got the balance right.
00:19:23Our podium is wrapped in old bricks that looks beautiful and timeless, and now people get
00:19:28to live above the metro, the only site in Sydney, and in minutes just to anywhere.
00:19:32To think that we're getting to build a once-in-a-generation project on top of a billion-dollar piece
00:19:38of infrastructure, it's a dream come true.
00:19:40Four Third Eye, and I think the residents are going to love it.
00:19:50Well, Pete, as we've touched on, I think the real appeal of Crowsnest is that mix of the
00:19:54old and the new.
00:19:55I mean, it really does encapsulate what a lot of suburbs are experiencing in the 21st century.
00:19:59Yep, and it's good to see the old being retained, Grigsy.
00:20:02What are you talking about me?
00:20:03No, in the form of gorgeous little heredity tones, got along the suburban streets off the
00:20:08main track.
00:20:09Although, I don't think we have focused on one of the most important things.
00:20:12I bet.
00:20:12The restaurant.
00:20:13You hungry?
00:20:14Always.
00:20:14Coming up, meet the little balls of potato, giving pasta a run for its money.
00:20:23I think that is a gnocchi that even a nona would be proud of.
00:20:29Adam and Tarly will do whatever it takes to bring this entertaining space to life, no matter
00:20:34the consequences.
00:20:36I'll tell you what, this wind is not doing wonders for your hair, is it?
00:20:38I need some manscaping, that's for sure.
00:20:40And their colour may be curious, but these brownies are off the charts great.
00:20:46That whole batter is going to turn bright green.
00:20:57Alright, believe it or not, this accent is not Italian.
00:21:02But I can cook gnocchi, and today I'm going to make you a special gnocchi, which is a green
00:21:07gnocchi, with burnt butter sauce, and baby beets.
00:21:14Alright, so basically gnocchi is potatoes, it's flour, and it's eggs, and you can flavour
00:21:20it with herbs.
00:21:21You want your potato as dry as possible.
00:21:24So what you're going to do is, you've got your potatoes, I line the bottom of the tray
00:21:28with some rock salt, just some chief rock salt, and lay the potatoes on the salt.
00:21:33So it's about 10, 11 potatoes, which is 1.2 kilos, in the oven for about 40 minutes to
00:21:39an hour, until they're beautiful and soft.
00:21:41I like to flavour the flour with the herbs, so you get all that green running through the
00:21:46gnocchi and you get all the flavour.
00:21:47And the best way to do it, is to blend it.
00:21:51I got about 110 grams of flour.
00:21:53So that goes into my mixer, as messy as I can.
00:21:59Bunch of sage.
00:22:02That goes in.
00:22:05Rosemary.
00:22:07Just take it off the stalk.
00:22:12Italian parsley.
00:22:13It's the only Italian bit in the dish.
00:22:15And now, just give it a blend.
00:22:22Alright, so have a look at that.
00:22:25Oh, you can smell it.
00:22:31Alright, so, the potato, soft, salt's done all its job.
00:22:35What we want to do now is, there's no way around this, you've got to do it when it's
00:22:38hot.
00:22:39If the potato gets cold, the starch locks in, and you're not going to get a good gnocchi.
00:22:43So you're just going to cut them in half.
00:22:47This also helps dry them out as well.
00:22:59Alright, large bowl.
00:23:01Potato ricer.
00:23:02If you don't have a potato ricer, you could just mash them up really fine.
00:23:06You're going to scoop out your hot potato.
00:23:10Into your ricer.
00:23:12Irish man's dream.
00:23:22Alright, to the potato.
00:23:23You've got to cheese it up.
00:23:25Parmesan.
00:23:27About 200 grams.
00:23:31Alright.
00:23:32We've got our flour we did earlier.
00:23:37Alright.
00:23:38There's our flour.
00:23:39So I like to gently fold it through before we put the eggs in, just to incorporate all
00:23:45that flour.
00:23:46Now we're going to add three egg yolks, just to lock it together.
00:23:51This one binds it.
00:23:55One.
00:24:00Two.
00:24:01And then the tool I use to bring it together, very kitchen-y, use a paint scraper.
00:24:13Because it helps get in.
00:24:15You don't really want to work it too much with your hands, you want to work it with the steel.
00:24:18So just chop it in.
00:24:25A little bit of our flour, just on the bench.
00:24:29So it's all by touch.
00:24:31So just take it out.
00:24:32Obviously you don't want it wet and gloopy.
00:24:35And all you want to do, is you want to bring it together.
00:24:38It's not like bread, you don't want to knead it.
00:24:40You just want to bring it together.
00:24:41All right.
00:25:06Just give your gnocchis a little squeeze, just for presentation.
00:25:10Lay them on your tray.
00:25:22All right.
00:25:22Now what you do is, straight into the boiling water.
00:25:29So, easy way to tell if your gnocchi's cooked.
00:25:31What happens is, you drop it into the boiling water, it sinks to the bottom.
00:25:35As it cooks and the egg cooks inside, it rises to the top.
00:25:38That's when you know it's ready.
00:25:40Scoop it out.
