Egg Masala Curry is a Indian dish made with boiled eggs, onions, tomatoes, whole spices & spice powders. It is a simple dish that pairs well with plain ricr, chapati or paratha

Recipe:
Ingredients for Egg Marination:
Egg-3 Boiled Eggs
Salt-1/4 tsp
Turmeric Powder-1/4 tsp
Red Chilli Powder-1/4 tsp

Ingredients for Cooking:
Cooking Oil-3 tbsp
Bayleaf-1
Cinnamon-2
Green Cardamom-2
Cloves-2-3
Black Pepper-3-4
Chopped Onion-2 Medium Size Onion
Ginger-Garlic-Green Chilli Paste-3tbsp
Tomato Purée-5 tbsp
Salt-1 tsp
Turmeric Powder-1/2 tsp
Red Chilli Powder-1 tsp
Coriander Powder-1 & Half tsp
Egg Yolk-1
Water- As Required
Coriander- As Required For Garnishing

Cooking Process:
Marinate boiled eggs with salt, red chilli powder& turmeric powder.
Take 3 tbsp oil in a Kadai & fry boiled eggs on low heat until golden. Keep it aside. In the same oil add bay leaf, cinnamon, cardamom, clove, black pepper & cumin. Let them crackle. Add chopped onion & fry on medium heat until golden. Add ginger-garlic-green chilli paste & fry 2-3 mins on low-med heat. Add tomato purée, salt, turmeric powder, red chilli powder, & coriander powder. Cook until oil separates. Add water whenever the spices dry out. Add one egg yolk & mix it well with the masala. Add water as required for masala curry. Cover & cook for 10 mins on low-med heat. After 10 mins, switch off the flame & add fried eggs. Garnish it with freshly chopped coriander & serve it with Rice/Chapati/Paratha.
