Carrot Mochi is a delicious, soft cake that combines the natural sweetness of carrots with a chewy, fragrant rice flour dough. It’s perfect for breakfast or as a snack. Here’s how to make it:
Ingredients:

2 medium-sized carrots
150g glutinous rice flour
50g sugar
1/2 tsp vanilla extract
1/4 tsp salt
1 tbsp cooking oil
Water (about 50-60ml, depending on the dough consistency)
Fresh grated coconut (optional, for topping)

Instructions:

Prepare the Carrots:
Peel, wash, and finely grate or blend the carrots.
Cook the carrots in a non-stick pan on low heat until soft, adding sugar and stirring occasionally (about 5-7 minutes).

Mix the Dough:
In a bowl, combine the glutinous rice flour, sugar, salt, vanilla extract, and cooking oil.
Gradually add water to the mixture, stirring until the dough becomes smooth and not sticky.

Shape the Mochi:
Take a small amount of dough, roll it into a ball, then flatten it. Place a spoonful of the cooked carrot filling in the center.
Wrap the dough around the filling and shape it into a round ball or any shape you prefer.

Steam the Mochi:
Place the shaped mochi in a steamer over boiling water. Steam for about 20-25 minutes until the mochi becomes soft and translucent.

Serve:
Once steamed, sprinkle some fresh grated coconut on top and enjoy while it’s still warm.