00:25:41There we go.
00:25:44Look at that.
00:25:46A little bit more firm.
00:25:47Not too firm.
00:25:55All right.
00:25:56Gnocchis, put them in the warm oven.
00:25:57It's turned off.
00:25:58Just leave them there to warm.
00:25:59Good gnocchi needs a good sauce.
00:26:02A good sauce can be a very simple sauce.
00:26:04So about 250, 300 grams of butter into a warm pan.
00:26:09It's going to separate and it's going to caramelize.
00:26:11We're going to get a nice brown color.
00:26:15Get our sage in.
00:26:17So you're going to get a nice crack smell.
00:26:18You ready?
00:26:19Cook your sage until it's crisp.
00:26:27Add your capers and your juice.
00:26:29About 100 grams.
00:26:33A bit of stir.
00:26:34Oh, yeah.
00:26:38Now I'm going to use the zest for the lemon and the juice.
00:26:41Give that a start.
00:26:55Beautiful.
00:26:58Just going to toss them through the sauce.
00:26:59So that's like that.
00:27:08Right.
00:27:09So you've got your warm gnocchi.
00:27:10You've got your beautiful butter sauce.
00:27:23Pair your gnocchi with a vegetable that's in season.
00:27:26So obviously, raw baby beets.
00:27:28So just cut it nice and fine.
00:27:29Toss that in the bowl.
00:27:34A little bit of our dressing.
00:27:38Stir it.
00:27:40Bit of the green.
00:27:41Look at that.
00:27:45And then, always, always, more cheese.
00:27:50I think that is a gnocchi that even a nonna will be impressed with.
00:28:00Do you remember that great Aussie film classic, babe?
00:28:13Well, it was set in the green heart of the southern highlands of New South Wales, right here, in fact, in the rolling hills of Robertson.
00:28:30A rich volcanic soil and an abundance of rain that has also helped to create some of the finest picture book gardens in the country.
00:28:43The Moorings is a 40-hectare heritage farm.
00:28:55It was established in the 1870s by a naval lieutenant.
00:28:59Now, back then, he bought 100 acres for 100 quid.
00:29:05A great deal.
00:29:06Today, the current owners have restored the original homestead and have extended it.
00:29:12But for me, what is really magical, they've also created a two-hectare ornamental landscape with foliage and year-round interest at its heart.
00:29:21Once you come down the driveway into the turning circle here, where the coach and four would have dropped off its passengers to the homestead,
00:29:38it's a very different wintry look with these bare traceria branches going up into a grey sky.
00:29:45They create the skeleton, the bones, the structure of this garden, especially they're visible in winter.
00:29:51But, you know, there's a more permanent look in this garden that's here every single day.
00:29:56It's these clipped hedges of azaleas, of camellias.
00:30:00But the flowers are secondary to the forms and the shapes that they come in.
00:30:05And this is only the beginning.
00:30:16The Conifer Garden has to be the signature piece of this property.
00:30:20In fact, it's probably one of the best in the entire district.
00:30:29Hey, Les.
00:30:31Oh, great.
00:30:31How are you, mate?
00:30:32Yeah, good. Thank you.
00:30:33You yourself?
00:30:33Good, good. Excellent. Thank you, pal.
00:30:35Wow. Is this your handiwork?
00:30:37It is, yes.
00:30:38Man, how long have you been doing that for?
00:30:40You're the head gardener, so, OK.
00:30:42Tell me how long you've been working on this.
00:30:44About ten years.
00:30:45You know, you've got a cypress here.
00:30:47Yes.
00:30:47In fact, you've got copressus, platyclatus, you've got thuyas.
00:30:51In fact, it's a great collection.
00:30:53The owner, Don, really had a fascination with them.
00:30:57Don Dyer absolutely loves conifers.
00:31:00And so, yeah, he just, whatever he could find, he decided to plant.
00:31:05Well, he's gone right to the top.
00:31:07Look at the cryptomeria up there.
00:31:09Yep.
00:31:09It's got that winter colour, doesn't it?
00:31:11Absolutely beautiful.
00:31:12Now, Don, obviously, has, what, has he got a horticultural degree or something?
00:31:16No.
00:31:17Really?
00:31:18He's a nuclear physicist.
00:31:20Oh, really?
00:31:21Wow.
00:31:22Yep.
00:31:22But he really had a passion for plants, obviously.
00:31:25He did.
00:31:34So, Liz, how long does it take you to keep this conif garn looking so neat and tidy?
00:31:39Probably about a day and a half with the whole, all the fine little bits and pieces and having
00:31:45to get in and...
00:31:46How often, though?
00:31:48Probably every three months.
00:31:49Oh, all right.
00:31:49Once it starts to get a little bit of, a little bit of legginess on it.
00:31:53Yeah, a bit of furry.
00:31:53A bit of furry.
00:31:54I just love this golden hanoki cypress.
00:31:58The interesting thing, it's like it's been sprayed with gold paint, because it's all gold
00:32:02on the top, but green underneath.
00:32:04Yeah, there's always something to look at in the conifer garden all year round.
00:32:08Just gives that a little bit extra.
