Learn how to make Ladi Pav/ Indian Buns , a quick and easy to make recipe with Priyanka.

Most of our favorite food items are accompanied with soft and fluffy Pav. From Pav bhaji to Misal Pav to Dabeli, all of these dishes are incomplete without Pav. But the sad part is many of us don't know how to bake Pav. So here is our chef Priyanka who will teach us how to make soft, fluffy, moist, spongy Ladi Pav in quick and easy way.

Ingredients:

Flour – 250gms( 2 cups + 1 tbsps )
Water - 3/4th cup
Salt - 1/2 tbsp
Sugar - 2 1/2 tbsps
Crumbled fresh yeast - 1 tbsp
Oil - 2 tbsps
Milk – 70ml (3/4th cup)

Method:

- In a bowl mix together flour, sugar, yeast and stir with a fork. Add water, salt and oil, stir again and transfer the dough on a clean surface
- Knead the dough, it should form a bit sticky ball. If the dough is firm add bit more water (water requirement depends on the protein in the flour, surrounding temperature and humidity)
- Knead for approximately 10 minutes, the dough will be soft and if you poke the top it will bounce back. You can also do the windowpane test as shown in the video to check the gluten structure
- If the dough is not ready continue kneading for few more minutes.
- Keep the dough in a lightly oiled bowl and cover it with wet napkin for first proofing approximately an hour in a warm place. The time will vary depending the surrounding temperature
- Once the dough doubles in size, degas the dough and put it back on the clean surface
- Oil a 8 X 8 baking tin. Cut the dough into 9 equal balls using a dough scraper. Shape them and place them 1 inch apart in the tin. Cover it with wet cloth and and keep in a warm place for 30 minute till doubled in size
- Then brush the top with milk and bake in a pre heated oven at 200 degree Celsius for 20 minutes
- Let the buns cool down completely
