Learn How To Make Kajjikayalu Only On Variety Vantalu. It is a popular sweet or pindivantakam from Andhra. But this sweet is not only limited to Andhra or southern India. It is called 'Gujiya' in the Northern parts of India.

Whatever the name its a sweet enjoyed by young and old alike. Also whatever the filling maybe nutty, plain coconut, sweet pappulu, khova or a mix of all these...It surely tastes yummy and this is one of the favorites during this Diwali festival. It can also be called as Indian Dessert Empanadas

Ingredients:-

For the dough:-
½ Cup Refined Flour
½ Cup Whole Wheat Flour
Salt
3 tsp. Melted Ghee

For the filling:-
150 gms. Khoya/Mawa
¼ Cup Desiccated Coconut
⅓ Cup Caster /Powdered Sugar
2 tbsp. Chopped Almonds
2 tbsp. Chopped Cashew-nuts
Chopped Raisins (As required)
A Pinch of Cardamom Powder


Method:-

The Dough:-
Take refined flour, whole wheat flour, salt and melted ghee in a bowl. Mix these ingredients with water and knead a soft dough. Once the dough is ready to cover it with a damp cloth and keep aside for 20-30 minutes.

The Filling:-
Take the khoya, crumble and heat it in a frying pan until it is soft and comes together. Let the khoya cool down to room temperature. Once the khoya has cooled down completely add desiccated coconut, caster sugar, almonds, cashew nuts, raisins and cardamom powder to it and mix everything nicely.

Rolling the Gujiyas:-
Divide the dough equally in 6-7 portions. Apply melted ghee to the surface where the dough is going to be rolled and roll around puri shape neither too thick nor too thin. Put some water on the edges of this rolled puri and fill it with khoya filling and seal the edges making sure there are no air bubbles. Pinch the edge of the puri and pull it in with your thumb giving a decorative pattern to the Gujiya.

Baking:-
Place the Gujiyas on a baking tray after greasing thoroughly with melted ghee. Brush all the Gujiyas with melted ghee. Bake the Gujiyas in a pre-heated oven at 200°C for 15-20 minutes.
Healthy Baked Gujiyas are ready to be devoured.