00:32:10It's a real lift, isn't it?
00:32:19It's at the front of the house where the magic really reaches its peak, because you've got
00:32:25this wonderful view and the homestead itself.
00:32:27The tree, the poplar, was most likely planted by the naval lieutenant.
00:32:31It's a really old, old tree, well over a hundred years of age, like these beautiful brush box.
00:32:38This my escalation to rule.
00:32:44In later years, the garden provided a great opportunity for Don and his wife Barbara to
00:32:50entertain the grandchildren, and they just loved the garden.
00:32:53It's really Don's plant selection that has helped Les create these beautiful clipped hedges
00:33:00and domes and shapes, like this Eliagnus here.
00:33:04There is a bit of variegation in it, but it's nice and tight and compact.
00:33:07The secret when you're wanting to select these plants is small, twiggy leaves and twiggy growth.
00:33:13Bigger leaves, you've got too many gaps in the dome.
00:33:16And look at this Laura Petalum.
00:33:17You just look across the top there, you can see those pink new growths up against a blue sky.
00:33:22It really is quite stunning.
00:33:24But the scene is set by this beautiful conifer archway.
00:33:29As you go through, don't forget to look up to see the bones, the structure that creates
00:33:34this wonderful archway.
00:33:36The fascinating thing is that every room, including the conservatory, looks out over this spectacular view.
00:33:59Do you know, it doesn't matter what century you're building in, that real estate saying
00:34:04of position, position, position, still holds firm.
00:34:08It's all about this glorious view.
00:34:10And don't worry, there's so much more coming up from the moorings a little bit later in the show.
00:34:15Now that's an eyesore, if ever I saw one.
00:34:25You want to see an easy way to cover it up?
00:34:28Some clutting.
00:34:29I promise you, this is not an experiment that went wrong.
00:34:33It's my delicious, sticky, chewy matcha brownie.

00:35:19Alright, Charles.
00:35:20Come on, son.
00:35:20Let's try to get some decking and paving down.
00:35:22Chop, chop.
00:35:23No rest for the wicked.
00:35:25Coming.
00:35:31From a backyard that was a concrete jungle to a beautiful entertainment zone.
00:35:35Well, that's the plan that Charlie and I have anyway.
00:35:41And for our decking boards, we've gone with a nice hardwood.
00:35:44Now, for this one, I have chosen Merbu or Merbau.
00:35:47Now, these are sustainably sourced.
00:35:49They come in beautiful long lengths.
00:35:51They'll span our whole deck and they're 140 wide.
00:35:54So, they're going to tie in with our fence and this whole entertainment area perfectly.
00:35:57It is well worthwhile putting some time and thought into your paving layout because you
00:36:25do need to consider drainage.
00:36:27Now, think of this as a big umbrella that's going to catch water.
00:36:30You need to direct that somewhere else.
00:36:32You don't want to send it to the neighbors.
00:36:34And I want a nice flat line here so when it meets Adam's deck, it looks like it's well
00:36:38thought out.
00:36:38So, we're draining upwards this way.
00:36:41That also sets my layout for my pavers.
00:36:43I'm using 600 by 400 because I want that contemporary look.
00:36:45But I'm doing a stack bond back just to accentuate the lines of the decking.
00:36:49Now, this is a color called cypress.
00:36:51And I know what you're saying.
00:36:51Why are you using a light color like cypress when it comes to an entertaining space?
00:36:55Well, these have been pre-sealed so you can spill as much wine on them as you like.
00:36:59It's just like paradise.
00:37:01Standing in the light.
00:37:04Breathing in the time.
00:37:06It's just like paradise.
00:37:08It's just like paradise.
00:37:12It's just like paradise.
00:37:14Charlie and the guys have done a fantastic job on this paving.
00:37:27It's looking awesome.
00:37:28But now, it is time to address this eyesore.
00:37:31For that, we've built a simple frame just using some 90 by 45 treated pine.
00:37:36And what we're going to do is slide it into place and use this existing fence on each side
00:37:41to fix it off.
00:37:42And then I'm going to get some shiplap cladding out of the cement sheet and we'll clad it.
00:37:47It's going to look fantastic.
00:37:47Before we can move on with the rest of the garden, we have to address the asbestos on the shed.
00:38:14So, we've brought in the professionals to sort that out.
00:38:32Our backyard is coming together.
00:38:34But what about our old laundry shed?
00:38:37Well, the asbestos guys have been and gone.
00:38:39And we've got our safety certificate.
00:38:41The team is hard at work and they've started with fixing up this framework for our new servery.
00:38:47Now, because so many Aussie backyards have old sheds just like this one,
00:38:51there's a heap of information we want to share with you about the safe testing and removal of asbestos.
00:38:57So, keep an eye out for this shed story on next week's show.
00:39:05Charlie.
00:39:06Yes.
00:39:06My goodness gracious me.
00:39:07It's rusty box central around here.
00:39:09No, it's good, isn't it?
00:39:10It's hard, it's cool.
00:39:11Same stuff as we used to the edging, but it's got that lovely patina to it now.
