2 tsp rice wine

10 oz/285 g chicken breast
1 1/2 tsp soy sauce
1/2 tsp dark soy sauce
3 tsp water
1/4 tsp sugar
1/8 tsp white pepper powder
1/2 tsp baking soda
4 tsp cornstarch
2 tsp sesame oil

4 slices of ginger
2 stalks of green onion
4 cloves of garlic

2 tsp rice wine

2 tsp soy sauce
1 tsp dark soy sauce

00:03Today we are making Chicken and Cabbage Stir Fry.
00:07This is another easy and delicious dinner recipe you can add to your collection.
00:12The chicken is tender and juicy, the cabbage is crisp and tasty, and you can have it ready
00:19to serve in 20 minutes.
00:21Let me show you how to make it.
00:24We will start by finely mincing 4 cloves of garlic, and preparing 4 slices of ginger.
00:33Then cut 2 green onions into 2-inch sections.
00:37Keep the pieces from the stem part and the leafy part separate, because we will use them
00:42at different times during cooking.
00:45Next, cut some cabbage into 2-inch fake slices.
00:50And separate the layers of leaves so that they can be easily stir fry later.
00:57Now the chicken.
00:59You can use chicken breast or chicken thigh for this recipe.
01:03Cut the chicken into slices, and marinate it with soy sauce, dark soy sauce, water, a little
01:14bit of sugar, white pepper powder, a little bit of baking soda, and some cornstarch.
01:23Mix everything up evenly, and then mixing a touch of sesame oil.
01:32The last thing we need to prepare is some cornstarch and water mixture.
01:37Simply mix cornstarch and cold water together, and stir until all the cornstarch dissolves.
01:44Now we are ready to cook.
01:47Add some oil to a hot pan of a medium high heat.
01:51When the oil is hot, add a tiny bit of sugar and salt to the oil.
01:59Then immediately add the cabbage to the pan.
02:03Stir fry the cabbage for about 1 minute.
02:09Then add a touch of rice wine.
02:12And continue to stir fry for another 30 seconds.
02:15The rice wine elevates the flavor of the cabbage.
02:19But if you cannot use wine in your cooking, you can skip all the wine used in this recipe.
02:25And just stir fry the cabbage for a total of 1 1⁄2 minutes.
02:30When the time is up, remove the cabbage from the pan.
02:35Now add a little more oil to the pan if needed, and add the ginger slices to the oil.
02:43Let the ginger sizzle in the oil briefly to release some flavor.
02:49And we can add the chicken to the pan.
02:54Spread the chicken now, and let it pan fry until the bottom is golden.
03:02Then add the stem part of the green onion and the minced garlic to the pan.
03:09Stir fry everything together until the chicken is about 70% cooked.
03:18At this time, add a touch of rice wine to the chicken.
03:22And give it a few toss to let the alcohol evaporate.
03:27Once the steam from the alcohol has evaporated, season the chicken with a little more soy sauce
03:33and dark soy sauce.
03:36And continue to stir fry until the color of the chicken looks even.
03:41When the color of the chicken looks even like this, we can add the cornstarch and water mixture.
03:48Make sure you stir up the mixture before adding it to the pan, because cornstarch tends to settle
03:54on the bottom.
03:56The mixture will quickly boil and turn into a sauce.
04:02Once the sauce thickens up and looks somewhat like this, we can add the cabbage back to the pan.
04:11Also add the leafy part of the green onion at this time.
04:16Now all we have to do is give it a few quick toss to mix everything together, and we are done.
