In this video we will see how to make Kozhukatta recipe in Malayalam. This is the Sweet modak recipe /Kozhukatta recipe version in which we are going to make a filling with jaggery and coconut and make the casing out of rice flour.
Kozhukkatta making Ingredients
Roasted Rice flour - 1cup Coconut -1 1/2 cup Boiled water -1 1/4 cup+2tbsp Jaggery -1 1/2 piece Salt Ghee -1tsp
Method Melt jaggery and strain Add coconut and mix well . Add cardamom powder, When it become dry (Not too Dry) switch off the flame and allow to cool Boil water along with salt Add rice flour and mix well Fill the sweet inside & roll Steam for 8-10 minutes Sweet Kozhukkatta is your to enjoy.
Some tips to make soft kozhukattai,
1) Make sure the water is boiling hot when adding to the rice flour. 2) Start making the shells immediately when the flour reaches a workable heat level. 3)Do not heat the jaggery mixture beyond the point of dissolving. If it reaches a string stage then the centre of kozhukattai will be hard. 4) Do not let the flour cool completely before placing it in the steamer. Cover it with a damp cloth to retain the heat and moisture. If the flour cools completely the kozhukattai's will turn rubbery upon cooling.