00:39:14Takes a couple of days and you get that nice look to it.
00:39:17Because I was going to say something, when I saw you putting in the edging, I'm like,
00:39:19oh, it's a bit silver, mate.
00:39:20It's not really blending in with the deck.
00:39:22No, this goes perfectly.
00:39:23And these boxes are actually really fantastic.
00:39:24You can get them as boxes or in parts, different sizes, put them together on site,
00:39:29or they come like this.
00:39:30Yeah.
00:39:30Yeah, and they do custom work as well.
00:39:32Yeah, it's fantastic.
00:39:32I'll tell you what, this wind is not doing wonders for your hair, is it?
00:39:35I need some manscaping, that's for sure.
00:39:36Do you want a hand putting these in?
00:39:38Yeah, I'll just drill this side off and then we'll lift them in.
00:39:40All right.
00:39:48That's me saying up.
00:39:49Yeah, it was a touch over the top, wasn't it?
00:39:55How many?
00:39:56All right.
00:39:59Thank you, that way.
00:40:04Now, Charlie, I do need to ask, I mean, obviously these pavers are a light colour.
00:40:08Is, you know, these boxes going to leach all over the beautiful white pavers?
00:40:12Well, these have been sealed four times.
00:40:14And like a red wine, the stain will come off.
00:40:16So I'm not worried about it.
00:40:17Once the patina is fully matured, it won't leach any more.
00:40:20Yeah, nice.
00:40:21All right.
00:40:21So we're saying we're safe.
00:40:23Safe is housing.
00:40:23I think we're pretty safe, yeah.
00:40:24Nice.
00:40:31Here comes the patio pit.
00:40:33Will it fit?
00:40:34Will it fit?
00:40:34Of course it will fit.
00:40:36Will it fit?
00:40:37Yeah.
00:40:38Will you stick?
00:40:40How good's that?
00:40:41It's lovely.
00:40:42All right.
00:40:42A couple of screws.
00:40:43The way we go.
00:40:43It works.
00:40:47Not me, I'm gonna love me the right way.
00:40:50But I'll sit in my own pace.
00:40:53Only one burning in my ways.
00:40:56Feeling blessed like every day.
00:40:59I'm the real deal, putting on the phone page.
00:41:02Baby, I'm about to bring a good time.
00:41:05All right.
00:41:05I'm gonna chase it, babe.
00:41:08I'm running, running, running, running.
00:41:12I'm running, running, running.
00:41:15Oh, the final piece of the puzzle, Charlie.
00:41:27That looks very, very nice.
00:41:29Hey?
00:41:30It's all coming together, isn't it?
00:41:31Yeah, it is.
00:41:32All right, ready?
00:41:32Is that centre?
00:41:33It's pretty close.
00:41:34Very good.
00:41:34Do you know what this garden needs?
00:41:35What does it need?
00:41:36It needs some much-needed planting, I think.
00:41:38It definitely does.
00:41:39And that's coming up, as well as me, doing the final touches on the shed.
00:41:42Yeah, and we're gonna find out exactly what Jackie and Brad think of this amazing garden.
00:41:46Yeah, I'm excited.
00:41:47Do you want me to put that in the centre?
00:41:49Yeah, thanks, mate.
00:41:50Thanks.
00:41:53So, Logie's voting is open now.
00:41:55Neem Granger, I believe you are in the running for one of these.
00:41:58Yes.
00:41:59Well, I believe you and your Better Homes and Gardens team are in the running for one of these.
00:42:06To be honest, you still get dibs because you potentially on the night could win one of these
00:42:09and one of these, but of course, none of it will happen unless you vote for us now.
00:42:13Yes, go to tvweeklogies.com.au.
00:42:17Is that right?
00:42:18Yeah, but Lynne for the win.
00:42:19Yeah.
00:42:20Oh, thank you.
00:42:22Better Homes for the win.
00:42:24It does look radioactive, doesn't it?
00:42:29Even in the colder months, you might be surprised what spectacular colour you can grow in your garden.

00:43:12I think matcha is the new black.
00:43:19From mochis to smoothies and lattes and ice cream, it is everywhere.
00:43:25And if you are a lover of matcha, then this is the recipe for you.
00:43:31My white chocolate matcha and macadamia brownie.
00:43:35So we're going to start off with melting the white chocolate.
00:43:38Here I've got 175 grams of white chocolate.
00:43:42I'm going to chop them into smaller bits.
00:43:44I'm going to melt the white chocolate on a double boiler.
00:43:55All you need is a saucepan and a bowl with water underneath it boiling.
00:44:03Now to that, I'm going to add 195 grams of unsalted butter.
00:44:07This will take no time to melt.
00:44:18Just keep an eye on that.
00:44:27That is done.
00:44:29It's nice and smooth.
00:44:31I'm going to take it off the saucepan because what I want to do is I want to cool it down
00:44:36before I mix it in with the other ingredients.
00:44:41In a separate bowl, I'm going to mix 220 grams of white granulated sugar.
00:44:51Three eggs.
00:45:06So it looks like the sugar has melted.
00:45:09I'm going to add about one tablespoon of vanilla essence.
