The heart of Bristol's vibrant food scene lies Bravas, a tapas restaurant that has become a local favourite.
00:08
Since its transformation for Supper Club to a brick and mortar establishment in 2012,
00:14
Bravas has captured the essence of Spanish culinary culture,
00:18
offering an authentic dining experience that resonates with both locals and visitors.
00:25
So we are an Andalusian inspired Spanish tapas bar.
00:29
We've been here for 13 years and we've got a great atmosphere.
00:35
Our sort of thing is really great fresh food and atmosphere.
00:40
What sets Bravas apart is its commitment to authenticity and community.
00:46
Owners Kieran and Imogen Wait, inspired by their travels across Spain,
00:50
have cultivated a menu that changes daily, reflecting the freshest seasonal produce.
00:56
Dishes like fried aubergine with molasses and patatas Bravas have become staples,
01:03
celebrated for their bold flavours and creative twists.
01:07
Let's chat to some of the chefs about these signature dishes and why people enjoy them so much.
01:13
So we're very much inspired by Southern Spain.
01:17
So our cuisine is tapas, so small dishes designed to share Mediterranean in style.
01:24
So a lot of olive oil, fresh fish.
01:27
We cook on a plancha, which is like a big solid metal grill.
01:31
And that gives the food a really delicious flavour.
01:34
Very, very heavily Spanish-influenced.
01:39
Lots of produce kind of taken or imported from Spain.
01:43
And we kind of try and do it justice, I guess.
01:49
Beyond the food, Bravas fosters a warm community atmosphere.
01:53
The open kitchen design invites diners to witness the culinary process firsthand,
02:00
enhancing the sense of connection and transparency.
02:03
This approach not only elevates the dining experience,
02:06
but also the strength, the bond between the restaurant and its customers.
02:11
Bravas is a real community, isn't it?
02:14
It's a smaller business, but a really thriving one in the city.
02:19
So why do you think it has become a thriving business in the city?
02:25
I think the main reason is the food.
02:29
I think it's very hard to get food that we do here anywhere else,
02:32
in Bristol, maybe even in the UK,
02:34
because a lot of our produce is Spanish
02:36
and the dishes are themed around Spain as much as possible.
02:40
It's quite difficult to get that anywhere else.
02:42
I also think the atmosphere that is created contributes to that heavily.
02:48
The service is good.
02:49
We do quite well serving people.
02:51
They're happy with the approach we have.
02:55
Yeah, I think those are the two main reasons it's successful.
