Ingredients:

270 gm (1 1/2 cups) brown basmati rice
750 ml (3 cups) water
3 tbsp oil
1 tsp asafetida or hing
1 tbsp ginger, freshly grated
½ cup freshly ground black pepper, to taste
40 gm (1/4 cup) almonds, slivered or sliced
2 bell peppers or capsicum*, chopped
150 gm (1 cup) green peas
250 gm (1 cup) paneer, cubed
1 ½ tsp salt
*Use red and yellow bell peppers for a colourful version

Method:

- In a wok, add the sesame oil, yellow asafoetida powder, freshly grated ginger and freshly ground black pepper and mix all the ingredients well.
- Add the slivered almonds and roast them until they acquire a golden brown colour.
- Add the chopped bell peppers and green peas. Cover with a lid and let the vegetables cook for sometime.
- Once the vegetables are cooked, add in it the cooked rice and mix well.
- Add salt and the cubed paneer pieces and mix well.
- The delicious stir fried brown rice with vegetables is ready to be served.