00:45:17I'm going to see what the temperature is like with the white chocolate.
00:45:23Because you don't want to add it while it's still too hot.
00:45:27Because I don't really want to cook the eggs.
00:45:29Add this to my egg and sugar mixture.
00:45:42Next, the dry ingredients.
00:45:45Sifting 145 grams of all-purpose flour.
00:45:49I've got two tablespoons of ceremonial grade matcha.
00:45:57I suggest to get the ceremonial grade matcha for this recipe.
00:46:05Sift that in with the flour.
00:46:09Got sea salt here.
00:46:13Got one teaspoon.
00:46:15If it's a coarse sea salt, try and break the little granules a little bit before you put it in.
00:46:26Give it a quick stir.
00:46:32And now I'm going to add it to the wet ingredients.
00:46:36Add a couple of tablespoons at a time.
00:46:39And just fold it through.
00:46:45It's a white chocolate brownie.
00:46:55So I've got more white chocolate.
00:46:57Here I've got 150 grams of white chalk chips.
00:47:02You can add as little or as much as you want.
00:47:06But try to stay away from too much.
00:47:09Because you don't want it to be too sweet either.
00:47:12So just slowly fold that in.
00:47:15And then I've got the macadamia nuts.
00:47:21I'm going to give it a quick rough chop of the macadamia nuts.
00:47:25I've lined 20 by 20 centimetre pan with some baking paper.
00:47:45It is going to taste delicious.
00:47:48Into the oven at 160 degrees.
00:47:56For about 25 minutes.
00:47:59This looks just about done.
00:48:14And you can still see a little bit of the batter on it.
00:48:19And that's perfect.
00:48:20Two hours to cool down before we serve it.
00:48:35It's going to be easy now to just lift that up.
00:48:39And take all of that out.
00:48:48And for the topping, you can leave it as it is.
00:48:51It doesn't make a difference.
00:48:52But if you want to make it look a little bit prettier,
00:48:55just a slight dust of matcha powder.
00:49:00I'm going to take the biggest one here out of this slice.
00:49:16Perfection.
00:49:30The white chocolate, the gooey green matcha brownie,
00:49:36and the beautiful macadamia nuts.
00:49:48Speechless.
00:49:55Well, things might be getting a bit chilly and slowing down in the garden,
00:49:59but you're just a few clicks away from turning up the heat
00:50:02because we'd like you to vote for a Logie for better homes and gardens
00:50:07in the lifestyle program category.
00:50:09Now, look, you know, we really enjoy giving you gold medal performances
00:50:13every week and showing you spectacular, beautiful
00:50:17and inspirational gardens from anywhere.
00:50:19Now, we'd like you to share the love back just a little by voting for us.
00:50:23A Logie for better homes and gardens in the lifestyle category.
00:50:27Go to it and thanks.
00:50:28Coming up, there's so much to see here.
00:50:34Graham doesn't know where to look first.
00:50:36The fascinating thing about this garden,
00:50:38the more you explore, the more you discover.
00:50:41And Adam and Charlie set the stage for this garden's debut.
00:50:45I have to say, we've done a pretty good job on this one.
00:50:47I'll tell you what, I'm feeling pretty comfortable here, mate.
00:50:49It's good, it's good, it's good.
00:50:50Well, the transformation of our concrete jungle
00:51:00is coming along very nicely.
00:51:02Yes, and how good does this deck look?
00:51:03It looks fantastic, almost as good as my paving and planters.
00:51:06But now it is time to get some plants into the round,
00:51:08so let's start with these hedges.
00:51:09They're beautiful.
00:51:09They're huge, mate.
00:51:10The trees I'm using for my hedge
00:51:23are called Iliocarpus reticulatus,
00:51:26otherwise known as the blueberry ash.
00:51:27Now, this is a native that I absolutely love.
00:51:29It gets covered in sort of a nodding flower
00:51:31which has a fringe on the end
00:51:32which turns into a blueberry
00:51:34which is a perfect food for native birds.
00:51:36Now, this does turn into a tree,
00:51:38but it is quite columnar
00:51:40which means it grows upright
00:51:41and you can prune it.
00:51:42What I'm imagining here is,
00:51:44well, I'm going to grow it upright
00:51:48against this fence
00:51:49because it looks fantastic
00:51:50but as it gets bigger,
00:51:52keep it quite narrow and pruned.
00:51:53You can remove the lower branches
00:51:55which will give you more space below
00:51:56to introduce some more planting.
00:52:06Look at you.
00:52:07play some plants.
00:52:09I've got no idea what I'm doing, Charles.
00:52:10That's all right.
00:52:11Just make it up.
00:52:11Maybe I've made a career out of it.
00:52:18Because we're planting this garden up
00:52:19in the middle of winter,
00:52:20I'm using a lot of textural plants
00:52:22just to add some interest.
00:52:23Now, we've got some really broad leaves
00:52:24like the Ligularia,
00:52:26some flying clipped leaves
00:52:27like this Wastringia,
00:52:29but I'm also using some strappy leaves.
