00:30Both the 35 Cover Cafe and impressive outside terrace offer incredible views of the city centre, Leif and further afield to Fife on a clear day, making it a definite Instagram hotspot and a must-visit eatery for locals and tourists.
00:51Although a daily steady stream of tourists heading up Colton Hill should provide plenty of customers for Coffee Colton, owner Stefano Piraccini hopes locals will also visit his new cafe.

01:09So, yeah, just super excited to be opening on Sunday.
01:13The whole thought process behind the venue here and what we're going to do is just a lot of fun.
01:17It's taken a lot of time to kind of get to where we wanted it to be, work with some fantastic people to be able to get here.
01:26But the offer and the familiarity of what the venue's going to bring is just going to be nice, enjoyable, fun.
01:34Fun's the word I want to keep using.
01:37While staff made last-minute preparations for Sunday's opening, Stefano told me what customers can expect at Cafe Colton.
01:44So, in terms of what people can expect, they can come in, expect a really comfortable dining environment, very friendly kind of for everyone.
01:54Something on the menu that is just good food, cooked well, but everybody knows what every dish is from like a nice breakfast in the morning, going into lunch with a nice plate of pasta if you want.
02:05Like, again, just good, honest food, cooked well, using good ingredients.
02:11Like, even the drinks menu, soft, welcoming, working with local suppliers from Secret Garden up in the Pentlands.
02:19We're working with Pilot down in Leeds.
02:20I think that's so important that we've highlighted with this venue because we want to celebrate what Edinburgh is.
02:25We've got an amazing background behind me just in terms of, like, it's people's lock screens all over the world.
02:31And I think what we need to remember here is we're in such a special sight and that's for everybody to come and enjoy.
02:37Not just tourists, local, everyone.
