Shahi masalaydar koftay

Ingredients

Meatballs 1packet
Oil ½ cup
Onion chopped 1 cup
Salt 1 tsp
Ginger garlic 1 tbsp
Papaya 1 tbsp
Black pepper 1 tsp
Chili powder 1 tsp
Sesame seeds roasted & grinded 1 tbsp
Melon seeds roasted & grinded 1 tbsp
Peanuts roasted & grinded 2 tbsp
Roasted & crushed coriander 1 ½ tsp
Roasted & crushed cumin 1 ½ tsp
Poppy seeds roasted & grinded 1 tsp
Cashew nuts deep fried 15
Green chilies chopped 4
Whole dried milk chopped 4 tbsp
Allspice 1 tsp
Screw pine essence 1 tbsp
Boiled eggs chopped for garnish 2
Ginger julienne for garnish
Onion rings for garnish
Coriander leaves for garnish
Sambal oleak 1 tbsp

Method
Marinate Meatballs with salt, ginger garlic, raw papaya for 1 hour. Heat ½ cup oil, fry chopped onion till light golden, add in the marinated Meatballs , fry for 5 mins, add black pepper, chili powder, salt, cover and cook for 10 mins, then add all the roasted and grinded masala with 1 cup water, cover and cook till Meatballs done. Lastly add green chilies, allspice, kewra, leave it on dum, serve garnished with chopped khoya, boiled eggs chopped, ginger julienne, onion rings and coriander leaves.

Liver shashlik:

Ingredients
Mutton liver ½ kg
Capsicum 2 cut in cubes
Tomatoes 2 cut in cubes
Onion 2 cut in cubes
Salt 1 tsp
Ginger garlic paste 1 tsp
Black pepper powder ½ tsp
Chili powder 1 tsp
Mustard powder ½ tsp
Soya sauce 2 tbsp
Chili sauce 2 tbsp
Vinegar 1 tbsp
Method
Marinate liver with all the given ingredients for 1 hour, put on skewers alternating with vegetables, pan fry for 7 to 8 mins.
Ingredients for sauce
Oil ¼ cup
Garlic chopped 1 tbsp
Blended tomatoes 2
Sweet chili sauce ¼ cup
Chili garlic sauce ¼ cup
Soya sauce 2 tbsp
Vinegar 2 tbsp
Mustard paste ½ tsp
Crushed red pepper ½ tsp
Black pepper ½ tsp
Salt ½ tsp
Method for sauce
Heat oil, add garlic chopped, fry till golden, add blended tomatoes with all the sauces, cook for 5 mins till thick, put skewers in the sauce, cook for 2 mins, remove and serve immediately.

Rolled shahi tukray

Ingredients for filling
Butter 1 tbsp
Whole dried milk ½ cup
Desiccated coconut 3 tbsp
Cardamom powder ½ tsp
Cream 4 tbsp
Rose water 1 tbsp
Condensed milk ¼ cup
Dry milk powder 4 tbsp
Bread slices 8 to 10
Clarified butter for frying
Method for filling

Put all the ingredients in a sauce pan except dry milk powder, cook until thick, remove from fire, add milk powder, cool, roll mixture into rolls shape, roll bread slices, spread with filling roll, roll like sw