00:52:30We've got fine strappy leaves
00:52:31in the common rush, the Juncus.
00:52:33We've got slightly thicker in the Lyriope
00:52:35and then sword shape
00:52:37in this Sansevieria moonlight.
00:52:39It's going to give us
00:52:39a really nice planting scheme
00:52:41which looks good all year round.
00:52:42And how much better is our shed looking?
00:52:57With the new cladding that's freshly painted,
00:53:12it really just lifts this whole area.
00:53:14Make sure you tune in next week
00:53:16to see how we brought it back to life.
00:53:18Now, we're going to be putting this on the wall here.
00:53:20It's going to be storage for the wood for our fire pit,
00:53:23but it is pretty heavy
00:53:24and you know who's got the biggest muscles of them all.
00:53:27It's only one person.
00:53:27Charlie!
00:53:28Oh, mate.
00:53:29Yes, indeed.
00:53:30Yeah, we were going to use your muscles, mate,
00:53:31but...
00:53:32Too much power.
00:53:33It is a bit dangerous, yeah?
00:53:34So Pete and I will lift and you can fix.
00:53:35OK.
00:53:36Yes, there it is.
00:53:47There we go.
00:53:48All right.
00:53:49Beautiful, mate.
00:53:50Lovely, mate.
00:53:50Hey?
00:53:51That wasn't hard, was it?
00:53:53Perfect little wood stack,
00:53:54nice bit of garden art at the same time.
00:53:56It is absolutely gorgeous.
00:53:57Yeah, I love it.
00:53:58Ah, it worked well.
00:53:59All right, keep planting.
00:54:00All right, you're going to put your little bee wings on
00:54:01and sit in there as well?
00:54:02Oh, what's going on here, Charles?
00:54:18Well, I know how you've got yourself a logi and all, Adam.
00:54:21Oi!
00:54:22I just thought I'd create you a nice little green room up here.
00:54:25Ah, yes, that's what I'm talking about.
00:54:27A nice hedge.
00:54:28I love it.
00:54:28And actually, these plants look very familiar, mate.
00:54:32Oh, yeah?
00:54:33You can amaze me.
00:54:34Yeah, well, I reckon I've seen them in Nonna and Nonna's backyard.
00:54:38I used to go there and pick the olives off
00:54:40and have a bit of a...
00:54:41Am I correct?
00:54:41You're correct.
00:54:42Now, this is a variety called Bambolina.
00:54:44It's a dwarf variety and it's a really dense variety,
00:54:46so it's perfect for hedging.
00:54:47You can see all this foliage down here.
00:54:49So you're just going to have a whole wall
00:54:50where I can just pick olives from everywhere?
00:54:52Ah, you grow this one for the foliage, not for the fruit.
00:54:55It's a part, sir.
00:54:56Yes.
00:54:57You're a little bit crazy, aren't you?
00:54:58Yes.
00:54:58No, but it all makes sense.
00:55:00I love it, Charlie.
00:55:01They do look beautiful.
00:55:02That's going to blend in with this area
00:55:03because we do have a pizza oven going in.
00:55:05Mm, very nice.
00:55:06But you've just got to remember to bring your own olives.
00:55:08And marinate them first.
00:55:09Yeah.
00:55:24Looks like you're having fun.
00:55:25What's pizza oven in Italian?
00:55:27Oh, mate, I don't know, but I'll tell you what,
00:55:29I'll rule one of these.
00:55:30Yes.
00:55:30If you want to eat one of the best pizzas you've ever had,
00:55:33get me to make it for you.
00:55:34Okay.
00:55:34Just a heads up.
00:55:38Nice.
00:55:47This is a serious setup here, Charles.
00:55:49It is.
00:55:57Nice.
00:56:01Oh, look at that.
00:56:03I have to say, we've done a pretty good job on this one.
00:56:05I'll tell you what, I'm feeling pretty comfortable here.
00:56:06Yeah, it's good, it's good, it's good.
00:56:08This is relaxing.
00:56:09Who's that?
00:56:10Oh, Brad, Jackie.
00:56:12Hey.
00:56:13How are we, guys?
00:56:13Hi, good, thank you.
00:56:14Hey, guys, good, thanks.
00:56:15Oh, we were just enjoying the area.
00:56:17Yeah?
00:56:17Yes.
00:56:18Oh, goodness, what a transformation.
00:56:27This looks absolutely amazing.
00:56:29I'll definitely forget how it looked before.
00:56:32It looks just so different.
00:56:34A little bit different, isn't it?
00:56:35Really different.
00:56:37And you've got the fire pit there, too, which looks great.
00:56:39Absolutely.
00:56:39Surrounded by gravel, so it's nice and safe for the deck.
00:56:41Adds a little bit of a feature to the deck as well.
00:56:43That's right, and that deck gives you a nice level platform
00:56:46where you can obviously set up these lounges
00:56:48so you can kick back and relax and create some fun family talk.
00:56:51Yeah, and roast marshmallows with the kids.
00:56:53They will love it.
00:56:54Yeah, but come and have a look at your new dining area.
