KAYA VARUTHATHU/BANANA CHIPS/ SARKARA VARATI | Kaya Nurukku Upperi l സദ്യ നുറുക്ക് ഉപ്പേരി l Sharkara Varatti is a must have dish in onam sadya . It is known in several names like sarkara paratti, sharkara upperi ,Sharkara varatti in different parts of kerala.
First wash and Peel the banana, keep them in salt & turmeric water for 10 minutes. Then scrub it and wash well.. Wipe all the water completely. Cut into thin pieces. Heat oil for fry these pieces in medium flame until crisp. Keep aside the fried banana. Combine all spice powders and keep aside. Melt jaggery in water, strain.
Take a wide pan to add jaggery water. Boil in medium flame till one string consistency. Reduce the heat to low. To that add 1 tsp of spice powder and one pinch of salt and mix well .. Now add the fried banana and mix well .. Switch off the flame. Now add spice powder and 1 tbsp of powdered sugar ,mix well .. Allow to dry. Again add sugar and mix well .. After drying completely, take each sharakkara varri separately . So the tasty sharkkara varatti is ready to use

Nentra Kaya -3 Turmeric powder-1 teaspoon Salt -1 teaspoon Water -1/4 Cup
►Method Peel the outer skin of the bananas and Slice it into thin round pieces Heat oil in a pan; Once the oil is hot, add banana slices. And fry it on a medium flame stirring occasionally until the banana pieces become golden yellow / crisp Remove from the heat and sprinkle the saline solution store in an airtight container. Serve and Enjoy the crispy chips.
