So Easy, So Delicious! Raw Mango Curry / कच्चे आम की करी exotically delicious and it is very easy to make. This curry is ultimate comfort food with some rice and any spicy vegetable stir fry on the side. This is a least spicy curry cooked with grounded coconut and spices, so everyone including children enjoys it. This recipe is a must for Summer heat, it help cool down the temperature. With sweet & Tangy taste, Raw Mango Curry is very delicious and authentic in taste.

Ingredients:
2 tbsp Coconut Oil
2 Cinnamon Sticks
3 Green Cardamoms
1 tbsp Cumin Seeds
1 tbsp Mustard Seeds
Curry Leaves (chopped)
1 Onion (chopped)
2 tbsp Ginger-Garlic Paste
1 tbsp Salt
1 tbsp Red Chilli Powder
Turmeric Powder
Water
2 Raw Mangoes (peeled & chopped)
Coriander Leaves (chopped)
For Masala
3-4 Red Chillies (dried)
3 tbsp Coriander Seeds & Cinnamon Stick
1/2 Coconut (grated)
1 tbsp Water
Jaggery
1/2 cup Water
Coriander Leaves (chopped)
Coconut Oil

Method: Lets start with heating up Coconut Oil with Cinnamon Sticks, Green Cardamoms, Cumin Seeds, Mustard Seeds mix it together then add Curry Leaves (chopped), Onion (chopped). Saute till onion turn brown then add Ginger-Garlic Paste, Salt, Red Chilli Powder, Turmeric Powder cook it for few moments. Now add Water saute for few minute then add Raw Mangoes (peeled & chopped) mix it properly and add Coriander Leaves (chopped) then Water and wait till raw mangoes get soft.
In the meantime lets make the Masala for which add Red Chillies (dried) to the Pan with Coriander Seeds & Cinnamon Stick and roast it properly and then grind it with
Coconut (grated) add water after sometime and grind it again. Take this Masala into the bowl and add this Masala with Raw mango mix, then finally add Jaggery cook it for few minute and then Water. Cook it still its boiling level then add Coriander Leaves (chopped), Coconut Oil and your Raw Mango Curry is ready to serve.