00:56:59So up here, we've played with the levels
00:57:00using all the concrete that was here to create our base,
00:57:03and we've got a lovely paved area
00:57:04with a pretty big dining table, I have to say.
00:57:07Well, it's amazing, yes.
00:57:08It'll fit all of us here.
00:57:10Yeah, and you've got the barbecue
00:57:11and even a pizza oven as well.
00:57:13Oh, the kids will be excited for the pizza oven.
00:57:14That's awesome.
00:57:15I'm going to see the pizza.
00:57:16Have a seat.
00:57:17Try out your new table and chairs.
00:57:18Okay.
00:57:18This is where you have your fiestas,
00:57:20your little Mediterranean hangout.
00:57:22Oh, it's amazing, yes.
00:57:24I'm loving the colours as well.
00:57:25We've got the, like, a sage green.
00:57:27But do you remember your old shed?
00:57:30Yeah.
00:57:30All right, someone have a look at this.
00:57:31Oh, my goodness.
00:57:34Wow.
00:57:35Such a big difference.
00:57:36It looks so different.
00:57:37I barely recognise it.
00:57:38But do you know what makes your shed look so good?
00:57:39What's that?
00:57:40All these plants, of course.
00:57:42Oh, of course.
00:57:43Brilliant.
00:57:43Of course, Charlie.
00:57:44The plants are amazing.
00:57:45Yeah, it's all lovely, low-maintenance textured stuff,
00:57:47so it's going to look good all year round for you guys.
00:57:49Yeah, I'm really liking the colours as well.
00:57:51But come and have a look at the shed.
00:57:52Come on.
00:57:53Now, remember, it was covered in asbestos,
00:57:56so we were correct in thinking that it was.
00:57:58We've had it safely removed,
00:57:59and now we've got this beautiful new cladding on,
00:58:02and how fresh does it just make this whole area?
00:58:04Yeah, brilliant.
00:58:04The absolute bar area looks brilliant.
00:58:06Jackie, you can go in and have a look.
00:58:08Yeah, I'd love to.
00:58:08We've got the new servery window.
00:58:10We've got a new bench top that spans all the way
00:58:12with a great-sized sink as well.
00:58:14What do we think, Jackie?
00:58:15It's amazing.
00:58:16I love it.
00:58:16There's a sink in here.
00:58:17There's even a bar fridge, Brad.
00:58:19Can we see what the kids think?
00:58:20Yeah.
00:58:21How you doing?
00:58:22What do you think?
00:58:24Looks really different, doesn't it?
00:58:25What do you reckon?
00:58:26Have we got a thumbs up?
00:58:27Yeah.
00:58:28Double thumbs up.
00:58:29Double thumbs up.
00:58:30Got to be a winner, yeah?
00:58:31I think our work here is done.
00:58:33Enjoy, guys.
00:58:37Look at this.
00:58:38We've got a whole big table to sit on.
00:58:40How cool is that, huh?
00:58:49Have you got a damp, shady spot in your garden?
00:58:51Why not invite the ferns in?
00:58:53Custom-made curtains can be really expensive,
00:58:57but this is a brilliant way to get the same look
00:59:00using ready-made curtains.

00:59:31In the colder months of the year,
00:59:49there are some landscapes that really stand out
00:59:52and create a beautiful serenity.
00:59:56Here at the Moorings Garden
00:59:57in the southern islands of New South Wales
01:00:00is one such garden.
01:00:01It is just so beautiful at this time of the year.
01:00:05The weeping willow reflected in the pond
01:00:07and, of course, the silver birch.
01:00:09Even the trunks covered with a little bit of lichen.
01:00:12The Japanese maples, bear and stark.
01:00:16And then, of course,
01:00:17with seasons sort of rotating, getting mixed up,
01:00:21we're so lucky to see these beautiful red-hot pokers.
01:00:24The Nifophia, this variety is tall and elegant,
01:00:28with its great spires, these flames of orange and red.
01:00:31It's a real standout here looking across the landscape.
01:00:35And the pond looks even more mysterious.
01:00:38The brilliance of the owner
01:00:52to create these intimate enclosed spaces,
01:00:55garden rooms, if you like,
01:00:56we've seen so much of.
01:00:59But here, he's thrown the garden design book out
01:01:02and created something completely different.
01:01:04This is the sculpture garden.
01:01:06But he's allowed the trees to tell their story.
01:01:17Whether it's conical, weeping, vase-shaped,
01:01:20whatever the trees are, they're looking natural.
01:01:23But instead of enclosing, he's pulled the curtains back.
01:01:27You know, maybe Japanese-borrowed landscape style
01:01:29and what a landscape it is.
01:01:31This is the Yarua brush,
01:01:33the last remnant cool climate rainforest in the area.
01:01:37Highly protected.
01:01:38And what a vista.
01:01:40Anywhere the wind blows,
01:01:42it doesn't really matter
01:01:43because it all just ends the same.
01:01:49The fascinating thing about this garden,
01:01:51the more you explore, the more you discover.
01:01:53And this area here could be no more of a contrast
01:01:56than the one that we've just been in.
