In this video, Chef John shows you how to make "Semla" Swedish Fat Tuesday Buns, which are cardamom-scented sweet buns that are filled with a sweet almond filling and whipped cream, then dusted with powdered sugar. To fill each bun, a triangle is cut out from the top, then replaced atop the layer of whipped cream. The results look almost too pretty to eat, but as their name suggests, these tasty treats are perfect for Fat Tuesday – or Mardi Gras, as we call it in Louisiana.
