The cook of Rojiamo in Amor's restaurant, Chef Miao, is from Shanxi province.

We outsourced to a chef who has roots in authentic Rojiamo.

He knows the traditional recipe that's passed on from generation to generation.

The word Rojiamo literally means meat in a bun.

Ro means meat, jia means in the middle, and mo means bread.

Rojiamo started in Shanxi province two millennia ago, according to Professor Sidney Christopher Bata.

It started with meat in the Zhou dynasty.

But the bread was caught in the Qin dynasty.