01:02:04Here, it reminds me that so many people ask me,
01:02:08oh, what happens when I grow these beautiful trees?
01:02:11And it creates a totally different environment.
01:02:13Shade, moist soil,
01:02:15and all your roses and azaleas and things tend to disappear.
01:02:18Well, why not go for Australian?
01:02:21Beautiful ferns.
01:02:22We've got a fantastic collection of ferns
01:02:24that grow in these sorts of locations.
01:02:27The tree ferns,
01:02:28these beautiful bird's nest ferns.
01:02:30I just love them.
01:02:30They're so dramatic and sculptural,
01:02:33architectural in a garden.
01:02:34Rasp fern.
01:02:35Talk about architecture as a ground cover.
01:02:37And then, of course,
01:02:39yep, good old bracken fern.
01:02:40We're always poisoning it to get rid of it.
01:02:42No, let it go wild.
01:02:44And here you've got a beautiful scene,
01:02:46an evergreen every day of the year,
01:02:49looking beautiful.
01:02:50You know, it never ceased to amaze me
01:03:03how these grand, extensive gardens in the country
01:03:06are filled with great ideas that we can borrow.
01:03:10Maybe it's a case of just setting up a theme
01:03:12or possibly selecting some plants
01:03:15that will really, you can clip and train,
01:03:17or looking at some of the conifers
01:03:20that were always good and still are
01:03:22and lots of permanent annual colour in our gardens.
01:03:25And we have the owners to thank
01:03:27for creating something so special
01:03:29and sharing it with us.
01:03:30But, you know, that's what the gardeners do.
01:03:32The problem with curtains like this
01:03:41is that when you use them for privacy during the day,
01:03:44you're also blocking out all of that natural sunlight.
01:03:47But I have a great trick for your curtains
01:03:49that's not only practical,
01:03:50it also looks amazing.
01:03:52I'm using a double rod
01:04:10and that will allow me to put a block out blind
01:04:13closest to the window
01:04:14and then a lovely soft sheer on the inside.
01:04:17And I've also put in this timber pelmet from the ceiling
01:04:21and that's going to give it
01:04:22a much more elevated high-end look
01:04:24because it will hide all of that hardware.
01:04:38Custom-made curtains can be really expensive,
01:04:40but this is a brilliant way
01:04:42to get the same look using ready-made curtains.
01:04:45Traditionally, with a double rod,
01:04:47the curtains would be hung in the opposite way,
01:04:49so the sheer would be closest to the window.
01:04:51But this way is much more contemporary
01:04:53and makes a whole lot more sense to me
01:04:55because having the block out closest to the light source
01:04:58means that you're blocking out more light
01:05:00and then this lovely soft layer
01:05:02on the inside of the room
01:05:03adds another detail to the design.
01:05:08Now that we've added in some more texture
01:05:10and detail to this bedroom,
01:05:11you can see how these gorgeous soft curtains
01:05:14really elevate the space.
01:05:18One of the key features of hanging your curtains like this
01:05:21is that you can control the level of privacy
01:05:23and also the amount of light coming into the room.
01:05:27And another trick is to hang your curtains wall-to-wall
01:05:30and from the ceiling.
01:05:32That way you get that really luxurious look.
01:05:34The pelmet helps with that as well.
01:05:36And I think you'll agree,
01:05:37for off-the-shelf curtains,
01:05:38these ones look pretty high-end.
01:05:40So you've heard Pete and I talk about
01:05:59all the various dining options in Crow's Nest,
01:06:01so we thought we'd better try it out for ourselves.
01:06:03One with a lot.
01:06:03Oh my gosh, that's not what I was expecting,
01:06:06but I am excited.
01:06:09Unlike Pete,
01:06:09one thing I've learnt in all my years in television
01:06:11is it's best not to stuff your face
01:06:13before you say goodbye.
01:06:14I'll see you next week with more Better Homes and Gardens.
01:06:17Oh yeah, have a bite.
01:06:18Come on.
01:06:19All right.
01:06:20Have your own honey smakes.
01:06:21Next time,
01:06:26we're heading to the coolest Melbourne suburb
01:06:29you've probably never heard of.
01:06:31We've got Collingwood that way,
01:06:32Fitzroy over there,
01:06:33and Carlton right next door.
01:06:35Yeah, Clifton Hill,
01:06:36it's surrounded by Melbourne icons.
01:06:37You're going to love it.
01:06:39I can hear you screaming through your TV,
01:06:41Adam, what about the chance
01:06:42that there's asbestos in that claddy?
01:06:44It's a word that can send chills up your spine.
01:06:47But if you're careful,
01:06:48there's nothing to be afraid of.
01:06:52We've got one of Ireland's corniest ever exports.
01:06:55What I grew up on,
01:06:57the humble corn beef.
01:06:59Plus, if fast fashion is beginning to feel a bit unseemly...
01:07:04We'll meet the woman bringing your clothes back to life.
01:07:07And Dr Harry's meeting a couple of South American cuties.
01:07:11I'm at a place where you can love a llama
01:07:12or you can adore an alpaca.
01:07:15That's next time on Better Homes and Gardens.
