The Persian Qottab I made was the specific kind, made with a mix of walnuts, powdered sugar, and cardamom. You can bake it in the oven, but I used Sartash-Bontash method, which is an old baking method used by rural women. The cardamom and walnut in this pastry are the key to its incredible flavor, and because it’s baked over a wood fire, it gets a smokey flavor that enriches its already mouthwatering flavor.
