Made from boneless fish fried with butter and lemon juice. These cutlets can be prepared at home by anyone with easily available ingredients.

Fish Cutlets:
Ingredients:
Boneless Fish 300 gms
Potatoes (boiled) 2-3
Green Peas (boiled) ¾ cup
Coriander Leaves ½ bunch
Green Chillies 2-3
Curry Leaves 6-7
Lemon Juice 2 tbsp
Butter 1 tbsp
Oil 1 tbsp
Red Chillies (crushed) 1 tbsp
Turmeric ¼ tsp
Coriander,Cumin Seeds (crushed) 1-1/2 tbsp
Salt 1-1/2 tsp
Eggs 2
Oil for frying
Lettuce, Cucumber for garnish
Method:
Heat butter and oil add green chillies, curry leaves and fry.
Now add boneless fish pieces and fry well.
Add lemon juice,salt, red chillies and cook until fish is done.
Now take it out in a bowl and let it cool.
Then add boiled and mashed potatoes, boiled green peas, green chillies, coriander leaves, cumin seeds and mix well.
Now make cutlets dip in eggs.
Coat with bread crumbs and fry.
In the end, garnish with lettuce and cucumber.
Add chilli garlic sauce and serve.

Malai Boti Handi:
Ingredients for chicken marination:
Chicken (boneless cubes) 500 gram
Ginger garlic paste 1 tbsp
Meat tenderizer 1-1/2 tsp
Salt 1 tsp
Green chilies (blended) 1 tbsp
White cumin 1 tsp
Yogurt 4 tbsp
Cream 2 tbsp
Coal 1 piece
Oil 2 tbsp
Ingredients for gravy:
Blended onion 1
Yogurt ½ cup
Ginger garlic paste 1 tbsp
Salt to taste
White pepper ¾ tsp
Cream 4-5 tbsp
Milk ½ cup
Oil ½ cup
Ingredients for garnish:
Onion (cubed) as required
Capsicum (cubed) as required
Green chilies (cut lengthwise) as required
Butter 2 tbsp
Method
Except coal put all ingredients in chicken and leave for 2 hours. Now grill it and give coal smoke. Then heat oil add blended onion, ginger garlic paste, salt, white pepper and yogurt and saute well. Now add cream and milk. When boil comes then add grill chicken and let it simmer for 5 minutes. Then fry onion, green chili and capsicum in butter and put in handi and serve.
